摘    要:目的]为芒果核中多酚类物质的工业化生产提供理论依据。方法]以芒果核仁为试材,采用微波辅助乙醇法提取其中的多酚类物质,以乙醇浓度、提取时间、液固比、微波功率为考察因素,采用混合均匀设计法对提取工艺进行考察,并根据多元回归方程得到优化工艺参数。结果]微波辅助提取芒果核仁中多酚类物质的最佳工艺为:微波功率385W,乙醇浓度60%,固液比1:16,萃取时间120s,此条件下,多酚类物质的提取率达8.93%。结论]采用微波辅助法提取芒果核仁中多酚类物质具有提取效率高、提取时间短、成本低等优点。
