四川芋种质资源球茎主要营养成分分析

摘    要:以42份四川芋种质资源为试验材料,分析球茎成熟期主要营养成分。结果显示,母芋的干物质平均含量23.4%,蛋白质2.73%,淀粉14.65%,支链淀粉12.53%,VC 5.56 mg/100 g。子芋干物质平均含量24.31%,蛋白质2.57%,淀粉15.55%,支链淀粉13.26%,VC 7.00 mg/100 g。芋球茎质地口感和主要营养成分含量有一定相关性。

Abstract:Taking 42 taro (Colocasia esculenta Schott) germplasm resources as materials, we analyzed their main nutrients during the tuber maturation period. The results showed that the average nutrient contents of the corms of 24 taro accessions were as follows: dry matter 23.4%, protein 2.73%, starch 14.65%, amylopectin 12.53% and vitamin C 5.56 mg/100 g, and the average nutrient contents of the eormels were as follows: dry matter 24.31%, protein 2.57%, starch 15.55%, amylopectin 13.26% and vitamin C 7.00 mg/100 g, which suggesting that there were some relationships between the taste and texture with the main nutrition components of tubers.
