冷冻面团品质劣变及改良研究进展   总被引:1,自引:1,他引:0  
冷冻面团技术实现了面团制作与烘焙的分离,具有标准化、方便化等优势,因此在世界范围得到快速发展。然而,受冰晶形成和冻藏作用的影响,冷冻面团仍然存在品质容易劣变和缺乏高效改良方法等问题。该研究主要从冷冻面团的发酵特性、面团主要组分如面筋蛋白和淀粉的特性、面团结构、冷冻面团的流变学特性等方面对冷冻面团的劣变现象与机理进行综述,以及改进冷冻工艺,筛选抗冻酵母,添加酶制剂、抗冻剂、乳化剂等改良方法进行总结。通过对冷冻面团发酵特性、面筋蛋白结构、面团水合状态等劣变关键因素的分析,为冷冻面团的抗冻研究提供参考,该研究旨在为冷冻面团品质劣变的抑制与高效改良技术的开发提供理论基础与实践参考。  相似文献

酵母对冷冻面团发酵特性及馒头品质的影响   总被引:3,自引:2,他引:1  
为了找出使冷冻面团和馒头综合品质较稳定的酵母产品,采用动态流变仪和F3发酵仪对低糖型国光高活性干酵母(1#)、英联马利苹果即发高活性干酵母(2#)、品一高活性干酵母(3#)、高糖型马利即发高活性干酵母(4#)、高糖型丹宝利即发高活性干酵母(5#)和耐高糖安琪高活性干酵母(6#)冷冻面团冻藏35 d过程中的流变学特性和发酵特性进行研究,并对由此面团制作馒头的质构、色泽、比容和感官品质进行分析。结果表明:不同市售酵母冷冻面团在不同冻藏时间下的流变学特性和发酵特性不同。不同酵母冷冻面团制作馒头后硬度、弹性、回复性、咀嚼性、亮度、红度、黄度、比容和感官品质分别差异显著,不同冻藏时间下同种酵母冷冻面团馒头的质构、色泽、比容和感官品质也分别差异显著。6种酵母在冻藏35 d内,1#和2#酵母冷冻面团的发酵活力始终较大,6#酵母冷冻面团的发酵特性参数始终最稳定;1#、5#和6#酵母冷冻面团的弹性模量与黏性模量较大,其中面团流变学特性最稳定的是5#;1#和6#酵母冷冻面团制作馒头的感官品质较好的同时,比容较高,色泽品质较好,质构品质也较好。因此整个冻藏期间,使冷冻面团和馒头综合品质较好较稳定的是1#,其次是6#。研究结果为冷冻面团馒头工业化生产中酵母的选择提供参考。  相似文献

为了提高麦麸的附加值、馒头的品质以及增强馒头的营养价值,该试验以小麦粉为原料,采用2个分子量的麦麸酚基木聚糖(820、581 kD),研究不同添加量(0.25%、0.5%、1.0%、2.0%)对发酵面团特性以及馒头品质的影响。结果表明:随着麦麸酚基木聚糖添加量的增加,发酵面团的弹性模量、质子密度A22先增加后下降,黏性模量、质子密度A23增加,弛豫时间T22下降;馒头的亮度下降,红度和黄度增加,比容、黏聚性、回复性先增加后下降,硬度、咀嚼性先下降后上升,黏附性下降,馒头的感官得分先上升后下降。高分子量的麦麸酚基木聚糖,其发酵面团的弹性模量和黏性模量变幅较大,弛豫时间T22、T23较大、质子密度A21较小,低分子量的麦麸酚基木聚糖,其馒头比容和弹性较大,但馒头硬度和咀嚼性相对也较大。麦麸酚基木聚糖添加量在0.5%时,对发酵面团以及馒头品质改善效果最好。添加量在1.0%内,发酵面团特性以及馒头品质均可接受。高分子量的酚基木聚糖对发酵面团以及馒头品质改善效果高于低分子量的酚基木聚糖。研究结果为麦麸酚基木聚糖广泛应用于馒头中,提高馒头品质及营养价值提供理论依据。  相似文献

为了探究酶制剂对非发酵面团在冻融循环后的品质的影响,该文比较了2种酶制剂转谷氨酰胺酶(TGase)与木聚糖酶(xylanase)对非发酵面团冻融品质的改良效果。结果表明,与对照组相比,添加转谷氨酰胺酶和木聚糖酶均能改变冻融后面团蛋白各组分的含量。添加转谷氨酰胺酶使醇溶蛋白以及谷蛋白含量显著下降(P0.05)、谷蛋白大聚合体含量有所上升。添加木聚糖酶则使醇溶蛋白含量上升,使谷蛋白含量显著降低(P0.05)。转谷氨酰胺酶对面团中戊聚糖含量影响不显著(P0.05),而添加木聚糖酶使面团中可溶性戊聚糖含量显著上升(P0.05)。转谷氨酰胺酶的添加加速了冻融循环后非发酵面团的失水,木聚糖酶则显著降低了其失水率(P0.05)。除在10 g/kg转谷氨酰胺酶显著降至1.32 ms外,弛豫时间T2(1)基本维持在1.75 ms,而弛豫时间T2(2)均有所减小;添加转谷氨酰胺酶后,深层结合水相对含量呈逐渐上升趋势;而木聚糖酶则反之。木聚糖酶使冻融面团强韧性与对照组相比显著增强(P0.05),剪切力小幅下降,硬度显著下降(P0.05);与转谷氨酰胺酶相比,木聚糖酶更能缓解冻融面团的质构劣变;转谷氨酰胺酶改善冻融熟面坯的黏性、弹性与内聚性,木聚糖酶则改善"硬度上升,弹性下降"的劣变现象。在改善冻融面团流变特性方面,转谷氨酰胺酶效果更为显著(P0.05)。因此,添加转谷氨酰胺酶与木聚糖酶均能在一定程度上改善冷冻非发酵面团在冻融条件下的品质劣变,但它们的作用方面有所差异。研究结果为两者能够在冷冻非发酵面制品中被广泛地应用提供理论基础。  相似文献

为了探讨全燕麦粉面包、馒头加工品质及燕麦粉冷冻面团品质特性,以燕麦全粉为原料,研究了添加沙蒿籽和谷朊粉对燕麦全粉食品(含冷冻面团食品)加工品质改良效果。试验结果表明,谷朊粉对面包制作影响较大;沙蒿籽粉对馒头制作影响较大;沙蒿籽粉和谷朊粉共同使用的效果优于两者单独使用;加入2.5%沙蒿籽粉和8%谷朊粉对燕麦全粉面包和馒头品质改善效果最好。对冷冻面团加工而言,随着冷冻时间的延长面团品质不断下降,冻藏4 d后燕麦全粉冷冻面团面包、馒头品质显著降低。  相似文献

为促进大豆副产物资源利用,开发新型营养面制品,本试验以豆渣为原料,利用柠檬明串珠菌E12为发酵剂制作豆渣酸面团,探究不同豆渣酸面团添加量(0%、20%、30%和40%)对馒头面团(对应编号分别为S0、S20、S30和S40)发酵活力、动态流变特性、抗氧化特性以及膳食纤维含量的影响,并研究豆渣酸面团馒头(对应编号分别为CS0、CS20、CS30和CS40)的感官品质,以及在贮藏期间馒头质构和水分含量的变化。结果表明,添加豆渣酸面团会降低馒头面团的弹性、黏性和综合黏弹性。馒头面团的抗氧化特性以及膳食纤维含量随着豆渣酸面团添加量的增加而显著增加;当添加量为40%时,S40馒头面团的1,1-二苯基-2-三硝基苯肼(DPPH)自由基清除率和2,2-联氮-二(3-乙基-苯并噻唑-6-磺酸)二铵盐(ABTS)自由基清除率分别达到15.61%和79.59%,比S0增加了5.10和15.02个百分点,总膳食纤维含量达到3.91 g·100g-1,比S0增加了138.79%。豆渣酸面团的添加量为20%时,CS20馒头的比容和延展率与CS0相比无显著差异,但对馒头的外观、色泽、风味和口感产生了积极影响,整体可接受度达到7.8。在贮藏5 d后,CS0的硬度、咀嚼性和胶着性分别增加了180.85%、69.62%和98.08%,而CS40分别增加了76.19%、30.88%和33.96%,与CS0相比增加量显著减小,且在贮藏期间CS40的水分含量始终高于CS0,表明豆渣酸面团有利于减缓馒头的老化。本研究为实现豆渣资源的合理化应用以及新型营养的酸面团产品开发提供了一定的理论基础。  相似文献

该试验旨在以变性淀粉、乳化剂、食用胶为原料,研制一种能有效延缓糯米糕团老化回生的品质改良剂。通过测定添加不同品质改良剂后糕团的硬度,确定了品质改良剂的组成成分为3型变性淀粉、单甘酯和瓜尔多胶。经过正交试验优化后得到三者的最佳配比为3型变性淀粉∶单甘酯∶瓜尔多胶=25∶2∶1。试验结果表明:该品质改良剂不仅能够显著延缓糕团的老化回生,延长糕团的货架期,而且能够改善糕团的组织结构和口感。  相似文献

冻融循环下冷冻非发酵面团品质的变化及机理   总被引:9,自引:5,他引:4  
为了探讨储运销售过程引起的冻融循环对冷冻非发酵面团品质的影响,利用低场核磁共振分析仪(LF-NMR)、质构仪与流变仪等对样品面团水分与蛋白质组分、质构与流变特性进行测定,研究冻融循环下冷冻非发酵面团品质变化。结果表明:5次冻融交替中,失水率显著上升,达至3.14%;总水分中半结合水含量在 F1后整体呈下降趋势,表明冻融循环过程中,半结合水不断散失;至第5次冻融时,醇溶蛋白含量显著下降(P<0.05),谷蛋白与谷蛋白大分子聚合物(GMP)含量至第4次冻融后均显著下降(P<0.05),分别降至2.26%与0.70%;生面坯剪切力显著上升,强韧性则与之相反;熟面坯硬度呈上升再下降趋势,黏性基本呈上升,弹性呈下降趋势;弹性模量G'与黏性模量G'均呈下降趋势,且在第4次时,tanδ(tanδ=G'/G')至最大,表明G'的变化程度比G'大。由此可见,冻融循环致使冷冻非发酵面团品质有所下降。总而言之,冻融循环对冷冻非发酵面团的品质下降产生一定的负面影响。  相似文献

研究了不同乳化剂对牛油的乳化效果。根据乳液的稳定性来选择其最佳的亲水亲油平衡值(HLB)为10.53。在最佳HLB值下进行乳化剂的复配。当Tween80和单甘酯以3∶2的比例复配,且复配乳化剂的添加量为0.8%时,乳化牛油的效果最好。增稠剂可增强乳液的稳定效果,通过L9(34)正交试验确定的最佳增稠剂配比为黄原胶0.1%,瓜尔豆胶0.25%和卡拉胶0.1%,由此得到最稳定的乳液,其稳定系数为0.963。  相似文献

对小麦面筋蛋白进行琥珀酰化和蛋白酶复合改性以提高其溶解性及其他特性。对复合改性面筋蛋白与原面筋蛋白、琥珀酰化面筋蛋白、碱性蛋白酶改性面筋蛋白进行了比较。结果表明:在pH 3~11、水解度4%~12%的范围内,复合改性面筋蛋白的溶解度亦随着水解度的增大而增大,比原面筋蛋白、酰化面筋蛋白、中性蛋白酶和碱性蛋白酶的改性产物都高。起泡性和起泡稳定性则先增加后降低,在水解度4%时具有较佳值,但在各水解度下较单一改性的面筋蛋白产物都要低。添加复合改性面筋蛋白面团黏弹性和面包口感较好,内部结构均匀、细腻。  相似文献

The impact of freezing on dough rheology, fermentation performance, and final steamed bread quality was investigated in this study. Also, the incorporation of sodium alginate and xanthan gum into the frozen dough formulation, in comparison with 0.1% salt, was studied to test their suitability as frozen dough improvers. Incorporating these hydrocolloids into steamed bread revealed their totally different characteristics from those in baked bread. Freezing of dough led to diminished specific volumes of proofed dough and steamed bread, and it also caused higher crumb firmness for steamed bread. The incorporation of sodium alginate and xanthan gum did not improve the quality of the steamed bread but led to further reduction in specific volume and increase in crumb firmness at the higher levels of 0.3, 0.5, and 1.0% and 0.07 and 0.1%, respectively. Xanthan gum and sodium alginate showed dough strengthening effects by increasing resistance to uniaxial deformation, bubble burst stress, and declining dough weakening coefficients at these levels, but decreased dough extensibility and bubble burst strain were revealed at these concentrations tested.  相似文献

Diacetyl tartaric acid ester of monoglycerides (DATEM) is a kind of anionic emulsifier. To date, the positive effect of DATEM on the volume of bread has been reported, but the effects on Chinese steamed bread (CSB) quality and other parameters for bread quality are still unclear. The effects of DATEM on the characteristics of dough and the qualities of CSB and bread were investigated. The results showed that, the effects of DATEM on the rheological properties of dough were complex. Water absorption ratio of CSB dough decreased slightly, while that of bread dough increased slightly. But gas retention and structure improved and gluten strength increased for both CSB and bread doughs after DATEM was added. The studies also showed that structure, elasticity, tenacity, and whiteness of CSB were improved, but specific volume was almost unchanged. The structure, color, and smoothness were significantly improved for bread, and specific volume increased compared with the control. The optimal quantities of DATEM for CSB and bread were both ≈0.10% (on flour mass basis).  相似文献

The effects of freezing and storage in frozen conditions on bread quality, crumb properties, and aggregative behavior of glutenins were analyzed. The effect of different additives on bread quality was also studied. The results obtained showed that freezing and storage at -18 degrees C decreased the bread quality. Samples stored in frozen conditions supplemented with diacetyl-tartaric acid ester of monoglycerides, gluten, and guar gum produced breads of greater volume and more open crumb structure than those prepared with the base formulation (without additives). All additives analyzed increased the proof time. Crumb firmness increased with dough frozen storage and bread aging time at 4 degrees C. A decrease in the amount of glutenin subunits of high molecular mass was observed by electrophoresis analysis of the SDS-soluble proteins aggregates extracted from the frozen dough. This result suggested that the protein matrix of bread underwent depolymerization during storage in frozen conditions.  相似文献

不同品种小麦粉的粉质特性对速冻熟制面条品质的影响   总被引:5,自引:3,他引:2  
为研究不同品种小麦粉与速冻熟制面条质构特性之间的关系,选取30种小麦制粉,用FOSS定氮仪、快速黏度仪、粉质仪和拉伸仪等测定面粉品质指标,制作速冻熟制面条,用质构仪测定质构特性。采用描述性统计、主成分和聚类分析方法对30种小麦面粉和速冻熟制面条的质构关系进行了分析。结果表明:不同品种小麦粉的湿面筋、糊化温度、弱化度、粉质质量指数与硬度呈极显著相关(P0.01);蛋白质、湿面筋、总淀粉含量、最终黏度、回生值、糊化温度、粉质吸水率、粉质曲线稳定时间、面团形成时间、弱化度、粉质质量指数、拉伸曲线面积、拉伸阻力、最大拉伸阻力与剪切力呈极显著相关(P0.01);小麦粉的粉质特性,除衰减值、峰值时间和延伸度外,均与拉伸力呈极显著相关(P0.01)。根据方差贡献率提取出可以反映原变量84.023%信息的5个因子,因子1主要反映面粉的粉质拉伸特性,因子2反映小麦粉糊化特性,因子3反映蛋白质特性,因子4和因子5共同反映小麦粉的淀粉特性。这些性状在小麦粉的评价方面起着重要作用,在加工中要注重对它们的选择。聚类分析将30种小麦粉分为4类,结果表明,不能仅凭小麦粉的指标数据和质构数据来选择制作速冻熟制面条的原料,还需考虑到感官评价的影响。该结论可为小麦粉在速冻熟制面条加工应用方面提供一定的理论参考。  相似文献

The improving effects of transglutaminase (TGase) were investigated on the frozen dough system and its breadmaking quality. Rheological properties and microstructure of fresh and frozen doughs were measured using a Rapid Visco‐Analyser (RVA), dynamic rheometer, and scanning electron microscopy (SEM). The frozen doughs with three storage periods (1, 3, and 5 weeks at –18°C) were studied at three levels (0.5, 1.0, and 1.5%) of TGase. As the amount of TGase increased, hot pasting peak viscosity and final viscosity from the RVA decreased, but breakdown value increased. The TGase content showed a positive correlation with both storage modulus G′ (elastic modulus) and the loss modulus G″ (viscous modulus): G′ was higher than G″ at any given frequency. The SEM micrographs showed that TGase strengthened the gluten network of fresh, unfrozen dough. After five weeks of frozen storage at –18°C, the gluten structure in the control dough appeared less continuous, more disrupted, and separated from the starch granules, while the dough containing 0.5% TGase showed less fractured gluten network. Addition of TGase increased specific volume of bread significantly (P < 0.05) with softer bread texture. Even after the five weeks of frozen storage, bread volume from dough with 1.5% TGase was similar to that of the fresh control bread (P < 0.05). The improving effects of TGase on frozen dough were likely the result of the ability of TGase to polymerize proteins to stabilize the gluten structure embedded by starch granules in frozen doughs.  相似文献

The beneficial effects of a new recombinant lipase (Rhizopus chinensis lipase [RCL]) and transglutaminase (TG) were investigated on frozen dough systems and their breadmaking quality. Rheological properties and microstructure of doughs were measured using a dynamic rheometer, rheofermentometer F3, and scanning electron microscopy (SEM). Measurements of viscoelastic properties showed that both G′ and G″ of dough containing RCL and TG were greater than those of the control after 35 days of frozen storage. The SEM micrographs showed that dough containing RCL and TG had the most starch granules embedded in or attached to the gluten network, and the gluten seemed more powerful and resilient than for the control dough after 35 days of frozen storage. Results of the gas production and dough development tests indicated that RCL and TG improved the rheofermentative characteristics of frozen dough. RCL and TG could improve water‐holding capacity and significantly increase the glycerol content of the control dough. Image analyses showed that bread crumbs containing RCL and TG had a more open network and uniform crumb structure, which resulted in higher specific volume. This combination also yielded a product with higher sensory scores for test breads.  相似文献

Glutens isolated from 15 soft red winter (SRW) wheat flours were added into a SRW wheat flour to obtain protein levels of 9.6 and 11.3% for determination of the qualitative effect of added gluten on the dough properties and quality of northern‐style Chinese steamed bread (CSB). Sodium dodecyl sulfate sedimentation (SDSS) volume of the gluten source flour exhibited positive relationships with mixograph absorption, midline peak time (MPT), and midline peak value (MPV) of the gluten‐added flours and with surface smoothness, crumb structure, and total score of CSB prepared from the gluten‐added flours regardless of protein content. Positive correlations were also observed between SDSS volume of the gluten source flour and specific volume and stress relaxation score of CSB prepared from the gluten‐added flours of 11.3% protein. The increase in protein content from 9.6 to 11.3% by gluten addition raised mixograph absorption, MPT, and MPV but had no apparent effect on resistance breakdown, dough maximum force for extension, and extensibility, and it increased CSB specific volume and crumb structure score without affecting surface smoothness, stress relaxation, and total score. Mixograph parameters exhibited significant relationships with CSB total score, indicating that they could be effective predictors of the CSB‐making quality of flours.  相似文献
