摘    要:果蔬中富含天然抗氧化活性物质。除维C外,植物多酚是一种含有多个酚羟基的化合物,广泛存在于植物的叶、木、皮、果内,植物中多酚的含量仅次于纤维素、半纤维素和木质素。随着现代分离技术的迅猛发展,以及对生物活性物质的生理活性、药学活性的研究与应用,植物多酚因其具有较强的抗氧化作用,以及明显的抑菌、抗癌、防衰老和抑制胆固醇上升等功效,使得多酚类物质在天然产物化学、生物化学、医药、食品、饲料及日用化妆品等领域成为研究热点,日益受到人们的关注。另外,黄酮类化合物广泛存在于植物体内,无不良反应,同时还有清除人体内自由基、抗老化、抗突变、调血脂、降血压等药理保健功能,也是一类极具开发前景的天然有机抗氧化剂。

Abstract:Fruits and vegetables are rich in natural antioxidant active substances.In addition to VC,plant polyphenols were compounds containing multiple phenolic hydroxyl groups,which were widely found in the leaves,wood,skin and fruit of plants.The polyphenol content in plants was second only to cellulose,hemicellulose and lignin.With the rapid development of modern separation technology and the research and application of physiological activity and pharmaceutically active of biologically active substances,plant polyphenols have strong anti-oxidation effects,as well as obvious antibacterial and anti-cancer effects.Anti-aging and inhibition of cholesterol,etc.,make polyphenols a hot spot in the fields of natural product chemistry,biochemistry,medicine,food,feed and daily cosmetics,and have attracted more and more attentions.In addition,flavonoids were widely present in plants without adverse reactions,and also have significant pharmacological health functions such as free radicals,anti-aging,anti-mutation,blood lipids,and blood pressure lowering in humans.Development of natural organic antioxidants in the future.
