N-3 polyunsaturated fatty acids (n-3 PUFAs), and especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), are essential compounds for human health. They have been proven to act positively on a panel of diseases and have interesting anti-oxidative, anti-inflammatory or anti-cancer properties. For these reasons, they are receiving more and more attention in recent years, especially future food or feed development. EPA and DHA come mainly from marine sources like fish or seaweed. Unfortunately, due to global warming, these compounds are becoming scarce for humans because of overfishing and stock reduction. Although increasing in recent years, aquaculture appears insufficient to meet the increasing requirements of these healthy molecules for humans. One alternative resides in the cultivation of microalgae, the initial producers of EPA and DHA. They are also rich in biochemicals with interesting properties. After defining macro and microalgae, this review synthesizes the current knowledge on n-3 PUFAs regarding health benefits and the challenges surrounding their supply within the environmental context. Microalgae n-3 PUFA production is examined and its synthesis pathways are discussed. Finally, the use of EPA and DHA in food and feed is investigated. This work aims to define better the issues surrounding n-3 PUFA production and supply and the potential of microalgae as a sustainable source of compounds to enhance the food and feed of the future.  相似文献

试验旨在研究日粮中添加不同水平的DHA/EPA对体外发酵和瘤胃液脂肪酸变化的影响。试验通过采用持续动态人工瘤胃装置,向发酵罐中添加EPA/DHA,连续培养7 d,分析脂肪酸组成的变化及发酵模式的改变。试验结果表明,日粮添加EPA/DHA使瘤胃液pH升高(与CK相比,Trt1和Trt2分别升高了0.11和0.35),Trt2 与CK相比差异极显著(P<0.01);与CK相比处理组3种主要挥发酸中乙酸浓度下降(P<0.01),丙酸浓度升高(P<0.01),丁酸浓度下降(P<0.01),总挥发性脂肪酸浓度与对照组相比略有下降但差异不显著(P>0.05);日粮添加EPA/DHA使瘤胃液脂肪酸成分发生改变。与CK相比处理组C18∶0含量显著下降(P<0.01); t 11 C18∶1含量显著升高(P<0.01);c-9,t-11 CLA含量显著升高(P<0.01),但是两组之间差异均不显著。因此,日粮中添加不同水平的EPA/DHA可以改变瘤胃发酵模式,影响不饱和脂肪酸瘤胃氢化过程,使脂肪酸组成发生改变,为采用新的营养措施调控反刍动物产品中CLA的含量提供理论依据。  相似文献

试验研究了猕猴桃酱加工中还原型Vc(AA)与氧化型Vc(DHA)的变化及其控制 ,结果表明 :猕猴桃微波热烫能够保持较高的AA和DHA保存率。猕猴桃经打浆后 ,AA的损失率为 2 8.11% ,DHA损失率为 19.0 3% ;在打浆工序中用单一抗氧化剂EDTA二钠、茶多酚、植酸处理 ,对AA和DHA的保持效果以 0 .0 2 %的茶多酚最好 ,0 .0 2 %EDTA二钠次之 ;0 .0 1%~ 0 .0 3%EDTA二钠和0 .0 2 %茶多酚的混合处理可以有效控制AA和DHA的损失。真空浓缩有利于保持猕猴桃酱AA和DHA ,其最优条件为 :真空度 93.32kPa、加糖量 1∶0 .9、温度 6 0℃。  相似文献

To evaluate the effects of dietary supplementation with a marine algae product (MA) containing a high level of docosahexaenoic acid (DHA) on heavy pig production performances (including meat and subcutaneous fat quality), a trial was conducted on sixty Landrace × Large White barrows with a starting average body weight (BW) of 118 kg. Pigs were allocated to four experimental groups: a control group (A) fed a maize/soybean diet and three treatment groups in which MA was added at 2.5 g kg− 1 over the last 8 weeks prior to slaughtering (group B) or at 5 and 2.5 g kg− 1 over the last 4 weeks prior to slaughtering (groups C and D, respectively). Vitamin E was added at 12.5 mg kg− 1 in the diets for groups B and D and at 25 mg kg− 1 in the diet of group C. The four diets were formulated so as to supply the same amount of nutrients, with exception of vitamin E. Pigs were fed at a rate of 9% of their metabolic BW (BW0.75) up to a maximum of 2.9 kg of dry matter per pig per day. Pigs were slaughtered at about 160 kg BW. The dietary treatment did not affect either the growth or slaughtering parameters of pigs. No significant differences were observed with respect to pH values, meat colour, loin composition and the iodine number of subcutaneous fat. Pigs on MA diets showed a significant (P < 0.01) improvement in DHA levels both in loin and in subcutaneous fat. No significant differences in relative fatty acid composition were observed between pigs receiving the MA supplement at the lower level (2.5 g kg− 1) over an 8-week period (group B) and pigs receiving the higher MA supplement (5.0 g kg− 1) over a 4-week period prior to slaughter (group C).  相似文献

This study represents a first report on the proximate composition and fatty acid profile of Lagocephalus sceleratus from the Mediterranean Sea as well as seasonal changes and sexual differences. Significant variations in the proximate composition were observed during the months of the study (p < 0.05). The highest moisture, fat, protein, and ash contents were found to be 78.47, 0.33, 21.62, and 1.63%, respectively. Total saturated and monounsaturated fatty acid values were similar throughout the year despite individual variations of 24.22–29.46 and 7.87–13.94%, respectively. However, significant variations were observed in total polyunsaturated fatty acids as well as significant differences between sexes (p < 0.05) with some exceptions. The major fatty acid was found as docosahexaenoic acid (DHA), between 24.17 and 32.65%. Due to the low fat content of this species, the highest eicosapentaenoic acid (EPA) + DHA values were calculated as 80.93 mg/100 g of edible muscle. The results indicated that this species contains high nutritional properties in terms of protein content and fatty acid values.  相似文献

ABSTRACT

The present study examined whether bioactive peptides and omega-3 fatty acids-containing phopholipids could be recovered from squid processing by-product (SPB) hydrolysate. The hydrolysate was produced at 55°C for varying times with endogenous proteases and centrifuged to yield peptides-containing supernatant and phospholipids-containing precipitate. The supernatant showed angiotensin I-converting enzyme (ACE) inhibitory activity with half maximal inhibitory concentration (IC50) values decreasing with hydrolysis time from 2.11 mg (0 h) to 1.71 mg (1 h), 1.38 mg (1.5 h), and 1.34 mg (2 h). Two-hour squid hydrolysate was further fractionated to isolate the most active fraction whose molecular weight was found to be below 10 kDa with IC50 of 0.32 mg. The phospholipids-containing precipitate (45.6 g/100 g oil) was analyzed for a fatty acid profile, with the levels of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) being 16.86 and 29.24 g/100 g oil, respectively. The ACE inhibition by hydrolysate peptides and omega-3 fatty acid recovery support the nutraceutical potential of the SPB hydrolysate.  相似文献

[目的]研究C/N比对Schizochytriumsp.JN-3发酵产DHA的影响,并经中试放大验证。[方法]分批发酵探求初始C/N比对Schizochytriumsp.JN-3发酵产DHA的影响,并进行200L中试放大考察该菌的工业发酵潜力。[结果]生物量和总脂含量在碳氮比为10时达到最大值,分别为31.8和20.1g/L,DHA含量在碳氮比为20时达到最高,为46.9%。200L中试放大后生物量为30.2g/L,总油脂含量18.4g/L,占细胞干重的63.2%,DHA含量为7.4g/L,占总油脂含量的40.2%。[结论]Schizochytriumsp.JN-3具有较好的工业化潜力。  相似文献

为研究饲料DHA/EPA值对星斑川鲽幼鱼生长、体组成和血液生理指标的影响,实验配制等氮、等能的5种不同DHA/EPA值(0.64、0.97、1.18、1.59和1.91)的饲料,每个比值设3个重复,饲养周期56 d。结果显示:(1)随着饲料DHA/EPA值的升高,星斑川鲽幼鱼增重率、饲料效率、蛋白质效率均呈先上升后下降的趋势(P0.05)。当饲料DHA/EPA值为0.97~1.59时实验鱼增重最快,饲料效率最高。蛋白质效率则在DHA/EPA值为0.97~1.18时达到最高。蛋白质沉积率(protein retention efficiency,PRE)与饲料DHA/EPA值呈显著二次回归关系(y=-1.589 5x2+2.858 3x+45.184;R2=0.910 8,x=饲料DHA/EPA值,y=PRE),当饲料DHA/EPA值大于0.90时呈下降趋势。肝体比呈先下降后小幅回升的趋势(P0.05),在饲料DHA/EPA值为1.18时达到最低,为2.85%,脾脏指数呈显著上升趋势(P0.05),于饲料DHA/EPA值为1.59组最高(0.12%);(2)肝脏粗脂肪含量随饲料DHA/EPA值的增加呈明显下降趋势(P0.05),且在饲料DHA/EPA值为1.18时降到最低,为8.60%,而后又显著上升,但仍显著低于饲料DHA/EPA值为0.64时的水平(13.44%)。二次回归分析(y=5.199 6x2-15.652x+20.866;R2=0.634 8,x=饲料DHA/EPA值,y=肝脏脂肪含量)显示,当饲料中DHA/EPA值为1.51时肝脏脂肪含量最低。脂肪酸分析结果显示,随着饲料DHA/EPA值的升高,肝脏及肌肉中EPA含量均呈线性下降趋势(P0.05),而DHA含量及DHA/EPA均呈直线上升趋势(P0.05)。肝脏和肌肉组织n-3 HUFA总量不受饲料处理的影响(P0.05);(3)血清总蛋白、球蛋白含量在饲料DHA/EPA值为1.59时显著高于其他各组(P0.05),白蛋白在饲料DHA/EPA值为0.64、0.97和1.59水平最高。溶菌酶(LSZ)活性在饲料DHA/EPA值为1.18时达到峰值(P0.05),为2.76μg/mL。谷丙转氨酶(ALT)活性在饲料DHA/EPA值1.91时无显著变化,而当饲料DHA/EPA1.18时,血清谷草转氨酶(AST)活性提高了65%左右。研究表明,在本实验条件下,以增重率为参考指标,采用二次回归(y=-31.066x2+77.26x+76.541;R2=0.957 4,x=饲料DHA/EPA值,y=增重率)分析可得,当饲料脂肪水平为8.3%,n-3 HUFA含量为0.74%时,星斑川鲽幼鱼[初始体质量(31.70±0.12)g]对DHA/EPA值的最适需要量应为1.24。  相似文献
