摘 要: | 目的]研究科学的方法制作出的薏苡仁饮料的抗氧化活性.方法]以薏苡仁为主要原料研制饮料,通过测定饮料清除1,1-二苯基-2-三硝基苯肼(DPPH)自由基和超氧阴离子自由基(O2^-·)的能力对薏苡仁饮料的抗氧化能力进行评价.结果]试验表明,制得的薏苡仁饮料,1ml饮料清除DPPH自由基的能力相当于0.15 mg的抗坏血酸,对O2^-·清除率为28.6%.结论]薏苡仁饮料中的抗氧化物质具有一定的抗氧化活性,薏苡仁饮料是一种优质的保健饮料,对人体有一定的保健功能.

Abstract: | Objective] To study antioxidant activity of coix seed beverage produced by scientific method.Method] The beverage was made of coix seed as the main raw material,by measuring the capacity of beverage DPPH and superoxide anion scavenging,antioxidant capacity of coix seed beverage was evaluated.Result] The results showed that the ability of 1 ml beverage cleaning DPPH free radicals was equivalent to 0.15 mg of ascorbic acid,the clearance rate of O2^-· was 28.6%.Conclusion] Coix seed beverage has a certain antioxidant activity.Coix seed beverage is a kind of high-quality health drink,have certain health care function to the human body. |
