日照绿茶儿茶素品质指数研究

摘    要:研究日照绿茶的儿茶素品质指数,是揭示日照绿茶品质特征的重要方面.通过对日照主要茶区分春、夏、秋3季取样,采用高效液相色谱(HPLC)分析法进行检测,全面分析日照绿茶儿茶素及单体含量.结果表明:日照绿茶儿茶素平均含量为136.04 mg/g,春茶为127.96 mg/g,夏茶为136.50 mg/g,秋茶为143.27 mg/g,秋茶>夏茶>春茶;日照绿茶儿茶素单体平均含量大小为EGCG> EGC> ECG> EC>C> GC> GCG,以EGCG最高,平均达80.84 mg/g,占儿茶素总量的59.09%,其次为EGC和ECG,分别占儿茶素总量的14.90%和13.83%;日照绿茶儿茶素品质指数春茶、夏茶、秋茶分别为652.14、388.57、522.13,全年平均520.95,以春茶最好、秋茶次之、夏茶最差;较好地反映了日照绿茶的品质状况.

Abstract:It was an important aspect to study Rizhao green tea catechin quality index. Through to three times of sampling between Rizhao main tea growing in season spring, summer, autumn, using high performance liquid chromatography (HPLC) method for testing. The results showed that: average Rizhao green tea catechins content were 136.04 mg/g, spring tea were 127.96 mg/g, summer tea were 136.50 mg/g, autumn tea were 143.27 mg/g, autumn tea〉 summer tea〉 spring tea. Rizhao green tea catechin monomer content size average were EGCG 〉 EGC 〉 ECG 〉 EC 〉 C 〉 GC 〉 GCG, at the highest of EGCG, an average of 80.84 mg/g, accounts for 59.09% of the total catechin, followed by EGC and ECG, accounted for 14.90% of the total catechins and 13.83% respectively. Rizhao green tea catechin quality index of spring tea, summer tea and autumn tea were 652.14, 388.57, 522.13, annual average of 520.95, with spring tea best, next autumn tea, summer tea. Better reflected Rizhao green tea quality condition.
