塑料薄膜包装对花椰菜采后品质的影响

摘    要:比较了0.005mm、0.007mm、0.025mm聚乙烯(PE)膜,TY-1保鲜袋和CF-8硅窗保鲜袋包装对花椰菜冷藏期间品质的影响。经45d贮藏后结果表明:以上各处理的失重率分别为7.36%(P<0.01)、5.89%(P<0.01)、4.08%(P<0.01)、2.37%(P<0.01)、1.28%(P<0.01),而对照为31.84%;抗坏血酸含量(mg/100g)处理组分别为10.94(P>0.05)、52.07(P<0.01)、45.89(P<0.01)、42.23(P<0.01)和44.13(P<0.01),而对照为7.934mg/100g。试验组固形物(TSS)含量均比对照组降低了27%~44%。3种包膜处理的有机酸含量则比对照高出39%~58%,各处理间以0.07mmPE单花头包膜效果最好。

Abstract:A comparison was made on the quality of cauliflower orerwrapped with PE film in 0 005 mm, 0 007 mm and 0 025 mm thickness respectively, packaged with PE bag (TY 1) and si locon window PE bag (CF 8) during cold storage after 45 days at 0℃, weight cross of packaged samples are 7 36 % ( P< 0 01) respectively, however that of nonpackaged control io 31 84 %. Ascorbic auidcontent of packaged are 10 94 mg/100 g ( P> 0 05), 52 07 mg/100 g ( P< 0 01), 45 89 mg/100 g ( P< 0 01), 43 23 mg/100 g ( P< 0 01), and 44 13 mg/100 g ( P< 0 01) respectively. However the non packaged is 7 934 mg/100 g. Total soluble soils (TSS) of packed caulifcowers were 27 %~44 % lower compared to that of control, however organic acid content of the qrerwrapped ones wore 39 %~58 % higher. Cauliflo was overwrapped with 0 007 mm thickness PE film had the best quality among the treatments.
