摘    要:氮是生态系统中重要的元素。人类是生态系统的重要消费者,以食物氮的形式消费后大部分以废弃物的形式排泄到环境中。随着经济的快速发展,人们收入的增加,食物消费逐渐丰富,对其氮足迹评价具有重要的意义。因此,本文对遵义市近16年氮消费足迹进行评价。结果表明:(1)遵义市氮消费足迹中城镇居民人均食物氮消费量在2119.68-3132.67 g间波动,平均值2629.37 g;农村居民食物氮消费足迹在4654.12-2962.12 g间波动,平均值3847.20 g。(2)在近16年粮食、猪肉、家禽、蔬菜、蛋及蛋制品、水产品、奶制品、水果和牛羊肉对城镇居民食物氮的平均贡献分别为36.96%、28.90%、10.62%、6.69%、4.73%、4.46%、3.09%、2.31%和2.26%。农村居民食物氮消费足迹中粮食的贡献65.81%、猪肉的贡献为24.21%、蔬菜的平均贡献为6.70%;水果、水产品、家禽和蛋及蛋制品0.28%-1.32%间波动。(3)遵义市城乡居民食物消费结构与推荐的我国膳食结构有较大的差距。在今后相当长一段时间内消费食物氮可能呈现增加趋势。

Analysis of nitrogen consumption footprint of urban and rural residents in Zunyi for 16 years
Abstract:Nitrogen is an important element in ecosystems. Humans are an important consumer of the ecosystem, and most of them are excreted in the form of waste after consumption in the form of food nitrogen.SWith the rapid development of economy and the increase of people"s income and food consumption, it is of great significance to evaluate the nitrogen footprint. With the rapid development of economy, people"s income increases, food consumption gradually rich, assessment of nitrogen footprint has an important role. Therefore, this paper evaluates the nitrogen consumption footprint of urban and rural residents in Zunyi in recent 16 years. The results showed that the urban residents average nitrogen consumption was 2629.37 g, fluctuating between 2119.68 and 3132.67 g in Zunyi City. To rural residents, food nitrogen fluctuated between 4654.12 and 2962.12 g, with an average value of 3847.20 g.SGrain contributes the most to the nitrogen footprint of urban residents by 36.96%, followed by pork and poultry with 28.90% and 10.62%. The average contribution was 6.69%, 4.73%, 4.46%, 3.09%, 2.31% and 2.26% by vegetables, eggs and egg products, aquatic products, dairy products, fruits and beef and mutton, respectively. The contribution of food to nitrogen consumption in rural households was 65.81%, the contribution of pork was 24.21%, the average contribution of vegetables was 6.70%, and the fluctuation of 0.28%-1.32% between fruits, aquatic products, poultry and eggs and egg products. There is a big gap between the food consumption structure of Zunyi residents, compared with the recommended dietary structure of China. Consumption of food nitrogen in the future is likely to increase over a long period of time.
