类黄酮化合物氧化前后含量和抗氧化性的变化

摘    要:采用HPLC法和流动注射化学发光方法分别研究了氧化前后类黄酮化合物的含量和抗氧化性。结果表明:氧化前类黄酮化合物槲皮素、芦丁和表儿茶素的含量分别是0.100 9和0.100 7和0.101 0,氧化后分别为0.098 8、0.096 2和0.090 5 mg/mL。类黄酮氧化前的抗氧化性高于氧化后,其抗氧化活性依次为:槲皮素>芦丁>表儿茶素。

Abstract:HPLC and flow injection chemiluminescence method were used to determine the content and oxidation resistance of flavonoid compound before and after oxidation,respectively.The results showed that the contents of quercetin,rutin and epicatechin were 0.100 9,0.100 7 and 0101 0 mg/mL before oxidation and 0.098 8,0.096 2 and 0.090 5 mg/mL after oxidation,respectively.The oxidation resistance of flavonoids before oxidation was stronger than that of flavonoids after oxidation.The oxidation resistance of flavonoids ordered as quercetin>rutin>epicatechin.
