摘    要:目的]测定当地蔬菜中维生素C的含量。方法]以2%草酸、10%盐酸以及2%草酸和4%醋酸的混合液作为提取试剂,对4种蔬菜中维生素c进行提取。并用碘量法测定蔬菜中维生素c的含量。结果]试验结果表明,用碘量法测定蔬菜中维生素C的含量,其线性范围为5~100mg,平均回收率在102.91%。结论]该方法具有操作简单、快速、干扰少、灵敏度高等优点。

Abstract:Objective] The aim was to determine the content of vitamin C in local vegetable.Method] Taking 2% oxalic acid and 10% hydrochloric,mixture of 2% oxalic acid and 4% acetic acid as extraction agent,the content of vitamin C was determined by using iodometry.Result] The result showed that the linear range was from 5-100 mg and average recovery was 102.91% by using iodometry.Conclusion] The method has simple,rapid,high sensitivity and other advantages.
