ABSTRACT:     Seasonal changes in levels of chemical constituents in the abdominal muscle of male and female mud crab Scylla serrata were investigated. The gonadosomatic index in the female crab was higher in October and August, of which the muscle yield, glycogen, and total amount of adenosine 5'-triphosphate (ATP)-related compounds (ARC) in the October sample were the highest throughout the year, but the total amount of free amino acids (FAA) was the lowest. The total FAA and individual FAA such as glycine, alanine, and arginine increased in the August and November female samples, while that in the male specimens was higher in January, March, and August. The total ARC in both crabs was lower in the samples collected from winter than in other seasons whereas glycinebetaine was higher in winter and early spring. Glutamic acid, glycine, alanine, arginine, glycinebetaine, and adenosine monophosphate might be responsible for the taste of mud crab. Their level together was relatively higher in the August and January male samples, and in the August and November female specimens. However, the correlation between the taste component content and degree of gonad maturation was low.  相似文献

ABSTRACT: Differences in taste preference and the levels of extractive components and glycogen were compared between cooked meats of small abalone Haliotis diversicolor fed either gracilar (G-small abalone) or an artificial diet (A-small abalone). Using sensory tests, taste preference of cooked meats was significantly higher for A-small abalone than for G-small abalone. Results of clustering analysis and principal component analysis of chemical data also revealed that the two cooked meats differed from each other in terms of their measured constituent compositions irrespective of sampling periods. Compared with G-small abalone, A-small abalone meats were lower in taurine and arginine, but higher in glycine (Gly), glutamic acid (Glu), alanine, serine, proline, adenosine monophosphate (AMP), and glycogen. It is concluded that the discrepancy in the levels of taste-active components of abalone, such as Gly, Glu, and AMP, is likely to be responsible for the differences in taste preference between G- and A-small abalone cooked meats.  相似文献

分析了乌鳢(Channaargus)即杀后背肉、腹肉、尾部肉、肝脏、生殖腺中ATP关联化合物、游离氨基酸、多胺、糖元及糖酵解中间代谢物、有机酸等的含量。ATP关联化合物在肌肉中的总量为7.5~8.0μmol·g-1。ATP在背肉含量为3.9μmol·g-1,腹肉为4.1μmol·g-1,尾部肉为4.7μmol·g-1。运动激烈的尾部肉ATP占63%,含量相当高。肝脏中有少量的腺苷与肌苷酸一起被检出,据此可认为ATP的分解存在两个途径。游离氨基酸总量在背肉中为436.0mg·(100g)-1,腹肉中为405.0mg·(100g)-1,尾部肉中为356.3mg·(100g)-1。牛磺酸和甘氨酸为主要氨基酸,占68%~73%。丙氨酸和谷氨酸也相当高的含量检出。肌肉中的多胺检出为精胺和亚精胺,肝脏和生殖腺中有较高浓度的腐胺及亚精胺和精胺检出。即杀后糖元的量约占肌肉的0.5%,还有相当多的葡萄糖和6磷酸葡萄糖的糖酵解中间代谢物以及其最终产物乳酸的大量检出。  相似文献

SUMMARY: Seasonal variation in the level of extractive nitrogenous components was investigated in the muscle of puffer Takifugu rubripes cultured in two different areas of Taiwan. There were no seasonal and regional variations in the proximate composition of the fish. Of the free amino acids (FAA) in the muscle of puffer, the predominant one was taurine, followed by glycine, lysine, and alanine. Among nucleotide-related compounds, inosine monophosphate (IMP) and guanosine monophosphate (GMP) were the most prominent compounds. The total nucleotide-related compounds in the muscle of puffer were higher in July and November than those in the other months. The level of total taste-active components including glycine, alanine, arginine, GMP, IMP, and adenosine 5'-monophosphate was much higher in the muscle of puffer collected from July to January. Therefore, the puffer is probably more palatable in these periods.  相似文献

Tail muscle tissue free amino acids (FAA) concentration is reported for subadult (4.3 g) Litopenaeus vannamei fed diets containing only protein‐bound amino acids, crystalline lysine as a supplement to protein‐bound lysine, and only crystalline amino acids (CAA). FAA were determined in shrimp at 0.00, 0.25, 0.5, 1, 2, 4, and 8 h postfeeding. Highest total tissue concentrations of essential amino acids and individual amino acids were typically observed 4 h postfeeding for shrimp fed intact and crystalline lysine‐supplemented feeds. Those shrimp offered diets containing only CAA showed no tissue maxima. Similar uptake patterns for lysine shown by shrimp fed the intact and crystalline lysine‐supplemented diet indicate the potential use of small amounts of crystalline lysine in shrimp feeds.  相似文献

ABSTRACT: Changes in the freshness indices and extractive components in the foot muscle of live small abalone Haliotis diversicolor during storage at 5°C, 15°C, and 25°C were investigated. The pH values declined with storage time. Volatile basic nitrogen and the K -value increased gradually with storage time at 15°C and 25°C, but changes were small at 5°C. The onset of initial decomposition of samples was observed after 3.5 days at 5°C, after 2.5 days at 15°C, and after one day at 25°C. Adenosine triphosphate and adenosine diphosphate degraded rapidly within the early days of storage. In contrast, levels of adenosine monophosphate increased and exhibited prolonged accumulation throughout the storage period. The total amount of free amino acids increased markedly during storage. The dominant free amino acids, such as taurine, glutamic acid, glycine, alanine, and arginine, also increased after storage.  相似文献

对皱纹盘鲍 (HaliotisdiscushannaiIno) 2种壳色个体———红壳个体和绿壳个体的一般营养成分、矿物元素以及脂肪酸的组成和含量进行比较研究。结果表明 ,两者对应组织 (足肌、内脏、生殖腺 )中水分、蛋白质、粗脂肪、灰分的含量基本无差异 ;内脏灰分颜色均为红褐色 ,但足肌灰分颜色明显不同 ,绿壳个体呈灰白色而红壳个体则呈浅砖红色。矿物元素的分析结果进一步显示 ,足肌中除了Ca之外 ,所测元素的含量均以红壳个体为高 ,其中Fe、Cu、Mn的含量为绿壳个体的2~ 3倍 ;红壳个体贝壳中Mn的含量亦较高 ,约为绿壳个体的 2倍。两者上述对应组织的脂肪酸种类相同 ,含量基本一致。此外 ,粗脂肪、无机元素含量以及脂肪酸的组成和含量在不同组织之间存在较明显的差别  相似文献

Moist diets with increasing amounts of carbohydrate (0.5%, 10% and 21% on a dry weight basis) were each fed to duplicate groups of cod (initial weight 370 g) for 8 weeks, after which all groups were fasted for 4 weeks. Protein energy was high and accounted for more than 70% of the gross energy content in all feeds, and the diets were maintained isocaloric by substituting lipid energy for carbohydrate energy. No indigestible binder was added. Excellent growth and feed conversion were obtained in all groups. After 4 weeks of fasting, fish previously fed diets with either 10% or 21% carbohydrate showed significantly higher weight loss than fish fed the diet without carbohydrate. Liver glycogen reached 10% of liver wet weight in fish fed diets containing 10% or 21% carbohydrate and 5% in fish receiving 0.5% carbohydrate after 8 weeks. Following 4 weeks of fasting, liver glycogen was reduced to similar levels in all fish. Plasma glucose levels 4 h after feeding were higher in fish fed the diets with 10% or 21% carbohydrate and plasma free amino acid levels (FAA) were lower, than in fish fed the diet containing 0.5% carbohydrate. Blood lactate concentrations were unaffected during the first 24 h after feeding. After 4 weeks of food deprivation, the levels were significantly reduced only in the 21% carbohydrate group. A link between glucagon and protein metabolism is suggested because plasma glucagon concentration followed the same pattern as the concentrations of plasma FAA throughout the study. Insulin and glucagon-like peptide (GLP) showed a covariation throughout the experiment. Reduced plasma insulin levels were seen after fasting concomitant with reduction in the levels of FAA and glucose. It is suggested that insulin secretion in cod is affected both by plasma FAA and glucose and that cod meets food deprivation by slowing down metabolism.  相似文献

The effects of fasting on the quality of the dorsal and ventral ordinary muscles from cultured Pacific bluefin tuna (Thunnus orientalis) during chilled storage were investigated. Tuna were subjected to fasting for 2 days in the summer or 6 days in the winter prior to harvesting. The breaking strength of the dorsal ordinary muscle sampled in the summer increased until 24 h and then decreased. There were no significant differences in the lipid and glycogen content of the ordinary muscle after 9 h of storage between the controls and either fasting group. The pH of the ordinary muscle subjected to summer and winter fasting was higher than in the controls after 24–48 h of storage. However, the relationship between the pH and glycogen content was unclear. The metmyoglobin content during chilled storage was lower in the ordinary muscles from either fasting group than in the controls. In conclusion, fasting for 6 days in the winter improved the color stability of the ordinary muscle without a decline in its lipid content.  相似文献

A fraction with molecular weight of 0.2–1.0 kDa was prepared from abalone viscera hydrolysate by ultrafiltration and nanofiltration. The contents of protein, carbohydrate, and fat in abalone viscera were 45.75%, 18.19%, and 13.60%, respectively. The protein in abalone viscera hydrolysate faction (AVHF) reached up to 75.73%, while carbohydrate and fat fell to 1.80% and 0.20%, respectively. The leucine (Leu) content was the highest in the AVHF. On the other hand, the hydroxyl and 2,2-diphenyl-1-picrylhydrazyl radical scavenging activities and reducing power increased with increased concentration of AVHF. The inhibiting ability of AVHF on lipid peroxidation was higher than that of ascorbic acid. The total content of K, Na, and P in AVHF was 9.78 g/100 g, and total arsenic content reached 16.23 mg/kg. The proportion of arsenobetaine and arsenocholine accounted for more than 96%, while the proportion of arsenate was 0.47%, and arsenite was not detectable. It is concluded that the AVHF from abalone viscera is a safe natural antioxidant.  相似文献

The aims of this study were to evaluate the short‐term effects of artificial diets with different protein: cellulose ratios (D1 = 60:0, D2 = 45:15 and D3 = 30:30) on the enzymatic activity and metabolite profile and to probe the suitability of the amino acid profile of the different diets in Aegla uruguayana. The different artificial diets affected the digestive total protease and amylase activities in a short period of time. Lipases were not affected by the diets. In the haemolymph, an effect of the diet was found in glucose and triglyceride measurements. Particularly, the glucose of the organisms fed D1 was significantly lower than that of organisms fed D2, without significant differences in D3. The concentrations of triglycerides were different among organisms subjected to the treatments, indicating a greater concentration in organisms fed D2 than in those fed D1. In muscle tissue, the concentration of glycogen followed the same trend as haemolymphatic glucose, indicating that the organisms fed D2 had a higher concentration of this metabolite compared to the rest. The amino acid profile of muscle tissue of wild and fed aeglids had a high and significant correlation in all cases, showing few changes in the short‐term feeding regime. Some changes were observed mainly in aeglids fed D3, which exhibited the lowest amounts of methionine, lysine and arginine and the highest amounts of aspartic + glutamic acids. In addition, D2 has a good quality of EAA, fulfilling almost all the requirements of a wild aeglid.  相似文献

研究了不同季节体质量为107.824-22.97g的兴凯湖野生红鳍原鲐(Cultrichthys erythropterus)肝胰脏、肠道消化酶活力及夏季昼夜变化和肌肉氨基酸种类组成、含量及其变化,探讨其营养生态特性及变化规律。结果显示:不同季节红鳍原铂的蛋白酶、淀粉酶和脂肪酶的比活性显著不同(P〈0.05),夏、秋季高于春、冬季,同一季节蛋白酶比活均显著高于淀粉酶比活(P〈0.05);红鳍原鲐蛋白酶、淀粉酶和脂肪酶比活的昼夜变化为:19:00~21:00、19:00和16:00~19:00时值最高,7:00、7:00和21:00值最低。红鳍原鲴肌肉由18种氨基酸组成,冬季缬氨酸、蛋氨酸、异亮氨酸、苯丙氨酸和赖氨酸五种必需氨基酸的含量显著低于春、秋季(P〈0.05),而非必需氨基酸的含量无明显的季节变化;不同季节谷氨酸含量均最高,最低为胱氨酸。春、夏季氨基酸总量和必需氨基酸总量较高,秋、冬季较低;秋季鲜味氨基酸含量最低。研究表明,野生红鳍原鲐消化生理具有不同季节和日变化特点,氨基酸组成的季节变化提示:冬季鱼体代谢活动对肌肉组织中必需氨基酸的依赖。  相似文献

This study investigates whether tissue free amino acid (FAA) pools in rainbow trout,Oncorhynchus mykiss (Walbaum), are altered following feeding and the relationships between the amount of food consumed and the FAA pool size. Trout were starved for 7 days to provide baseline data and then refed on day 8. Individual food intake was measured by radiography and the consumption of amino acids (AA) calculated from dietary protein consumption. Total FAA concentrations in the stomach, liver and white muscle were little changed at various times after the meal and this pattern was repeated for the majority of individual FAA. Overall, the most notable change was a reduction in essential FAA concentrations (principally in valine, leucine and isoleucine) in the white muscle following feeding. However, in the caeca total FAA, total essential FAA and a number of individual FAA were significantly elevated at 4, 9 and 15h following feeding. There were few significant correlations between dietary amino acid consumption and total tissue FAA and essential FAA concentration in the stomach, caecum and white muscle; correlations were stronger in the liver. In order to explain the relative constancy of total FAA concentrations in the tissues following food intake (which represents over 100% of the total FAA pool) a model is presented that quantifies the AA flux through the free pools and considers the role of protein turnover in regulating FAA pool size.  相似文献

对皱纹盘鲍内脏脂质进行了分析。采用Folch法提取内脏总脂,硅胶柱层析对中性脂及磷脂进行分离;TLC法对中性脂、磷脂不同组分进行分离与其主要组分的制备;10%硫酸—甲醇对样品进行甲酯化,通过气相色谱法对其进行脂肪酸分析比较。结果表明,皱纹盘鲍内脏中磷脂含量可达31.58%,不饱和脂肪酸在磷脂中含量显著高于中性脂中含量。磷脂中含有一定量的缩醛磷脂,磷酯酰乙醇胺(PE)中缩醛型磷脂含量可达50%。研究表明,皱纹盘鲍内脏中含有丰富的磷脂,多不饱和脂肪酸,并含有一定量的缩醛磷脂,具有较好的食用和药用价值,应得到充分利用。  相似文献

为了探究三峡库区中段水体微生物群落结构的季节变化特征,分别于2018年春季(3月)、夏季(7月)、秋季(9月)、冬季(1月)采集三峡库区中段万州、涪陵、忠县流域表层水样,分析水质指标和微生物群落结构;通过构建16S rRNA基因克隆文库,结合PCR扩增技术进行高通量测序。结果表明,变形菌门(Proteobacteria)、放线菌门(Actinobacteria)、拟杆菌门(Bacteroidetes)、蓝细菌门(Cyanobacteria)是三峡库区中段水体中的优势菌,不同菌门分布呈现明显的季节特征,冬季微生物多样性高于夏季。夏、秋、冬三季中,变形菌门是第一优势菌,占细菌群落的42.63%~92.90%,春季放线菌门的含量相对丰富,占细菌群落的16.65%~42.25%,蓝细菌门在春冬季的含量相对较高,占细菌群落的6.50%~13.50%,夏秋季的含量较低。PCoA和层级聚类分析显示,夏季和秋季微生物群落结构相似度高,冬季和春季的相似度高,且夏秋季和冬春季的多样性存在显著性差异(P=0.01)。RDA分析表明,温度是影响三峡库区中段水体微生物群落结构最主要的环境因子。  相似文献

The experiment was conducted to assess the growth of juvenile greenlip abalone Haliotis laevigata fed a range of Ulva rigida diets with different nitrogen contents and an artificial pelleted diet. The minimal nutrient concentration resulting in significant enrichment of U. rigida was 2.25 mg N l?1. The maximum nitrogen content obtained by U. rigida in this study was 6.099%, which resulted from an inorganic nutrient concentration of 7 mg N l?1. However, no further significant increase in enrichment occurred from nutrient concentrations of 10 and 15 mg N l?1. Abalone specific growth rate in shell length (SGRL) and wet weight (SGRW) and foot muscle yield were significantly higher for abalone fed the artificial diet compared to those fed any U. rigida diet. Abalone fed U. rigida enriched in less than 15 mg N l?1 had similar growth rates compared to abalone fed unenriched U. rigida. Abalone fed the artificial diet contributed a higher percentage of weight gain into the valuable foot muscle. The foot muscle moisture content of abalone fed the artificial diet was significantly lower than that of abalone fed any U. rigida diet. The conclusions reached by this study should assist Australian abalone producers in assessing the potential benefits of using U. rigida as an effluent biofilter and subsequent food source for the commercially important juvenile greenlip abalone.  相似文献

The study aimed to investigate the effects of formic acid inclusion in abalone diets, which contained ingredients produced from fish processing by-products, and to quantify effects on production performance. Four diets (a commercial reference and iso-nutrient diets containing fish silage oil, unprocessed rainbow trout viscera or shrimp protein hydrolysate) were evaluated both with and without addition of 2 g kg?1 dietary formic acid, thus yielding a total of eight treatments, in feeding trials with cultured South African abalone Haliotis midae. Results indicated that inclusion of unprocessed rainbow trout viscera without formic acid decreased production performance of experimental animals, as evidenced by significantly decreased final animal weight and daily weight gain, and significantly increased feed conversion ratio compared to the iso-nutrient control. The decreased production performance was attributed to decreased feed water stability of the diet incorporating untreated trout viscera. Dietary formic acid supplementation partially mitigated the negative impacts of viscera inclusion on production performance of the experimental animals, as seen in significantly higher final animal weight and daily weight gain, and lower feed conversion ratio when compared to non-formic acid-supplemented, viscera-containing diet. However, no beneficial effects on production performance or water stability were found upon formic acid inclusion in diets not containing trout viscera. In conclusion, dietary formic acid can partially mitigate negative impacts on production performance when unprocessed trout viscera are included in formulated abalone diets by improving feed water stability, but the exact mechanism by which this is achieved was not established.  相似文献

An experiment was conducted to determine the dietary cholesterol requirement of juvenile abalone Haliotis discus hannai. Eight isoenergetic (18.15–18.61 kJ/g) and isonitrogenous (29.00–29.78% protein) diets, supplemented with 0.00, 0.15, 0.30, 0.45, 0.60, 0.75, 0.90 and 1.05% cholesterol were evaluated. Juvenile abalone (initial weight: 0.67–0.72 g) were reared in a flow-through water system for 24 weeks. During the feeding trial, water temperature was maintained at 14–17 °C, salinity 31–33, pH 7.4–7.9. Abalone fed diet without cholesterol supplementation had the lowest weight gain ratio (WGR, 356.70%). Survival ranged from 98.52 to 100.00% and was not significantly different among treatments. There were no significant effects of dietary cholesterol on composition and cholesterol concentration in the muscle and viscera of abalone. Based on data of WGR using broken-line analysis, the optimal dietary cholesterol requirement of juvenile abalone was found to be 0.23%.  相似文献

Dietary substitution effect of sea tangle (ST) with rice bran (RB) on growth and carcass composition of juvenile abalone (Haliotis discus) was determined. Juvenile abalone was acclimated to the experimental conditions for 4 weeks. Seventy juvenile abalone averaging 0.43 g were randomly distributed into each of the 18, 70 L plastic rectangular containers. The experimental diets were fed to abalone once a day at a satiation level with a little leftover. The feeding trial lasted for 16 weeks. Survival of abalone was not affected by dietary substitution of ST with RB. However, weight gain of abalone fed the RB40 diet was higher than that of abalone fed the all other diets except for the RB0 diet. No significant difference in weight gain was found in abalone fed between the RB0 and RB100 diets. SGR of abalone fed the RB40 diet was higher than that of abalone fed the all other diets. Also SGR of abalone fed the RB0 diet was higher than that of abalone fed the RB100 diet, but not different from that of abalone fed the RB20, RB60 and RB80 diets. Moisture, crude protein and ash content of the soft body of abalone were affected by dietary substitution of ST with RB. In conclusion, the 100% ST could be substituted with RB without a retardation of weight gain of abalone when the 20% ST was included into the experimental diet. However, the best growth performance was obtained in abalone fed the RB40 diet substituting 40% ST with RB.  相似文献

研究鲍鱼内脏多糖的吸湿性、保湿性和抗紫外活性,制备添加鲍鱼内脏多糖的水洗面膜。结果表明:低湿度(RH43%)条件下,鲍鱼内脏多糖样品吸湿率和保湿率优于高湿度(RH81%)条件,高于聚乙二醇,低于甘油;鲍鱼内脏多糖样品吸湿率61.65%,保湿率167.46%。高湿度(RH43%)条件下,鲍鱼内脏多糖样品吸湿率20.73%,保湿率123.36%。鲍鱼内脏多糖具有较好的抗紫外UVA和UVB的能力。制备的鲍鱼内脏多糖水洗面膜感官及理化指标符合QB/T 2872-2007,具有很好的离心稳定性。  相似文献
