摘    要:以7个品种山葡萄为试验材料,应用HPLC-MS/MS技术,分析不同品种山葡萄果皮和酒中非花色苷酚成分的差异,以期为山葡萄酒的加工及品种选育提供借鉴。结果表明,不同品种山葡萄果皮非花色苷酚质量分数和酒中非花色苷酚质量浓度及其组成比例不同,其组成具有品种特征,肉桂酸类和黄酮醇类是山葡萄果皮及酒非花色苷酚的主要化合物,左优红酒与之不同,以黄烷-3-醇类和肉桂酸类为主。果皮中共检测出18种非花色苷酚,其中左山一12种,左山二12种,左红一15种,左优红15种,双红13种,双优10种,双丰10种。酒中共检测出30种非花色苷酚,其中左山一21种,左山二19种,左红一20种,左优红25种,双红21种,双优17种,双丰20种。

Abstract:An experiment was conducted to study the difference in non-anthocyanin phenolic composition in peel and wine of seven varieties of Vitis amurensis Rupr.by means of HPLC-MS/MS techniques,with a view to provide references for wine processing and variety breeding of V.amurensis.Results show that the contents of non-anthocyanin phenolic compounds in the peel and the contents and composition in the wine of different varieties of V.amurensis are different,and their compositions exhibit various variety characters.Cinnamic acids and flavonols are the main non-anthocyanin phenolic compounds in the peel and wine,while flavan-3-ols and cinnamic acids are the main compounds in the wine of Zuoyouhong.A total of 18 kinds of non-anthocyanin phenolic compounds were detected from the peel,in which there are 12 kinds of compounds from Zuoshanyi,12 kinds from Zuoshaner,15 kinds from Zuohongyi,15 kinds from Zuoyouhong,13 kinds from Shuanghong,10 kinds from Shuangyou,and 10 kinds from Shuangfeng.A total of 30 kinds of non-anthocyanin phenolic compounds were detected from the wine,in which there are 21 kinds from Zuoshanyi,19 kinds from Zuoshaner,20 kinds from Zuohongyi,25 kinds from Zuoyouhong,21 kinds from Shuanghong,17 kinds from Shuangyou,and 20 kinds from Shuangfeng.
