"野王20号"(Vitis vinifera,V.amurensis)是新培育的抗寒酿酒葡萄品种,以该品种小批量酿造的葡萄酒为试材,采用测定理化指标和感官评定的方法,初步评价了葡萄酒的品质,并与其它品种葡萄酒进行对比。结果表明:从葡萄酒的酒精度(13.99%)、可溶性糖(7.11°Brix)和还原糖含量(3.19g/L)方面分析,该品种适合酿造干红葡萄酒;酒中总酚含量(1 127.96mg/L)丰富,尤其是花色苷含量(109.28mg/L)明显高于对比酒样;但酒中总酸含量偏高(10.67g/L),主要是酒石酸(4.54g/L)和苹果酸(1.04g/L)含量较高;在感官品质方面,其外观表现较为突出,但在香气、酸味、平衡性和酒体上表现不理想。综上,该品种酿酒工艺首先应在降酸、外加单宁和改善香气方面进行研究和改进,从而提升葡萄酒的整体品质。"野王20号"可作为我国寒冷地区的优势酿酒葡萄品种进行推广。 相似文献

以2021年张掖产区‘马瑟兰’葡萄为试验材料,采用主成分分析法和K-均值聚类分析法对不同采收期‘马瑟兰’进行品质评价和分级,并且研究了葡萄酒理化指标、多酚指标和感官评价,以期对‘马瑟兰’葡萄最佳采收期进行判定。结果表明:‘马瑟兰’葡萄转色后果实中还原糖含量持续增加,可滴定酸含量逐渐下降,临近采收期变化幅度较小。果皮中总酚、花色苷及单宁含量均呈现先增后降趋势,但果籽中总酚和单宁变化与皮中不同,呈波动状趋势。根据技术成熟度指标(糖酸比)判定,张掖地区‘马瑟兰’葡萄于9月1日已达到可采收条件,满足酿造干红葡萄酒的原料要求;综合葡萄原料品质和葡萄酒品质考虑,在9月22日前后5 d进行张掖产区‘马瑟兰’葡萄的采收酿造最为适宜,此时原料中含糖量>270 g·L-1,糖酸比>32,符合酿造优质干红葡萄酒的要求。 相似文献

左优红是1987年用79-26-18与74-1-326杂交育成的酿酒葡萄新品种。果穗长圆锥形,平均穗重144.8g;果粒圆形,平均粒重1.36g,果粒可溶性固形物含量18.5%~24.4%,总酸含量1.191%~1.447%,单宁含量0.0291%~0.0307%,出汁率66.4%~70.2%;酿制的干红葡萄酒宝石红色,酒香怡人,酒体醇厚、圆润,具典型品种香气;6年生树每667m2产量1008~1309kg,在吉林市果实9月中旬成熟。抗寒性强,抗病。2005年1月通过吉林省农作物品种审定委员会品种审定。 相似文献

AIM: To study the possibility that yellow wine improves the pathological changes of atherosclerosis in vivo. METHODS: Six weeks old LDL receptor knockout mice (n=48) on a high-fat and L-methionine diet developed plasma hyperhomocysteinemia and atherosclerosis. The animals were randomly divided into yellow wine group, red wine group, ethanol group and control group (n=12 in each group) and were sacrificed after 14 weeks. The levels of plasma lipids and homocysteine in serum were examined. The morphological changes of aorta artery and the atherosclerosis of aorta sinus were observed under microscope. The expression and activation of matrix metalloproteinase-2 (MMP-2) were determined by the method of immunohistochemistry. RESULTS: No significant difference of plasma total cholesterol, triglyceride or high density lipoprotein cholesterol among groups was observed. Plasma homocysteine was significantly decreased in yellow wine group as compared to other three groups (P<0.01). Compared to ethanol and control groups, use of yellow wine and red wine significantly reduced the atherosclerosis lesion area (P<0.01). However, no significant discrepancy between the yellow wine group and red wine group was found. Compared to control group, the expression of MMP-2 in yellow wine group, red wine group and ethanol group decreased by 26.3%, 27.6% (P<0.01) and 5.7% (P>0.05), respectively. The activity of MMP-2 in yellow wine group, red wine group and ethanol group decreased by 31.7%, 32.5% (P<0.01) and 6.7% (P>0.05), respectively. CONCLUSION: Yellow wine and red wine inhibit the expression of MMP-2 and improve the pathologic changes of atherosclerosis, indicating that they have benefic effects on cardiovascular system. 相似文献

中国盛产小浆果,但小浆果不容易保存且季节性强,因此附加值较低,为了提高小浆果的产品附加值,本试验研究了小浆果酒的发酵工艺,并探讨了解决出汁率低,果酒单宁含量过少所导致的货架期短、挥发酸高、不易澄清等问题。试验以小浆果红树莓为原料,经破碎、酶解、澄清、发酵、过滤等工艺,制得了发酵型红树莓果酒,经过单因素和正交试验优化发酵工艺,确定最佳的酿造工艺条件。结果表明,酶解过程采用25 g/kL EMACLAR果胶酶和25 g/kL EVZYM果胶酶低温酶解14 h,与传统方式对比,出汁率提高了10%;发酵过程,红树莓果汁初始糖度19%,利用VP5为酿酒酵母,接种量为10%,发酵温度22℃;发酵结束后使用树脂降酸,澄清过程使用30 g/100 L硅藻土、15 g/100 L明胶复合澄清的方式。在此工艺条件下得到的红树莓果酒酸度爽口,色泽清亮、均匀,有明显的树莓香气和纯正的发酵型香气。 相似文献

就不同光质(蓝光、绿光、黄光、红光及白光) 对番茄幼苗生长和生理特性的影响做了探究。结果表明, 红光处理的幼苗干物质积累多, 叶面积扩展快, 叶绿素含量、光合速率、可溶性糖及总糖含量均最高, 叶绿素a /b比值及总氮含量最低。蓝光处理幼苗的茎粗、叶面积、根系活力、光合速率均显著高于对照(白光) 。壮苗指数以蓝光或红光处理的较好, 说明在苗期照射红光或蓝光可促进番茄幼苗的生长, 有利于培育壮苗。蓝光处理幼苗花期提早, 产量显著提高。 相似文献

不同颜色滤光膜套袋对‘砀山酥梨’果实品质及矿质元素含量的影响 总被引:1,自引:0,他引:1
利用红、橙、绿、蓝、紫色滤光膜制作果袋(单层袋外套一层透明塑料袋),对‘砀山酥梨’果实进行套袋处理,分析不同光质对果实品质和矿质元素含量的影响。结果表明,绿色滤光膜套袋果实石细胞含量最少,比对照减少28.85%,鲜质量与干质量的比值最大,达到3.54,Ca和Zn的含量分别是对照的1.34倍和1.49倍;紫色滤光膜套袋果实可溶性固形物含量最高,比对照提高5.11%,果形指数最小,鲜质量与干质量的比值比对照提高9.38%,石细胞含量、可滴定酸含量以及果实硬度分别减少22.83%、14.29%和14.88%,Fe、Ca、K、Zn的含量是对照的1.09倍、1.26倍、1.24倍和1.4倍;红色滤光膜套袋果实单果质量、可溶性糖含量相比对照分别减少7.33%和31.27%,Fe和Zn的含量分别是对照的1.13倍和1.37倍;橙色滤光膜套袋果实石细胞含量最高,比对照提高14.87%;蓝色滤光膜下果实单果质量最小,可溶性固形物含量最低,比对照组分别减少10.19%和19.62%。综合分析认为,紫色滤光膜下蓝光透过率高,红光/蓝光值较小,有利于降低果实石细胞含量,相比其他处理更能提高可溶性糖、可溶性固形物、矿质元素的含量,且果实硬度、单果质量、果形指数比较理想,果实品质较高,建议在‘砀山酥梨’的套袋栽培中选择使用。 相似文献

AIM: To investigate whether Chinese yellow wine has influences on homocysteine (Hcy)-induced dysfunction in rat endothelial progenitor cells (EPCs). METHODS: Rat bone marrow was extracted to harvest mononuclear cells (MNCs) by density gradient centrifugation. The MNCs were plated on fibronectin-coated culture dishes, and were induced into EPCs by EGM-2 complete medium supplemented with cell growth factor. The adherent cells were collected 7 d later for all studies. EPCs were characterized as adherent cells double positive for DiI-ac-LDL uptaking and lectin binding by direct fluorescent staining under a laser scanning confocal microscope. The viability, migration, apoptosis and in vitro vasculogenic activity of the EPCs were determined by MTT assay, Transwell chamber assay, apoptosis kit and in vitro vasculogenesis kit, respectively. RESULTS: Compared with control group, the viability, migration and in vitro vasculogenic capacity of the EPCs in Hcy group were significantly decreased (P<0.01). Compared with Hcy group, yellow wine group and red wine group both significantly improved the viability, migration and in vitro vasculogenic capacity of Hcy-induced EPCs (P<0.01). Compared with control group, yellow wine group and red wine group both significantly improved the above-mentioned functions of EPCs (P<0.05). However, no significant difference of apoptosis in all groups was observed. CONCLUSION: Hcy may result in dysfuction of EPCs. Treatment with yellow wine improves Hcy-induced EPC functions. 相似文献
