A technique for development of potato flour was standardized. Five products viz. cake, biscuit, weaning food, panjiri and ladoo were prepared incorporating potato flour, defatted soy flour and corn flour. Baking and roasting were the major processing techniques employed for the development of these products. Protein, ash and fat contents of potato flour were almost similar to those of raw potatoes. Significant differences in protein, ash and fat contents of all the products were observed. Protein and starch digestibility of potato flour was significantly higher than that of raw potatoes. Protein digestibility increased by 12 to 17 percent on baking or roasting of products. Processed products had significantly higher starch digestibility and mineral availability compared to raw products. Thus, it can be concluded that roasting and baking are effective means of improving starch and protein digestibility and mineral availability of products. 相似文献

以菠萝蜜种子为原料提取淀粉,以木薯淀粉、大米淀粉、玉米淀粉和马铃薯淀粉为参照,采用体外消化试验测定菠萝蜜种子淀粉的快速消化淀粉、慢消化淀粉和抗性淀粉含量,并进行酶解动力学实验。结果表明:菠萝蜜种子淀粉快速消化淀粉、慢消化淀粉和抗性淀粉的含量分别为4.50%、19.65%和75.85%,酶解速率为0.60 h-1,平衡浓度为36.93%,酶解指数为41.43,血糖指数为62.45,属于中等血糖食物;菠萝蜜种子淀粉消化性、平衡浓度、酶解指数与血糖指数均高于马铃薯淀粉,而低于其他三种淀粉,酶解速率比马铃薯淀粉、木薯淀粉快,比大米淀粉、玉米淀粉慢。 相似文献

淀粉加工在马铃薯产业中起着重要作用。然而,目前广泛种植的原料薯仍然是淀粉含量不高的菜用薯。为选出适于黑龙江垦区种植的淀粉加工型马铃薯品种,试验采用随机区组设计,以‘延薯4号’为对照,对5个品种(‘同薯29号’、‘克新27号’、‘东农310’、‘内-9’和‘希森5号’)的块茎产量、淀粉含量以及淀粉产量进行评价,并进行稳定性分析。对照品种‘延薯4号’产量达46300 kg/hm^2,淀粉含量13.76%,淀粉产量6394 kg/hm^2,均表现出较好的稳定性。‘克新27号’产量(41731 kg/hm^2)低于‘延薯4号’,但淀粉含量(18.94%)高于‘延薯4号’,结果淀粉产量(7976 kg/hm^2)最高,但表现并不稳定。‘东农310’和‘希森5号’淀粉含量分别为18.33%和20.46%,并具有较高的淀粉产量,分别为6709和6658 kg/hm^2,表现稳定。该研究为淀粉企业正确选择品种提供了基础数据。 相似文献

Two hybrids having high total solids were compared with established commercial varieties for processing into french fries, potato chips, and potato flakes. Russet Burbank was used as a control for potato flakes and french fries, and Kennebec for potato chips. The hybrids were processed initially at harvest and at two intervals after harvest. The solids in the hybrids varied from 23.0% to 26.9% and the products generally had a better color and yielded more product per pound of raw material than the controls. The hybrids had a high level of xanthophyl, stable in the french fries and potato chips but unstable in the potato flakes. Antioxidants retarded the loss of the yellow color in the flakes. Oil absorption was found to be inversely related to solids in the potato chips and french fries. By means of sensory evaluation, the hybrids were generally considered different from the controls with respect to color, flavor, and texture but no preferences were obtained. Potatoes with high solids result in more finished product per pound of raw material. 相似文献

A novel biodegradable material derived from thermoplastic potato starch was prepared with intended uses in high moisture environments where its high water sorption characteristics are beneficial, such as wound dressing, transdermal patches or food packaging. A modified composite was prepared for this purpose by reactive extrusion whereby potato starch and 2.5-25% (w/w) sisal cellulose fibers were compounded together in the presence of 2.7% (w/w) sodium trimetaphosphate. The fibers were included to increase the wet strength of the material. A low degree of substitution (0.088-0.113) was sought by bound phosphate groups with anionic character in order to overcome a reduction in moisture absorption capacity resulting from fiber incorporation, yet being insufficient to cause embrittlement via crosslinking. The results showed the approach has sufficient merit to minimize the influence of the hydrophobic fibers on the water absorption capacity of the starch material but adhering to so low of a degree of substitution could not fully prevent a reduction. The results also suggested that the fibers may have participated in the crosslinking reaction. 相似文献
