真空冷冻干燥工艺中海红果共晶点与共熔点的测定

摘    要:海红果是中国西北地区的一种特色水果,具有很高的食用价值和药用价值。因此,海红果的开发利用价值很大。文章以海红果为试验材料,阐述了共晶点和共熔点在海红果真空冷冻干燥工艺中的重要意义.在冻干试验中采用电阻法测定海红果的共晶点和共熔点温度。对试验数据进行曲线拟合,确定共晶区、共熔区,并根据函数曲率的物理意义,得出海红果的共晶点和共熔点分别为-32℃和-26℃。

The Determination of Eutectic Point and Co-melting Point of Malus Prunifolia Borkh in Vacuum Freeze Drying Technology

Abstract:Circassian Fruit is a kind of excellent fruit in the Northwest of Chinese, with high edible value and medicinal value, therefore the value of development and utilization is large.In this paper,experimental materials are Circassian Fruit and describe the importance of eutectic point and Melting point of Circassian Fruit in the process of vacuum freeze-drying.In the freeze- drying experiment,use resistance method to measure eutectie temperature and Melting point.Curve fitting for the test data to determine the eutectic area and Melting area,then obtain eutectic point of Circassian Fruit is-32℃ and Melting point of Circassian Fruit is -26℃ according to the physical meaning of the curvature of function.
