Dent corn (Zea mays L.) and sorghum (Sorghum bicolor L. Moench) sample sets representative of commonly grown hybrids and diverse physical attributes were analyzed for alkaline cooking performance. The influence of kernel characteristics including hardness, density, starch properties (thermal, pasting, and crystallinity), starch content, protein content, and prolamin content on alkaline cooking performance was also determined. Corn nixtamal moisture content was lower for hard, dense kernels with high protein contents; sorghum nixtamal moisture content was lower for kernels with low moisture contents and low starch relative crystallinities. Statistically significant (P < 0.05) regression equations showed that corn nixtamal moisture content was influenced by TADD (tangential abrasive dehulling device) index, kernel moisture content, starch content, and protein content; sorghum nixtamal moisture content was influenced by starch relative crystallinity, kernel moisture content, and abrasive hardness index. Pericarp removal was not strongly correlated with kernel characterization tests. Location (environmental) and hybrid (genetic) factors influenced most kernel characteristics and nixtamalization processing variables.  相似文献

A comprehensive knowledge on reproductive traits is a prerequisite in utilizing the existing tea germplasm effectively for crop improvement to develop superior planting material for grower acceptance and market profitability. The Sri Lankan tea germplasm was characterized based on reproductive traits viz. floral morphology, pollen biology, stigma receptivity and phenology of flowering and fruit set. The variability in floral morphology, especially the style morphological features, formed phenotypic clines rather than distinct groups. Studies on pollen biology and stigma receptivity revealed significant variability and asynchrony that could result unequal reproductive success among the genotypes. Four distinct patterns were predictable among the genotypes based on flower and fruit abundance and the time of flowering and fruit set. Three well marked flowering periods occurred in February to April, July and in November. Nonetheless, major flowering period coincided February and March in all the genotypes allowing free crossing between the different genotypes. Profuse mature fruit crop was obtained in February to May. Approximately 26% success was achieved in tea controlled hybridization programmes. Fruits carry two seeds on average and became mature in 8–9 months after pollination. Zygotic development in tea takes more than 1 month after pollination and early embryonic development continued for 4 months after pollination. The indexing of the morpho-physiological diversity and the phenological calendars of flowering and fruit set made available in the study are of significant importance in effective utilization of the tea germplasm for crop improvement.  相似文献

Beneficial effects of Silicon (Si) on disease control have been shown in a number of plant pathosystems. The present study ascertained the effect of root application of soluble Si on postharvest quality of bitter gourd (Momordica charantia L.) with special reference to the disease development by Fusarium oxysporum. Plants were treated with Potassium silicate (Si+) by amending the soil mix (200 mgSi /kg soil). Treatments were started at the four leaf stage and continued up to 28 days at seven days intervals. Soil amendments with Si significantly reduced the postharvest weight loss and extended the shelf life by 2 days through delayed ripening and reduced fungal rot development. Si analysis in bitter gourds, harvested from Si?+?plants revealed that fruit tissues accumulated nearly1.5 times as much silicon (0.54% dry weight) as those grown in control (Si-) mix (0.36% dry weight). Extracts from Si?+?plants exhibited a stronger antifungal activity on thin layer chromatography (TLC) against Cladosporium cladosporioides. Methanolic extracts of fruit pericarp separated on TLC plates showed four antifungal zones at Rf 0.17, 0.51, 0.64 and 0.93. Compound separated at Rf 0.64 was observed in samples from Si?+?and/or challenged with F.oxysporum. Antifungal zone at Rf 0.51 was present only when Si?+?fruits were challenged with the fungus. These results suggest that by using soil application of soluble Si, postharvest quality of bitter gourd can be improved and shelf life can be enhanced by 2 days compared to the control. Enhanced fungitoxic activity may have some role in Si-induced disease resistance againstpostharvest fungal pathogens.  相似文献

The effects of selected herbicides have been studied on the following parameters of soil nitrification processes: the rates of nitrate and nitrite formation from ammonia in freshly perfused soils and in soils previously saturated with nitrifying organisms in an improved perfusion apparatus; the rates of oxygen consumption and of oxidation of ammonia and nitrite in washed cell suspensions of Nitrosomonas europaea and Nitrobacter winogradskii, respectively; the rates of growth of those two organisms in newly established cultures; the rates of oxygen uptake by soil enriched in nitrifying organisms; the rates of proliferation of nitrifying populations in freshly perfused soil. ID50 values were computed for all parameters and herbicides studied. On average, the most sensitive parameters were the metabolism and growth of the two organisms in pure culture, while the least sensitive were the corresponding measures in the soil environment. Similarly, herbicides fell into four distinct groups. The most toxic were the formulated octanoates of bromoxynil and ioxynil (NPH1320 and Totril, respectively); next in order of toxicity were chlorbufam, phenmedipham, formulated oxadiazon, formulated legurame, ioxynil, formulated trifluralin, and bromoxynil; low toxicity was shown by terbacil, dicamba, and tricamba, whereas asulam and the related experimental herbicide MB9555 showed activity on some parameters at the very highest concentrations only. Comparisons of soil with pure-culture parameters showed that the relative toxicities of herbicides to Nitrosomonas in culture bore little relationship to those in soil. The inhibitions of Nitrobacter proliferations in soil on the other hand were correlated with the inhibitions of growth and metabolism in pure culture. Within these overall effects, individual herbicides showed marked differential actions on various parameters. Thus, the formulated octanoates of bromoxynil and ioxynil were extremely toxic to the growth of nitrifying organisms in culture, an action probably due to an unknown formulation component. Relative to other herbicides, bromoxynil and ioxynil were more effective on nitrification processes in the soil environment. Both in culture and in the soil, Nitrobacter is more sensitive than Nitrosomonas to these four herbicides. Legurame and oxadiazon are relatively more toxic to Nitrosomonas in culture, but this differential action is not demonstrable in the soil. Dicamba, tricamba, trifluralin, and chlorbufam are more toxic to Nitrobacter than to Nitrosomonas in the soil environment. Formulated trifluralin seems to exert a stimulating action on the growth of nitrifying organisms, but only in the soil; suppression of antagonistic organisms is suggested as a possible cause. Extrapolation of these results to the field situation suggests that the only herbicide which might cause small inhibitions of nitrification at field rates is terbacil, which is disproportionately toxic at low concentrations. At rates somewhat in excess of normal, the formulated octanoates of bromoxynil and ioxynil and possibly dicamba and oxadiazon could also cause small inhibitions.  相似文献

Starch granules undergo structural and morphological changes during food processing unit operations as they interact with other food ingredients. This study was conducted to isolate and characterize starch granules from corn masa. A proteolytic enzyme, thermolysin, was effective in separating and isolating starch granules from endosperm proteins present in masa. The efficiency of starch extraction using thermolysin was 74% (w/w), and subsequent analyses showed that the isolated granules were free of contaminants. Starch samples were characterized using light microscopy, SEM, DSC, and XRD. Starch granules isolated from masa had undergone internal structural changes and some granules (≈40%) lost birefringence during nixtamalization. These internal changes occurred, in most cases, without visible alterations in general granular morphology. Nixtamalized granules underwent changes mostly consistent with a “heat-moisture treatment” process.  相似文献

Fatty acids of three cultured unicellular algae wldely used in aquaculture ( Isochrysis galbana , clone T-iso, Chaetoceros calcitrans , and Chaetoceros gracilis ) were analyzed in detail by gas-liquid chromatography and mass spectrometry. Fatty acid compositions of the individual species, harvested at monthly intervals during a four month period, showed a very consistent pattern. Shorter chain (C16) fatty acids accounted for more than 70% of total fatty acids in the diatoms but less than 20% in I. galbana . Medium chain (C18) and the long chain 22:6w3 unsaturated fatty acids represented more than 50% of the total fatty acids in I. galbana but less than 10% of the total In the Chaetoceros spp. However, in the latter, 20:5w3 replaced 22:6w3 at an equivalent level. Fatty acid profiles of c. calcitrans and c. gracilis were similar, except that the latter contained lower levels of 16:2w4, 16:3w4 and 16:4w1, and higher levels of 18:2w6 and 18:3w6. In particular C. gracilis contained a higher proportion of the biochemically important fatty acid 20:4w6 (arachldonic acid). One of the salient features of I. galbana lipids was the presence of the fatty acid 18:5w3. This fatty acid is not generally reported in algae or invertebrate lipid analyses, but is a typical component of I. galbana and of other marine photosynthetic flagellates. Its potential for utilization by aquatic organisms is unknown.  相似文献

Cell wall polysaccharides of 'Scarlet Warren' winter squash ( Cucurbita maxima ) were investigated before and after thermal processing. Linkage analysis of polysaccharides was done by gas chromatography coupled to mass spectrometry (GC-MS). The linkage analysis showed the cell wall polysaccharide compositions of raw and cooked squash were similar. The total pectic polysaccharides (galacturonan, rhamnogalacturonan, arabinan, and arabinogalactan) contents of the cell walls of both raw and cooked squash were 39 mol %. The amounts of pectic polysaccharides and xyloglucan in the cell walls of squash showed little alteration on heating. The cellulose content of the raw and cooked cell walls was relatively high at 47 mol %, whereas the xyloglucan content was low at 4 mol %. Solid-state (13)C nuclear magnetic resonance (NMR) spectroscopy techniques were used to examine the molecular motion of the polysaccharides in the cell walls. The mobility of highly flexible galactan depends on the water content of the sample, but no difference was seen between raw and cooked samples. Likewise, the mobility of semimobile pectic polysaccharides was apparently unaltered by cooking. No change was detected in the rigid cellulose microfibrils on cooking.  相似文献

Changes in the cell-wall polysaccharides (CWP) of the edible tissues of four winter squash cultivars during storage and after cooking were investigated. A procedure for isolating cell walls of tissues containing high levels of starch was used. The starch-free CWP were sequentially fractionated using CDTA, dilute Na(2)CO(3), and 4 M KOH. Cellulose made up 40-42% of the total CWP for three cultivars (Delica, CF 2, and CF 4) at harvest but was 35% in the softer Red Warren. The pectic polysaccharides of Delica, CF 2, and CF 4 cell walls are more branched than those from Red Warren squash. The higher proportion of uronic acid in the pectic polysaccharides of Red Warren squash correlates with its lower firmness. Cooking resulted in an increase in the water-soluble pectins and a decrease in the pectins associated with cellulose. The total CWP content of the squash cultivars remained unchanged for up to 2 months of storage and then markedly decreased between 2 and 3 months of storage. The galactose content of Delica and Red Warren cell walls remained relatively constant from harvest to 2 months of storage and then decreased markedly during 2-3 months of storage.  相似文献
