摘    要:研究测定了不同生长环境下莲藕中酚类物质、PPO及Fe、Cu的分布与含量,比较了它们的贮藏效果.结果表明,田藕中酚类物质、PPO及Fe、Cu的分布趋势与塘藕基本上是一致的,但酚类物质含量、PPO活力高于相应部位的塘藕,Cu含量更是远远高于后者;褐变因素上的差异使相同条件下田藕的贮藏性能显著差于塘藕.

Abstract:In this paper distribution of polyphenols,PPO,Fe and Cu in lotus root under different cultural condition was determined, Also storage effects of lotus root cultivated under different condition were compared. Results showed that distribution trends of four chemicals in lotus root cultivated in field were same as in lotus root in pond. But content of polyphenols and PP0 activity in lotus root cultivated in field were higher than the other,let alone content of Cu.Storage effects of the latter were significantly better than the former under the same storage condition.
