烤烟香气成分与其评吸总分和香味特征的相关性

摘    要:目的]为特色烤烟研究提供参考。方法]对不同产地不同品种同等级烟叶的香气成分及其评吸总分、香气质、香气量及香型进行相关性分析,探讨初烤烟香气成分与其评吸品质和香气特征的关系。结果]从烤烟中共检测出41种香气成分,与评吸总分关系密切的有二氢猕猴桃内酯(显著正相关)、四甲基吡嗪、茄酮、氧化茄酮、香叶基丙酮、2-乙酰吡啶(极显著或显著负相关);与香气质关系密切的有二氢猕猴桃内酯、巨豆三烯酮(显著正相关)、2-乙酰吡啶和2,3-二甲基吡嗪、2-甲基戊酸和四甲基吡嗪(极显著或显著负相关);与香型关系密切的有四甲基吡嗪、茄酮、氧化茄酮、异戊酸(显著正相关)、二氢猕猴桃内酯(极显著负相关)。结论]各香气成分与烤烟香气量的相关性均不显著。
