ABSTRACT: The present work evaluates the effect of vacuum treatment on smoke penetration into boiled skipjack loins for the production of smoke-dried skipjack. Using a vacuum freeze-dryer, the boiled skipjack loins were vacuumed immediately after being boiled at a pressure of 400 Pa for 30 min in order to reduce the lipid and water contents. The vacuumed boiled meats were then smoked and dried at 90 ± 10°C for 3 h a day for 6 days in a metal kiln (internal diameter 24 cm × 24 cm × 70 cm height), using an electric heater (1.2 kW) to heat and generate smoke from cherry tree wood chips. Also, non-vacuumed boiled meats were smoked in the same manner as a control. The vacuum treatment reduced the lipid and water contents by as much as 0.6% and 2.7% on the wet weight basis, respectively. Histological observations showed many clearances among the muscle fibers of the vacuumed boiled meats. The content of phenols that had penetrated the vacuumed boiled meats during the smoke drying procedure was significantly larger ( P < 0.05) than that of the non-vacuumed boiled meats. Accordingly, the vacuum treatment accelerated the penetration of phenols into the boiled meats and enhanced the function of antioxidant substances, which improved the quality of the smoke-dried skipjack.  相似文献

ABSTRACT:   Lipid class and fatty acid composition of phospholipids from the gonads of skipjack tuna were examined to evaluate effective utilization of the processing of by-products. The predominant phospholipids in the ovaries were phosphatidylcholine (PC; 47.9%), phosphatidylethanolamine (PE; 19.3%) and lyso-phosphatidylcholine (LPC; 19.1%). In contrast, those in the testes were PC (40.1%), PE (29.3%) and phosphatidylserine (PS; 9.6%). The percentage of docosahexaenoic acid (DHA) was markedly high at more than 50% in LPC of the ovaries, and PE and PS of the testes were also high. The percentages of DHA at sn-position 2 of the predominant phospholipids, except for PC in the testes, were more than 60%, in particular PE in the testes was remarkably high at 81.9%. After storage for 2 days at 5°C, the LPC content in the ovaries increased twofold and the DHA level of LPC was the same as before, though the contents of other phospholipids decreased.  相似文献

ABSTRACT:   The aim of this study was to develop a practical preventive method for color deterioration of sliced or filleted yellowtail muscle, especially of dark muscle, during frozen storage and post thawing. When the sliced meats were packaged in a vacuum with low oxygen permeable flexible films and then stored frozen below −40°C, no significant discoloration or browning of dark muscle was observed for 9 months or more. For higher temperature storage at −20°C or −30°C, nitrogen gas substituted packaging was a useful practical method for storing sliced meats for 6 weeks. In order to prevent color deterioration of sliced meats after thawing and subsequent storage at 0°C, the efficacy of materials of packaging was investigated. The most desirable result was obtained by using a film with oxygen permeability of 50–90 cm3/m2 per 24 h.  相似文献

Skipjack tuna ( Katsuwonus pelamis ) contributes ≈70% of the total tuna catch in the Pacific Ocean. This species occurs in the upper mixed-layer throughout the equatorial region, but the largest catches are taken from the warmpool in the western equatorial Pacific. Analysis of catch and effort data for US purse seine fisheries in the western Pacific has demonstrated that one of the most successful fishing grounds is located in the vicinity of a convergence zone between the warm (>28–29°C) low-salinity water of the warmpool and the cold saline water of equatorial upwelling in the central Pacific (Lehodey et al ., 1997). This zone of convergence, identified by a well-marked salinity front and approximated by the 28.5°C isotherm, oscillates zonally over several thousands of km in correlation with the El Niño–Southern Oscillation. The present study focuses on the prediction of skipjack tuna forage that is expected to be a major factor in explaining the basin-scale distribution of the stock. It could also explain the close relation between displacements of skipjack tuna and the convergence zone on the eastern edge of the warmpool. A simple bio-geochemical model was coupled with a general circulation model, allowing reasonable predictions of new primary production in the equatorial Pacific from mid-1992 to mid-1995. The biological transfer of this production toward tuna forage was simply parameterized according to the food chain length and redistributed by the currents using the circulation model. Tuna forage accumulated in the convergence zone of the horizontal currents, which corresponds to the warmpool/equatorial upwelling boundary. Predicted forage maxima corresponded well with high catch rates.  相似文献

ABSTRACT: The feeding habits of skipjack tuna Katsuwonus pelamis juveniles (8.5–66.8 mm standard length) were examined, collected from the tropical western Pacific in October to December 1994, and their habits were compared with those of the other tuna Thunnus spp. juveniles (9.8–55.3 mm standard length). The indices, frequency of occurrence of each food item in the total number of stomachs examined (% F ), percentage of number of each food item to the total number of all food items identified (% N ), percentage of wet weight of each food item to the total wet weight of all food items identified (% W ), and relative importance of each food item ( IRI ) were estimated in the north equatorial current (NEC) and the north equatorial countercurrent (NECC) areas. The most dominant prey item of skipjack juveniles in the two areas was fish larvae. Other major prey items in the NEC area were Euphausiacea, Amphipoda, and Copepoda; whereas those in the NECC area were Copepoda, Cephalopoda, Euphausiacea, and Amphipoda. In the other tuna juveniles, the IRI of fish larvae in the two areas was remarkably high. Other prey, Euphausiacea and Cephalopoda in the NEC area only and Cephalopoda in the NECC area, were also found. These results indicate that the skipjack juvenile is primarily a piscivorous feeder although they also depend on various other prey organisms, whereas the other tuna juveniles are stronger piscivorous feeders.  相似文献

The phospholipid class composition, fatty acid composition and phospholipase A1 (PLA1) activity from the ovaries of skipjack tuna were compared with those of six other species of marine fish. In the skipjack ovaries, the lysophosphatidylcholine (LPC) proportion for the phospholipid, the docosahexaenoic acid (DHA) percentage for the total fatty acids of the phospholipids and the PLA1 activity of the crude enzyme were the highest among those of the seven species. The optimum pH and temperature for the PLA1 activity of the crude enzyme from the skipjack ovaries were in the range of pH 6–7 and 20–30°C, respectively, and calcium ions were not required. As a substrate, phosphatidylcholine was more easily hydrolyzed than phosphatidylethanolamine by this enzyme, and the plasmalogen-type phospholipid was much lower than the acyl-type phospholipid. After a 6-h hydrolysis reaction of the purified phospholipid extracted from the mixed ovaries of skipjack and yellowfin tuna by this enzyme, the LPC ratio of the phospholipid increased from 20 to 72.6% and the percentage of DHA for the total fatty acids of the phospholipid also increased. Thus, skipjack ovaries might possibly be used as a source of PLA1.  相似文献

Skipjack tuna habitat in the western North Pacific was studied from satellite remotely sensed environment and catch data, using generalized additive models and geographic information systems. Weekly resolved remotely sensed sea surface temperature, surface chlorophyll, sea surface height anomalies and eddy kinetic energy data were used for the year 2004. Fifteen generalized additive models were constructed with skipjack catch per unit effort as a response variable, and sea surface temperature, sea surface height anomalies and eddy kinetic energy as model covariates to assess the effect of environment on catch per unit effort (skipjack tuna abundance). Model selection was based on significance of model terms, reduction in Akaike’s Information Criterion, and increase in cumulative deviance explained. The model selected was used to predict skipjack tuna catch per unit effort using monthly resolved environmental data for assessing model performance and to visualize the basin scale distribution of skipjack tuna habitat. Predicted values were validated using a linear model. Based on the four‐parameter model, skipjack tuna habitat selection was significantly (P < 0.01) influenced by sea surface temperatures ranging from 20.5 to 26°C, relatively oligotrophic waters (surface chlorophyll 0.08–0.18, 0.22–0.27 and 0.3–0.37 mg m?3), zero to positive anomalies (surface height anomalies 0–50 cm), and low to moderate eddy kinetic energy (0–200 and 700–2500 cm2 s–2). Predicted catch per unit effort showed a trend consistent with the north–south migration of skipjack tuna. Validation of predicted catch per unit effort with that observed, pooled monthly, was significant (P < 0.01, r2 = 0.64). Sea surface temperature explained the highest deviance in generalized additive models and was therefore considered the best habitat predictor.  相似文献

中西太平洋的金枪鱼围网渔业目前的年产量约在100×104t左右,其中鲣鱼占有很重要的地位。本文通过对20世纪70年代以来围网捕获的鲣鱼渔获数据进行时间序列以及空间位置变化等时空分析,试图找出其变化规律以及趋势。结果表明,从20世纪70年代以来,随着渔船数的增加,中西太平洋的围网捕获的鲣鱼渔获量分布,从太平洋岛屿近海逐渐向太平洋热带中部海域扩展。渔获量经度重心随着中西太平洋金枪鱼围网渔业的发展有向东移动的趋势,70年代在128°E附近变化,80年代在144°E左右,90年代在153°E左右,近年在158°E左右变化。而鲣鱼渔获量纬度重心位于赤道区域,70年代在2°N附近,80年代在1°30′S左右,90年代在2°50′S左右,近年在2°55′S左右变化。经纬度5°×5°单个小区范围内10年内的最高总产量则从70年代的11×104t,增加到90年代超过了69×104t。渔获量空间分布除了随着渔业发展向外海向赤道以南扩展以外,还受南方涛动(ENSO)现象的明显影响,一般来说在相邻的数年中渔获量经度中心在厄尔尼诺年比较偏东,在拉尼娜年比较偏西。  相似文献

ABSTRACT: Attempts have been made to assess the end-point temperature (EPT) of heated fish and shellfish meats by using the coagulation method together with sodium dodecylsulfate polyacrylamide gel electrophoresis (SDS-PAGE) analysis and enzyme activity determination. Unfrozen and frozen fish and shellfish meats were heat-treated at different selected temperatures with 0, 15 or 30 min holding times. Proteins were extracted with NaCl solution. The coagulation method was able to determine EPT of heated fish and shellfish meats between 60 and 67°C. SDS-PAGE patterns of the filtrates from heated meats were closely related to the results of the coagulation method and enzyme activity determination. Two proteins responsible for producing coagulum of fish meat extracts seem to be lactate dehydrogenase (LDH) and glyceraldehyde phosphate dehydrogenase (GAPDH). End-point temperatures determined by these methods were not significantly different between unfrozen and frozen samples. On the contrary, a highly thermostable protein with a molecular mass of 35 kDa was detected in heated shellfish meats up to 108°C. In scallop adductor muscle, this highly thermostable protein was found to be the tropomyosin subunit from its amino acid composition and their partial sequences. Tropomyosin could be used as an EPT indicator up to 108°C for heated shellfish meats.  相似文献

Skipjack tuna (Katsuwonus pelamis) ranks third among marine resources that sustain global fisheries. This study delimits the spatiotemporal habitat of the species in the south‐western Atlantic Ocean, based on operational oceanography. We used generalized additive models (GAMs) and catch data from six pole‐and‐line fishing vessels operating during 2014 and 2015 fishing seasons to assess the effect of environmental variables on catch. We also analysed Modis sensor images of sea surface temperature (SST) and surface chlorophyll‐α concentration (SCC) to describe fishing ground characteristics in time and space. Catch was positively related to thermocline depth (24–45 m), SST (22–24.5°C), SCC (0.08–0.14 mg/m³) and salinity (34.9–35.8). Through SST images, we identified that thermal fronts were the main surface feature associated with a higher probability to find skipjack. Also, we state that skipjack fishery is tightly related to shelf break because bottom topography drives the position of fronts in this area. Ocean colour fronts and plankton enrichment were important proxies, accessible through SCC, used to delineate skipjack fishing grounds. Catch per unit effort (CPUE) was higher towards summer (median 14 t/fishing day) due to the oceanographic characteristics of the southern region. High productivity in this sector of the Brazilian coast defines the main skipjack feeding areas and, as a consequence, the greatest abundance and availability for fishing.  相似文献

The present study investigated the effects of lipid oxidation on quality deterioration in the ordinary and dark muscles of skipjack tuna Katuwonus pelamis during the early stages of ice storage for 72 h. The lipid hydroperoxide content of the dark muscle was significantly higher (P < 0.01) than that of the ordinary muscle throughout 72 h of ice storage. The metmyoglobin content of the ordinary muscle gradually increased, and was accompanied with darkening in the fish meat color. On the other hand, the addition of sodium ascorbate or 6-hydroxy-2,5,7,8-tetramethylchroman-2-carboxylic acid (Trolox®) to the ordinary muscle of skipjack tuna significantly inhibited the formation of lipid hydroperoxide as well as metmyoglobin formation. Thus, a decrease in α-tocopherol content in the ordinary muscle with antioxidant addition was not observed during ice storage period. In conclusion, the rate of lipid oxidation of skipjack tuna ordinary muscle is closely related to metmyoglobin formation, and the addition of antioxidants to fish meat is effective at inhibiting lipid oxidation as well as myoglobin oxidation in post-mortem meat.  相似文献

The spatio‐temporal distribution of tuna fishing effort has been related to oceanographic circulation and features in several seas of the world. Understanding the relationship between environmental variables and fishery resource dynamics is important for management decisions and to improve fishery yields. The relationship between sea temperature variability and the pole‐and‐line skipjack tuna (Katsuwonus pelamis) fishery in the south‐western Atlantic Ocean was investigated in this work. Data from logbooks, satellite images (sea surface temperature), and oceanographic surveys were used in the analyses. Skipjack are caught in warm tropical waters of the Brazil Current (BC). The north–south displacement of fishing effort was strongly associated to seasonal variation of the surface temperature, which was coupled to the tropical BC flow. Oceanographic fronts from autumn to spring and a shallow thermocline in summer probably induces the aggregation of skipjack schools over the shelfbreak, favouring fishing operations. Hypotheses are proposed to explain the relationship between peaks of fishing events and the presence of topographic peculiarities of the shelfbreak.  相似文献

中西太平洋是全球金枪鱼围网的主要海域,鲣鱼(Katsuwonus pelamis)是金枪鱼围网的主要作业对象。本研究利用1983~2007年中西太平洋金枪鱼围网渔获物数据,结合海洋表层温度(SST)数据,分析中西太平洋鲣鱼资源丰度在时间序列和空间位置上的分布规律。研究表明,1983~2002年,各年平均CPUE在时间序列上呈一定的上升趋势,1983~2002年,平均SST在一定范围内上下波动,平均CPUE和平均SST无显著相关性;2003~2007年,平均CPUE和平均SST均呈较大幅度上升,两者呈显著相关。从空间位置分析,鲣鱼资源量集中出现在SST为28~30℃之间的海域,在5°N和10°S附近海域CPUE反映的总体资源量较高,而在0°和5°S的资源量较低。鲣鱼资源量较大区域分布在冷暖水团交汇处。  相似文献

We evaluated the behavior of skipjack (Katsuwonus pelamis), yellowfin (Thunnus albacares) and bigeye tuna (T. obesus) associated with drifting fish aggregating devices (FADs) in the equatorial central Pacific Ocean. A total of 30 skipjack [34.5–65.0 cm in fork length (FL)], 43 yellowfin (31.6–93.5 cm FL) and 32 bigeye tuna (33.5–85.5 cm FL) were tagged with coded transmitters and released near two drifting FADs. At one of the two FADs, we successfully monitored the behavior of all three species simultaneously. Several individuals remained around the same FAD for 10 or more days. Occasional excursions from the FAD were observed for all three species, some of which occurred concurrently for multiple individuals. The detection rate was higher during the daytime than the nighttime for all the species, and the detection rate for bigeye tuna was higher than for yellowfin or skipjack tuna. The swimming depth was deeper during the daytime than nighttime for all species. The fish usually remained shallower than 100 m, but occasionally dived to around 150 m or deeper, most often for bigeye and yellowfin tuna during the daytime. The swimming depth for skipjack tuna was shallower than that for bigeye and yellowfin tuna, although the difference was not large, and is probably not sufficient to allow the selective harvest of skipjack and yellowfin tuna by the purse seine fishery. From the detection rate of the signals, bigeye tuna is considered to be more vulnerable to the FAD sets than yellowfin and skipjack tuna.  相似文献

Several oceanographic studies have associated tuna fisheries to sea surface temperature (SST) fields, although catch per unit of effort (CPUE) has not shown a clear relationship with SST. However, most results concerned species that occur deep in the water column. In this paper, we present a study on the relationship between SST and CPUE for the skipjack tuna fisheries off the southern Brazilian coast, which take place at the sea surface. We use historical data from the Japanese fleet, which operated in the area from July 1982 to June 1992. Fishing sets occurred only in areas where SST ranged from 17°C to 30°C. Frequency of occurrence vs. SST showed a Gaussian distribution, with highest CPUEs in waters of SST 22°-26.5°C. The relationship between CPUE (or fishing set occurrence) and SST varied seasonally. Largest CPUEs occurred in summer, independently of SST. Therefore, temperature alone could not be used as a determinant of CPUE, suggesting that seasonal variability of other environmental parameters has a stronger effect on the CPUE than does SST. However, when the seasonal cycle was excluded from the data sets, a relationship between the interannual variability of SST and CPUE became apparent. Cross-correlation analysis between CPUE and SST has shown that oscillations in CPUE anomalies precede oscillations in SST anomalies by a month, but the mechanism relating them in this way is unknown.  相似文献

We are developing a spatial, multigear, multispecies population dynamics simulation model for tropical tunas in the Pacific Ocean. The model is age-structured to account for growth and gear selectivity. It includes a tuna movement model based on a diffusion–advection equation in which the advective term is proportional to the gradient of a habitat index. The monthly geographical distribution of recruitment is defined by assuming that spawning occurs in areas where sea surface temperature is above 25°C. During the first 3 months of their life, simulated tunas are transported by oceanic currents, after which movement is conditioned by gradients in the habitat index. Independent estimates of natural mortality rates and population size from large-scale tagging experiments carried out by the Secretariat of the Pacific Community are used in the simulations. The habitat index consists of components due to forage density and sea surface temperature, both of which are suspected to play major roles in determining tuna distribution. Because direct observations of forage are not available on a basin scale, we developed a submodel to simulate the surface tuna forage production (Lehodey et al ., 1998). At present, only skipjack ( Katsuwonus pelamis ; a surface tuna species caught by purse seine and by pole-and-line) is considered, at a 1°-square resolution and on a monthly climatological time series. Despite the simplicity of the model and the limitations of the data used, the simulation model is able to predict a distribution of skipjack catch rates, of the different fleets involved in the fishery, that is fairly consistent with observations.  相似文献

ABSTRACT:   The effect of storage temperature (0, 5, 10, and 15°C) and killing procedure (instant, struggled, temperature shocked, and spinal cord destruction killing) on post-mortem changes in the muscle of the horse mackerel caught near Nagasaki, Japan, was investigated. Temporal changes in adenosine triphosphate (ATP), inosine monophosphate (IMP), and lactic acid concentrations were slowest at 10°C storage temperature. The increase in K -values was slower at 10°C and below than at 15°C storage temperature. In addition, 10°C storage temperature was most suitable for maintaining a constant breaking strength value of the muscle. Regarding the effect of killing procedure, temporal changes in ATP, IMP, and lactic acid concentrations were slowest when killed by spinal cord destruction. The increase in K -value and the decrease in breaking strength were also slowest in the spinal cord destruction group. From these results, it was considered that storage at 10°C temperature and spinal cord destruction killing procedure were most effective in delaying post-mortem change in the horse mackerel.  相似文献

Stomach contents of yellowfin (Thunnus albacares) and skipjack (Katsuwonus pelamis) tuna caught by trolling and purse seining in the tropical western Indian Ocean, together with those of the prey-fish found in their stomachs, have been analysed. Epipelagic fish are the main prey of these tunas, whereas no vertically migrating fish, which inhabit subsurface layers at night, have been found in their stomachs. These tunas are thus considered day-feeders. Purse-seine-caught tunas, which belong to large schools, have a much higher number of prey-fish in their stomachs than tunas caught by trolling on small schools. Similarly, prey-fish from purse-seine tunas have a much higher number of plank-tonic prey in their stomachs than those from troll-caught tunas. Therefore, these tunas adopt a wandering strategy in small schools when food resources are scarce and form large schools when they are abundant. The planktonic organisms found in the stomachs of prey-fish are described by taxa and sizes; they represent the fraction of the planktonic biomass actually supporting the stock of tuna. Size ratios between the three links tuna-prey-fish-plankton are very high, suggesting that these tunas benefit from a short food chain which is probably efficient from the energetic point of view.  相似文献

Abstract. This paper reports a series of trials on the cryopreservation of Oreochromis niloticus (L.) spermatozoa, using methanol as the cryoprotectant.
Immotile milt samples pooled from four males were diluted with two diluents, each being subjected to equilibration periods of 15, 30, 45, 60 and 90 min. In addition, samples of fresh pooled milt were kept for 0, 2, 4, 6 and 8 days at 4°C prior to cryopreservation. Diluted samples were stored in 250-μl plastic straws and cooled to -50°C at 5°C/min and held under liquid nitrogen for between 1 and 3 weeks. Viability of post-thawed spermatozoa was estimated from video recordings of samples activated under a microscope and from fertilization rates of eggs.
The type of diluent and its interaction with equilibration time significantly (P< 0.05) influenced the post-thaw motility of spermatozoa. Spermatozoa stored for up to 6 days prior to cryopreservation were as fertile as freshly frozen spermatozoa and yielded 60.6 (±SE, 8.4) developing embryos.  相似文献

中西太平洋海域10°N~10°S是我国金枪鱼围网渔业的主要生产海域,本研究采用点格局分析方法对自由群鲣(Katsuwonus pelamis)和随附群鲣的空间格局特征进行分析。根据我国渔业公司2015年23艘围网渔船的渔捞日志数据,采用点格局分析方法的单变量函数配对相关函数g(r)、交叉相关函数J12(r)和标记相关函数kmm(r)对不同集群(自由群和随附群)的鲣资源的空间分布格局及竞争关系进行了研究。发现围网自由群和随附群点事件的空间分布上都是非均质的,表现为聚集性;自由群在1.9°~2.3°尺度下表现出随机分布格局。表明热带太平洋鲣在生命史的两个不同阶段,空间格局为相互吸引的集聚式分布特征,其原因在于中西太平洋鲣喜好生活于高温低盐的暖池东侧水域,且有永久收敛的表层水团和盐度锋面能够提供鲣群所需的生物饵料;出现随机分布的原因为这个海域的饵料生物分布的斑块状和不可持续性,鲣高度洄游特性能够保证其跟随饵料迁徙。在0°~0.35°尺度下,自由群和随附群的关系为竞争关系;当空间尺度超过0.35°后,随着尺度增大,两者关系为随机性关系。在随附群在空间尺度超过0.8°后,CPUE之间表现为正相关,有相对较弱的聚集热点和冷点区域,其他各尺度上CPUE为随机关系;自由群的CPUE在各尺度上都表现为随机关系。总之,自由群鲣和随附群鲣的空间格局在小尺度下表现为排斥竞争关系,在较大尺度下为独立的随机关系,其竞争关系主要为食物的有限性导致。  相似文献
