The objective of this study was to estimate the effects of breed, sex, and halothane (HAL‐1843TM) genotype on fatty acid composition of triacylglycerols (TAG) and phospholipids (PL) extracted from porcine longissimus muscle (LM). Purebred Yorkshire (n = 131), Duroc (n = 136), Hampshire (n = 49), Spotted (n = 35), Chester White (n = 74), Poland China (n = 51), Berkshire (n = 169) and Landrace (n = 82) pigs (n = 727; 427 barrows and 300 gilts) from the 1994 and 2001 National Barrow Show Sire Progeny Tests were used. For statistical analyses, a mixed model was used that included fixed effects of breed, sex, HAL‐1843TM genotype, year, slaughter date within each year, interaction of breed × sex and random effects of sire and dam within breed. Breeds and sex were significantly associated with the percentages of the majority fatty acids in TAG. Duroc pigs had greater total saturated fatty acids (SFA) and lower total monounsaturated fatty acids (MUFA) (p < 0.05) contents than did pigs of all other breeds except Berkshire (p > 0.05). The concentration of total polyunsaturated fatty acids (PUFA) was the greatest in Hampshire pigs (p < 0.05). The content of total SFA was greater (p < 0.01), whereas the concentrations of total MUFA and PUFA were lower (p < 0.01) in barrows than those in gilts. The contents of major SFA in PL did not differ significantly among pigs from different breeds and sex groups. However, breed and sex significantly affected the concentrations of major MUFA and PUFA in PL and strong negative correlation between the total contents of MUFA and PUFA in PL was observed in the current study. Chester White pigs had greater total MUFA and lower total PUFA contents (p < 0.05) in PL than did pigs of all other breeds except Spotted (p > 0.05). In contrast to breed and sex effects, the concentrations of fatty acids in PL were more affected by HAL‐1843TM genotype than those in TAG. The content of C16:0, a major SFA in PL, differed significantly in pigs with different HAL‐1843TM genotypes. In conclusion, these results suggest that breed and sex are important sources of the variations for fatty acid composition of TAG and PL in LM.  相似文献

Thirty-three steer calves were used to determine the effect of sire breed (Angus or Charolais), time of weaning [normal weaned at approximately 210 d of age (NW) or late weaned at approximately 300 d of age (LW)], and muscle type [LM and semitendinosus muscle (STN)] on fatty acid composition. The whole plot consisted of a 2 (sire breed) × 2 (time of weaning) treatment arrangement, and the subplot treatment was muscle type. Body weights were recorded at 28-d intervals to determine animal performance. Muscle biopsies were collected on d 127 and 128 of finishing. All calves were slaughtered on d 138, and carcass data were collected. Angus-sired steers had lighter initial BW (271 vs. 298 kg; P = 0.02), and LW steers were heavier (351 vs. 323 kg; P = 0.03) on d 28, but no other differences in BW were noted. Charolais-sired steers had larger LM area (P = 0.03), reduced yield grades (P = 0.01), less 12th-rib fat (P < 0.01), and less marbling (P < 0.01) than Angus-sired steers. Carcass measures overall indicate Angus-sired steers were fatter. Hot carcass weight was heavier (348 vs. 324 kg; P = 0.04) in LW steers than NW steers. No other differences (P > 0.05) were observed for feedlot performance or carcass characteristics. Total lipids were extracted from muscle biopsies, derivatized to their methyl esters, and analyzed using gas chromatography. The LM had greater SFA (43.94 vs. 35.76%; P < 0.01) and decreased unsaturated fatty acids (UFA; 56.90 vs. 66.19%; P < 0.01) compared with the STN. Percent total MUFA was greater in STN than LM (51.05 vs. 41.98%; P < 0.01). Total SFA, UFA, and MUFA did not differ due to sire breed or time of weaning. Total PUFA differed (P = 0.04) due to a sire breed × time of weaning interaction but did not differ due to muscle type, with greater PUFA in NW Charolais than any other sire breed × time of weaning combination. Observed changes in percent MUFA may be a result of greater Δ(9)-desaturase activity. The calculated desaturase index suggests STN has a greater Δ(9)-desaturase activity than LM, but no differences (P > 0.05) between sire breed or time of weaning were observed. These results indicate that sire breed, time of weaning, and muscle type all affect fatty acid composition in beef. This information provides insight into factors for manipulation of beef fatty acids. More research is needed to identify beef cuts based on fatty acid profile and healthfulness.  相似文献

以40 ̄90kg6个体重阶段莱芜猪和新莱芜猪为试验对象(n=6),研究肌肉脂肪酸组成的发育性变化及其与肉质特性的关系。结果表明:①随着体重的增大,莱芜猪肌肉总脂含量显著(P<0.01)增加;饱和脂肪酸(SFA)总量的比例有下降的趋势,不饱和脂肪酸(UFA)总量有增加的趋势,但差异不显著;在UFA中,多不饱和脂肪酸(PUFA)总量及亚油酸的比例显著(P<0.01)下降,油酸比例显著(P<0.01)增加;②总体上,莱芜猪肌肉中的SFA+单不饱和脂肪酸总量、总脂、棕榈酸、棕榈烯酸的比例显著高于新莱芜猪,而PUFA总量、硬脂酸、亚油酸、花生烯酸的比例显著(P<0.01)低于新莱芜猪。各体重阶段2个品种间的脂肪酸组成也存在着较大的差异;③莱芜猪肌肉中的PUFA总量与总脂、水分、失水率、大理石纹评分相关显著;总脂与水分、大理石纹相关极显著(P<0.01);SFA、UFA总量与大理石纹呈显著(P<0.05)相关。  相似文献

Crossbred pigs (n = 216) were used to test the interactive effect, if any, of ractopamine (RAC) and dietary fat source on the performance of finishing pigs, pork carcass characteristics, and quality of LM chops during 5 d of simulated retail display (2.6 degrees C and 1,600 lx warm-white fluorescent lighting). Pigs were blocked by BW and allotted randomly to pens (6 pigs/pen), and, after receiving a common diet devoid of RAC for 2 wk, pens within blocks were assigned randomly to 1 of 4 diets in a 2 x 2 factorial arrangement, with 5% fat [beef tallow (BT) vs. soybean oil (SBO)] and RAC (0 vs. 10 mg/kg). Diets were formulated to contain 3.1 g of lysine/Mcal of ME and 3.48 Mcal/kg of ME. Across the entire 35-d trial, pigs fed RAC had greater (P < 0.01) ADG and G:F, but RAC did not affect (P = 0.09) ADFI; however, performance was not affected (P >or= 0.07) by dietary fat source. Carcass weight, LM depth, and lean muscle yield were increased (P < 0.01), whereas fat depth was decreased (P = 0.01), in carcasses from RAC-fed pigs; however, carcass composition measures were similar (P >or= 0.27) between fat sources. A study was conducted to characterize lipid profiles in the M. longissimus thoracis of commercial Brazilian beef and to assess how those profiles are influenced by finishing system, genetic group, and their interaction. Intramuscular fat (IMF) and fatty acid (FA) profiles were determined in 160 bulls of the Bos taurus (n = 75) and Bos indicus (n = 85) genetic groups, finished on pasture (n = 46) or with grain supplementation (n = 114) and slaughtered in a commercial abattoir. Finishing system had a major impact on the deposition of IMF, as well as on the concentration of SFA, PUFA, and their ratio, but genetic groups showed important differences in the ability to convert SFA into cis-9 MUFA and to convert 16:0 into 18:0. When compared with pasture-finished animals, those finished with grain had greater content of IMF and SFA (P < 0.01), similar amounts of MUFA (P > 0.05), and about one-half the amount of PUFA (P < 0.01). Except for MUFA, differences in FA profiles among finishing systems were mostly mediated through their effect on IMF, even though the relationship of IMF with groups of FA differed among finishing systems. Under grain finishing, B. taurus had less SFA and greater MUFA than B. indicus (P < 0.01), but no differences were observed in PUFA (P > 0.05). With pasture-finishing, no differences were observed among the 2 genetic groups in SFA and MUFA (P > 0.05), but PUFA were decreased in B. taurus (P < 0.01). When genetic groups were compared in grain-finishing, B. taurus had a decreased ability for elongation and B. indicus had a decreased aptitude for desaturation of FA. On the other hand, with pasture-finishing a greater deposition of intermediate FA from ruminal biohydrogenation was observed in B. indicus than in B. taurus. The experiment was carried out to study the composition and contents of fatty acids of Nanyang Black pig, and to provide a theoretical basis for the protection and exploitation of local pig genetic resources in China. 12 Nanyang Black pigs and 12 Large White pigs were chosen, and the composition and contents of fatty acids in longissimus dorsi muscle were measured, and the quality of fatty acids was comprehensive evaluated from nutrition, health, flavor and storage aspects. Monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), 12-16 carbon saturated fatty acids (SFA1), other saturated fatty acids (SFA2), unsaturated fatty acids (UFA), saturated fatty acids (SFA), SFA2/SFA1, MUFA/PUFA, essential fatty acid (EFA), conjugated linoleic acids (CLA), PUFA/SFA and ω-6 PUFA/ω-3 PUFA were used as the indexes of multiple comparison. The results showed that there were 30 kinds of fatty acids were detected and 23 of them had significant or extremely significant differences between the two pig breeds (P<0.05;P<0.01). Nanyang Black pig had higher values of above measured indexes than that of Large White pig in addition to SFA2/SFA1 and ω-6 PUFA/ω-3 PUFA. 11 indexes such as SFA1,MUFA,PUFA,SFA,UFA, UFA/SFA,SFA2/SFA1,PUFA/MUFA, EFA,CLA, PUFA/SFA and ω-6 PUFA/ω-3 PUFA differed significantly or extremely significantly between the two pig breeds (P<0.05;P<0.01), while SFA2 and PUFA/MUFA had no significant differences between the two pig breeds (P>0.05). 试验旨在研究南阳黑猪脂肪酸组成及含量,以期为中国地方猪种遗传资源的保护及开发利用提供理论依据。以南阳黑猪和大白猪为研究对象,每品种猪各12头,测量背最长肌脂肪酸含量及种类,以脂肪酸种类及数量、单不饱和脂肪酸(monounsaturated fatty acid,MUFA)、多不饱和脂肪酸(polyunsaturated fatty acid,PUFA)、饱和脂肪酸(saturated fatty acid,SFA)、12-16碳饱和脂肪酸(饱和脂肪酸1,SFA1)、其他饱和脂肪酸(饱和脂肪酸2,SFA2)、不饱和脂肪酸(unsaturated fatty acids,UFA)、SFA2/SFA1、PUFA/MUFA、必需脂肪酸(essential fatty acid,EFA)、共轭亚油酸(conjugated linoleic acids,CLA)、PUFA/SFA、ω-6 PUFA/ω-3 PUFA等为指标,从营养、健康、风味及储存方面综合评价两个猪种猪肉脂肪酸品质。结果显示,两个猪种背最长肌中共检出30种脂肪酸,其中23种脂肪酸在两个猪种间有显著或极显著差异(P<0.05;P<0.01);除SFA2/SFA1和ω-6 PUFA /ω-3 PUFA外,南阳黑猪其他指标均高于大白猪;SFA1、MUFA、PUFA、SFA、UFA、UFA/SFA、SFA2/SFA1、PUFA/MUFA、EFA、CLA、PUFA/SFA、ω-6 PUFA/ω-3 PUFA 11个指标在两个猪种间存在显著或极显著差异(P<0.05;P<0.01),SFA2和PUFA/MUFA在两个猪种间无显著差异(P>0.05)。综合以上结果,南阳黑猪肌肉脂肪酸品质总体优于大白猪。  相似文献

Forty Large White barrows were used to determine whether the effects of dietary fat source (tallow or soy oil at 5% of the diet) on lipogenesis and fatty acid profile of porcine adipose and lean tissue were dependent on dietary digestible energy density (8.8 vs 14.0 MJ DE/kg). Barrows were allocated to one of four groups and offered a fixed amount of feed (170 g x BW0.569/d) from 27 to 105 kg BW. The fatty acid composition of the backfat layers (BF), omental fat (OF), and i.m. adipose tissue of longissimus muscle as well as the activity of lipogenic enzymes of the adipose tissues were determined. Growth performance and carcass characteristics were affected by the dietary energy level (P < 0.01) but not by fat source. In accordance with the lower carcass fat deposition, the activity of lipogenic enzymes were decreased in the low-energy groups (P < 0.01). Within dietary energy level, inclusion of soy oil resulted in increased proportion of PUFA that was compensated by decreased saturated (SFA) and monounsaturated fatty acid (MUFA) proportions (P < 0.01). The SFA changes accounted for 23 (BF) and 24% (OF) of the PUFA changes in the high-energy and 31 (BF) and 39% (OF) in the low-energy diets. The differences in the fatty acid proportions between the soy oil and tallow group were more pronounced in the low-energy groups (fat source x energy density interactions: P < 0.01). Pigs fed the soy oil, low-energy diet had decreased SFA (BF: 28%; OF: 30%) and MUFA (BF: 13%; OF: 19%) concentration, whereas PUFA concentration was increased (BF: 59%; OF: 88%) compared with pigs fed the soy oil, high-energy diet. However, in the tallow groups, pigs fed the low-energy diets had slightly decreased SFA (BF: 14%; OF: 12%) and relatively constant MUFA (BF: 3%; OF: 1%), whereas PUFA concentration increased (BF: 39%; OF: 62%) relative to pigs fed the tallow high-energy diet. Lipid content of the i.m. adipose tissue was decreased in the low-energy groups (P < 0.05). Contrary to what was observed in the adipose tissues, increased PUFA concentration in the neutral and polar lipid fractions of the longissimus muscle was predominantly compensated by reduced MUFA deposition. In the polar lipid fraction, the proportions of both SFA and MUFA were decreased by the low-energy diet. Thus, the extent to which tissue concentration of fatty acids are altered from dietary fats differing in the degree of unsaturation depends on the dietary energy level.  相似文献

This research aimed to determine whether outdoor free-range rearing during the winter (average ambient temperature of 5 degrees C) vs. indoor housing (22 degrees C) affects meat quality, muscle metabolic traits, and muscle fiber characteristics. Forty Large White gilts and barrows were blocked by weight within each gender (20 per gender) and allotted randomly into two groups of pigs, with one reared indoors (IN) in individual pens (2.6 m2) and the other reared outdoors (OUT) from December to March in a 0.92-ha pasture. Both groups had free access to the same grower-finisher diet from 23 to 105 kg. At slaughter, adipose (backfat [BF] and omental fat [OF]) and muscle tissues (longissimus muscle [LM], rectus femoris [RF], and semitendinosus [ST]) were obtained from the right side of each carcass. Muscle fibers were stained and classified on the basis of stain reaction as slow-oxidative (SO), fast oxidative-glycolytic (FOG), and fast glycolytic (FG); fiber area and distribution were determined. Also assessed were carcass characteristics, initial and ultimate pH, L*a*b* values, drip loss percent, glycolytic potential (GP), and intramuscular lipid content, as well as the fatty acid profile of each muscle and adipose tissue. The OUT pigs had lower (P < 0.05) ADG and leaner (P < 0.05) carcasses than IN pigs. Rearing environment did not (P > 0.63) affect the intramuscular lipid content of the ST, but intramuscular lipid content was lower (P < 0.01) in the LM and tended to be higher (P = 0.06) in the RF of OUT than in those of IN pigs. In the BF outer layer of the OUT pigs, the higher PUFA content was compensated by both a lower (P < 0.01) saturated and monounsaturated fatty acid (MUFA) content, whereas in the OF, LM, and dark portion of the ST, only the percentage of MUFA was decreased (P < 0.01). In all tissues of the OUT pigs, the linolenic acid content was higher (P < 0.01) and the n-6:n-3 ratio was lower (P < 0.01). The GP of all muscles was higher (P < 0.01), and the ultimate pH of the RF and ST was lower (P < 0.01), in OUT compared with IN pigs. Lightness (L*) values were lower (P < 0.01) in the LM. Percentages of drip loss were higher (P < 0.05) in the LM and light portion of the ST of OUT than in those of IN pigs. The LM and RF of OUT pigs had more (P < 0.01) FOG and fewer (P < 0.01) FG fibers than muscles of IN pigs. Results suggest that rearing pigs outdoors increases aerobic capacity of glycolytic muscles but has little concomitant influence on meat quality traits.  相似文献

The objective of this project was to determine the contribution of lipid content to textural and sensory properties of fresh pork within defined pH classifications. Pigs (n = 1,535; from 248 sires and 836 dams) from the 1991, 1992, and 1994 National Barrow Show Sire Progeny Test were used in this study. The test included purebred Berkshire (107), Chester White (113), Duroc (249), Hampshire (220), Landrace (165), Poland China (101), Spotted (181), and Yorkshire (399) barrows (901) and gilts (634). Diets were uniform across breeds within test. The halothane (Hal 1843) genotype (1346 NN and 189 Nn) was determined. Pigs were slaughtered at 105 kg of BW, and samples of the LM were obtained from each carcass at the 10th rib. Star probe, sensory traits, and lipid content were determined on the LM from each pig. A pH classification of LM was assigned as follows: class A, > 5.95, n = 186; class B, > or = 5.80 to 5.95, n = 236; class C, > or = 5.65 to 5.80, n = 467; class D, > or = 5.50 to 5.65, n = 441; class E, < 5.50, n = 205. Data were analyzed using a mixed linear model including pH classification, test, sex, halothane genotype, breed, and breed x sex interaction as fixed effects, with sire and dam within breed included as random effects. Correlations were determined within pH class. Lipid content was a significant source of variation for models predicting star probe values in class C and D and for chewiness in class B, C, and D. Increasing lipid content tended to increase sensory tenderness in pH class D. Sensory tenderness was not affected by lipid content in pH class A, B, or E. Lipid content was not a significant source of variation for juiciness scores within any pH class. Intramuscular lipid is correlated with sensory texture traits primarily in classes C and D. Within class C and D, correlations indicate that increasing lipid content is associated with high sensory tenderness, low sensory chewiness, and low star probe values. It is concluded that lipid content is a small source of variation in texture and tenderness of pork loin with pH between 5.80 and 5.50, but not at a greater or lesser pH.  相似文献

Our objective for this study was to determine whether there is a difference in the fatty acid composition of phospholipids in longissimus muscle from pigs of different genotypes. In Exp. 1, 15 Hampshire x Yorkshire-Landrace (YL), 15 Duroc x YL, and 15 Danbred x YL were used. Animals were of similar age and were fed identical diets. In Exp. 2, longissimus muscle samples from pigs of seven genetically different lines were analyzed. In both experiments, saturated fatty acids (SFA, 16:0 and 18:0) constituted approximately 31.5% of the total fatty acids. Monounsaturated fatty acid (MUFA, 18:1 and 20:1) levels ranged from 12.3 to 16.9%, and PUFA (mainly 18:2 and 20:4) accounted for 50.8 to 57.0% of the total fatty acids. Fatty acid composition of muscle phospholipids from Duroc and Hampshire x YL pigs was identical. Muscle phospholipids from Danbred x YL pigs contained more PUFA (approximately 3%, P < .05) and less SFA (approximately 2%, P < .05) than phospholipids from the two other genotypes. Differences in SFA and PUFA of muscle from the seven lines were of the same order of magnitude. Differences in MUFA content were not significant.  相似文献

A total of 144 barrows and gilts (initial BW = 44 kg) were used in an 82-d experiment to evaluate the effects of dietary fat source and duration of feeding fat on growth performance, carcass characteristics, and carcass fat quality. Dietary treatments were a corn-soybean meal control diet with no added fat and a 2 × 4 factorial arrangement of treatments with 5% choice white grease (CWG) or soybean oil (SBO) fed from d 0 to 26, 54, 68, or 82. At the conclusion of the study (d 82), pigs were slaughtered, carcass characteristics were measured, and backfat and jowl fat samples were collected. Fatty acid analysis was performed, and iodine value (IV) was calculated for all backfat and jowl fat samples. Pigs fed SBO tended to have increased (P = 0.07) ADG compared with pigs fed CWG. For pigs fed SBO, increasing feeding duration increased (quadratic, P < 0.01) ADG and G:F. For pigs fed CWG, increasing feeding duration improved (quadratic, P < 0.01) G:F. For pigs fed SBO or CWG, increasing feeding duration increased carcass yield (quadratic, P < 0.04) and HCW (quadratic, P < 0.02). Dietary fat source and feeding duration did not affect backfat depth, loin depth, or lean percentage. As expected, barrows had greater ADG and ADFI (P < 0.01) and poorer G:F (P = 0.03) than gilts. Barrows also had greater last-rib (P = 0.04) and 10th-rib backfat (P < 0.01) and reduced loin depth and lean percentage (P < 0.01) compared with gilts. Increasing feeding duration of CWG or SBO increased (P < 0.10) C18:2n-6, PUFA, PUFA:SFA ratio, and IV in jowl fat and backfat. Pigs fed SBO had greater (P < 0.01) C18:2n-6, PUFA, PUFA:SFA ratio, and IV but decreased (P < 0.01) C18:1 cis-9, C16:0, SFA, and MUFA concentrations compared with pigs fed CWG in jowl fat and backfat. Barrows had decreased (P = 0.03) IV in jowl fat and backfat compared with gilts. In summary, adding SBO or CWG increased the amount of unsaturated fat deposited. Increasing feeding duration of dietary fat increases the amount of unsaturated fatty acids, which leads to softer carcass fat.  相似文献

In two experiments with growing-finishing pigs six different dietary fats were added to a conventional diet (control--C) to study the effects of dietary monounsaturated (MUFA) and polyunsaturated fatty acids (PUFA) on the fatty acid composition of backfat and kidney fat at similar amounts of double bonds in feed (Exp. 1:7% pork fat--PF, 4.95% olive oil--OO, 3.17% soybean oil--SO) or a constant amount of 5% of processed fats (Exp. 2: partially hydrogenated fat--SAT, fractionated pork fats: olein--OLE, stearin--STE). Compared with the control, PUFA were only slightly increased in backfat of pigs fed PF, OLE, STE or OO, although dietary PUFA intake was up to 70% higher. With SO PUFA were significantly increased in adipose tissues, predominantly at the expense of MUFA. Consequently, a non-linear relationship was found between PUFA intake and proportion in backfat. MUFA were incorporated at the expense of SFA, therefore, adipose tissues of OO fed animals were lowest in SFA. Despite comparable amounts of double bonds in feed (Exp. 1), the degree of unsaturation measured as fat score (sum of double bonds) was in the order SO > OO > PF > C. In contrast, the proportion of SFA was C > PF = SO > OO. Regarding the decisive role of SFA for fat consistency it may be concluded that MUFA should also be considered in feeding recommendations for pigs. Furthermore, in case of a high dietary supply of MUFA, a simple index of double bonds might not be sufficiently conclusive to judge pig fat quality.  相似文献

Eighteen steers were used to evaluate the effect of supplemental corn oil level to steers grazing endophyte-free tall fescue on fatty acid composition of LM, stearoyl CoA desaturase (SCD) activity and expression as well as cellularity in s.c. adipose. Corn oil was supplemented (g/kg of BW) at 0 (none), 0.75 (medium), and 1.5 (high). Cottonseed hulls were used as a carrier for the corn oil and were supplemented according to pasture availability (0.7 to 1% of BW). Steers were finished on a rotationally grazed, tall fescue pasture for 116 d. Fatty acid composition of LM, s.c. adipose, and diet was determined by GLC. Total linoleic acid intake increased linearly (P < 0.01) with corn oil supplementation (90.7, 265.1, and 406.7 g in none, medium, and high, respectively). Oil supplementation linearly reduced (P < 0.05) myristic, palmitic, and linolenic acid percentage in LM and s.c. adipose. Vaccenic acid (C18:1 t11; VA) percentage was 46 and 32% greater (linear, P = 0.02; quadratic, P = 0.01) for medium and high, respectively, than none, regardless of tissue. Effect of oil supplementation on CLA cis-9, trans-11 was affected by type of adipose tissue (P < 0.01). In the LM, CLA cis-9, trans-11 isomer was 25% greater for medium than for none and intermediate for high, whereas CLA cis-9, trans-11 CLA isomer was 48 and 33% greater in s.c. adipose tissue for medium and high than for none, respectively. Corn oil linearly increased (P 0.05) the percentage of total SFA, MUFA, or PUFA but linearly increased (P = 0.03) n-6:n-3 ratio from 2.4 to 2.9 in none and high, respectively. Among tissues, total SFA and MUFA were greater in s.c. adipose than LM, whereas total PUFA, n-6, and n-3 fatty acids and the n-6:n-3 ratio were lower. Trans-10 octadecenoic acid, VA, and CLA trans-10, cis-12 were greater (P < 0.01) in s.c. adipose than in LM. Oil supplementation did not alter (P > 0.05) stearoyl CoA desaturase activity or mRNA expression. Corn oil supplementation to grazing steers reduced the percentages of highly atherogenic fatty acids (myristic and palmitic acids) and increased the percentages of antiatherogenic and anticarcinogenic fatty acids (VA and cis-9, trans-11 CLA).  相似文献

研究了不同性别和日粮能量、蛋白水平对河田鸡胸肌肉中风味前体化合物含量的影响。结果表明:性别对腹脂率、氨基酸(Asp、Thr、Ser、Pro、Cys除外)以及肌内脂肪(IMF)及其饱和脂肪酸(SFA)、单不饱和脂肪酸(MUFA)、多不饱和脂肪酸(PUFA)含量有显著影响(P〈0.05),而对肌苷酸(IMP)含量无显著影响(P〉0.05);公鸡的总氨基酸(TAA)、肌苷酸、肌内脂肪中的SFA、MUFA含量略高于母鸡,母鸡的肌内脂肪及其PUFA含量明显高于公鸡。能量水平对肌苷酸、肌内脂肪及其SFA、MUFA、PUFA以及总氨基酸含量有显著影响(P〈0.05);当鸡采食高能日粮时,肌内脂肪中的SFA、MUFA含量会显著升高(P〈0.05),而IMP、IMF、PUFA含量会显著下降(P<0.05),TAA没有显著变化。蛋白水平对肌内脂肪及其MUFA、PUFA含量以及总氨基酸含量有显著影响(P〈0.05)。当采食高蛋白日粮时,肌内脂肪及SFA、MUFA显著降低,而其PUFA会显著增加(P〈0.05)。风味品尝结果表明,公鸡的香味、鲜味都显著高于母鸡,而嫩度低于母鸡;随着能量和蛋白水平的增加,鲜味和嫩度都显著下降(P〈0.05)。从肉品的总可接受性来看,性别对总可接受性没有显著影响(P〉0.05),低营养水平时的总可接受性大于高营养水平(P〈0.05)。  相似文献

Crossbred pigs (n = 216) were used to test the effect of supplemental L-carnitine (CARN) on the fatty acid composition and quality characteristics of fresh pork bellies from pigs fed diets formulated with different inclusion levels of corn oil. Pigs were blocked by BW (43.6 ± 1.0 kg) and allotted randomly to pens of 6 pigs within blocks. Then, within blocks, pens were assigned randomly to 1 of 6 dietary treatments in a 2 × 3 factorial arrangement, with either 0 or 100 mg/kg of supplemental CARN and 3 dietary inclusion levels (0, 2, or 4%) of corn oil (CO). When the lightest block weighed 125.0 kg, all pigs were slaughtered, and left-side bellies were captured during carcass fabrication for quality data collection. Fresh pork bellies were evaluated for length, width, thickness, and firmness (bar-suspension and Instron-compression methods) before a 2.5-cm-wide strip of belly was removed and subsequently dissected into subcutaneous fat, primary lean (latissimus dorsi), secondary lean (cutaneous trunci), and intermuscular fat for fatty acid composition determination. Although belly length, width, and thickness of fresh pork bellies were not affected by CARN (P ≥ 0.128) or CO (P ≥ 0.073), belly firmness decreased linearly (P < 0.001) with increasing dietary CO, but there was no (P ≥ 0.137) effect of CARN on any belly firmness measure. Dietary CARN increased (P < 0.05) the proportion of total SFA in the intermuscular fat layer, increased (P < 0.05) the proportion of total MUFA in the primary and secondary lean layers, and decreased (P < 0.05) the proportion of total PUFA in the intermuscular fat and secondary lean layers of pork bellies. Moreover, the SFA and MUFA compositions decreased linearly (P < 0.001) with increasing dietary CO, and the rate of the decrease in SFA composition was greater (P < 0.001) in the fat layers than the lean layers. Conversely, the PUFA content increased linearly (P < 0.001) with increasing dietary CO, and the rate of the increase in PUFA was greater (P < 0.001) in the fat than the lean layers, and greater (P = 0.022) in the primary than secondary lean layer. Results from this study would indicate that differences in the amount and rate of fatty acid deposition associated with feeding increased amounts of CO, along with moisture differences among the belly layers, combine to negatively affect fresh pork belly firmness.  相似文献

Two trials were performed to assess the meat fatty acid profile of goat kids from different genotypes, production systems and sex. In the first trial, genotype effect was determined in 24 suckling male kids from Turkish Saanen, Maltese and Gokceada breeds. In the second trial, male and female Gokceada Goat kids were used to compare the effect of extensive and semi‐intensive production systems on fatty acid composition of meat. Significant genotype effect was observed in the percentages of myristic acid (C14:0), palmitic acid (C16:0), oleic acid (C18:1 n‐9), linolenic acid (C18:3 n‐3), arachidonic acid (C20:4 n‐6) and docosahexaenoic acid (C22:6 n‐3), despite no differences on the ratios of polyunsaturated fatty acids to saturated fatty acids (PUFA/SFA) and n‐6/n‐3 (P > 0.05). The effect of production system had also significant effects on fatty acids, but sex only influenced significantly stearic acid (C18:0), C18:1 n‐9 and C18:3 n‐3 fatty acids and total PUFA level and PUFA/SFA ratio. This study confirms that dairy breeds are prone to produce higher levels of unsaturated fatty acids in their muscle. Meanwhile, meat from Gokceada goat kids, which is one of the indigenous breeds in Turkey, had similar PUFA/SFA and n‐6/n‐3 ratios to Turkish Saanen and Maltase.  相似文献

Fourteen Hereford steers were used to compare carcass traits, meat quality, and fatty acid composition of beef from cattle grazing tall fescue infected with either wild-type (E+; n = 6) or novel, nil ergot alkaloid (AR542; n = 8) endophyte for 209 d. Average daily gain, live weight, and HCW were greater (P < 0.05) for AR542 cattle than for E+. No differences in LM color or pH were observed between AR542 and E+. Steaks from E+ cattle tended (P = 0.10) to have higher L* and b* than those from AR542 cattle at 0 d of display. Ground beef from E+ cattle also had higher (P < 0.05) L* than AR542 cattle, with no differences in a* or b* at 0 d of display. Color changes during display did not differ for both steaks and ground beef from E+ and AR542. Lipid oxidation levels increased (P < 0.05) during simulated retail display, but they did not differ between endophyte treatments. Adipose tissues from E+ cattle had a higher (P < 0.05) percentage of SFA, and a lower (P < 0.05) percentage of MUFA than adipose from AR542 cattle. Ground beef and i.m. fat had higher (P < 0.05) concentrations of SFA, MUFA, and cis-9, trans-11 isomer of conjugated linoleic acid, and lower (P < 0.05) concentrations of PUFA and PUFA:SFA ratio than s.c. fat. The n-6:n-3 fatty acid ratio did not differ among fat depots. Ergot-alkaloids were detected in s.c. adipose tissues, and alkaloid concentration was greater (P < 0.05) for E+ than AR542. Warner-Bratzler shear force values did not differ between endophyte types, but it decreased (P < 0.01) across the postmortem aging period. Conversely, sensory panel evaluation detected greater (P < 0.01) chewiness and lower (P < 0.05) juiciness for AR542 than for E+ steaks aged for 14 d. Although grazing cattle on tall fescue pastures infected with nil ergot alkaloid endophyte improved cattle performance, these results suggest that endophyte type has minor effects on carcass traits and meat quality of pasture-fed beef. Moreover, finishing cattle on tall fescue pastures showed the potential to enhance the fatty acid profile of beef from a human health perspective. Alkaloid concentration was greater (P < 0.05) in s.c. fat from E+ than AR542 (2.81 vs. 0.92 ppb; fresh-tissue basis). This is the first published report demonstrating the presence of alkaloids in beef tissues.  相似文献

The aim of this study was to investigate the phenotypic relationship between feed intake (FI) characteristics with intramuscular fat, cholesterol and fatty acid composition in pork. Data were available on 202 Duroc barrows. Intramuscular fatness was positively correlated with a higher percentage of saturated (SFA) and monounsaturated fatty acids (MUFA), a lower percentage of polyunsaturated (PUFA), omega-3 (ω3) and omega-6 (ω6) fatty acids, and a lower ω6/ω3 and P:S ratio (p < 0.05). Faster growth resulted in a higher level of SFA and a lower level of ω3 fatty acids (p < 0.05). Increased FI, residual feed intake (RFI) and feed intake time (TIME) and a decreased feed intake frequency (FREQ) resulted in an increase in MUFA, a decrease in PUFA, ω3 and ω6 fatty acids and a lower P:S ratio (p < 0.05). In addition, increased FI and RFI and a decreased FREQ resulted in an increase in SFA (p < 0.05). Most of the correlations were a result of a concomitant relationship with intramuscular fatness and disappeared after correction for that trait. Serum total, high-density lipoprotein and low-density lipoprotein cholesterol levels were positively correlated with SFA and MUFA, and negatively with PUFA, omega-3 and omega-6 fatty acids, and the P:S ratio (p < 0.05). These results have implications for programmes aimed at improving meat quality through selection.  相似文献

The apparent digestibility and deposition in carcass of individual dietary fatty acids (FA) were determined in growing-finishing pigs fed diets containing either beef tallow or sunflower oil. The beef tallow was rich in saturated FA (SFA) and the sunflower oil had a high content of polyunsaturated FA (PUFA). A total of 39 barrows was used. The experimental diets contained 5% (w/w) of the variable fat source and were fed ad libitum . The dietary fat type had no effect (p > 0.05) on growth performance, even though the apparent digestibilities of crude fat and crude protein were higher (p < 0.05) in the animals fed sunflower oil. The pigs fed the sunflower oil diet showed higher apparent digestibilities (p < 0.05) of the sum of SFA, monounsaturated FA (MUFA) and PUFA, but had a lower digestibility (p < 0.05) of stearic acid. The intakes of individual digestible FA were derived feed intake data, FA contents of the diets and the digestibility of individual FA. For the entire feeding period of 13 weeks, the ratio of deposition in carcass to intake of digestible FA was increased (p < 0.05) for palmitic and stearic acid in the pigs fed sunflower oil, but the ratios for oleic acid and linoleic acid were decreased (p < 0.001). In the pigs fed sunflower oil instead of beef tallow, the deposition:intake ratio was raised for the SFA (p < 0.001), but diminished for the MUFA (p < 0.05). The calculated minimum de novo synthesis of SFA was increased (p < 0.05) and that of MUFA decreased (p < 0.05) in the pigs fed sunflower oil. It is concluded that the feeding of a diet with sunflower oil instead of beef tallow improved apparent digestibility of SFA, MUFA and PUFA, increased the deposition:digestible intake ratio for SFA, but lowered that for MUFA and PUFA.  相似文献
