In this study, we characterized the effects of 25-hydroxyvitamin D3 (25-OH D3) and manipulated dietary cation-anion difference (DCAD) on the performance, urine pH, serum constituents, carcass traits, tissue residual vitamin D and its metabolites, beef tenderness, and mRNA and protein concentrations of Ca-dependent proteinases in LM using 24 cull native Korean cows. The cows were divided into 3 groups of 8: control, 25-OH D3 supplemented (25-OH D3), and manipulated DCAD plus 25-OH D3 supplemented (DCAD+25-OH D3). Cows receiving 25-OH D3 or DCAD+25-OH D3 were dosed with 125 mg of 25-OH D3 6 d before slaughter. The manipulated DCAD (-10 mEq/100 g of DM) diet was fed from 20 to 6 d (14 d) before slaughter. The DCAD+25-OH D3 treatment decreased urine pH and increased serum Ca concentrations. Although the vitamin D concentrations in LM, liver, and kidney were not affected by 25-OH D3 or DCAD+25-OH D3, muscle tissue 25-OH D3 concentrations were increased by both regimens. Serum 25-OH D3 concentrations were increased by 25-OH D3 supplementation, and the increase was even greater for DCAD+25-OH D3. The same pattern was observed for serum 1,25- (OH)2 D3. However, the LM concentration of 1,25-(OH)2 D3 was less for DCAD+25-OH D3 than for control. Although Ca concentrations of LM increased numerically in response to 25-OH D3 supplementation, no statistical differences in Warner-Bratzler shear force or sensory traits of LM were detected. The LM of cows receiving 25-OH D3 with or without manipulated DCAD had greater concentrations of mu-calpain and m-calpain mRNA, whereas the reverse was observed for calpastatin mRNA. Expression of mu-calpain protein was increased relative to control by DCAD+25-OH D3. The amount of 25-OH D3 and manipulated DCAD administered to cull native Korean cows was insufficient to improve tenderness of beef by increasing muscle Ca concentration. However, DCAD+25-OH D3 induced greater expressions of mu-calpain protein as well as mRNA.  相似文献

Twenty 10‐month‐old Japanese Black steers were used to evaluate the effects of clay on fat necrosis and carcass characteristics. Ten steers (Clay group) were fed the clay (50 g/day) during 10–30 months of age. The other 10 steers (Control group) were not fed it. There was no significant difference in body weight or average daily gain between the two groups (P > 0.05). The occurrence of fat necrotic mass in the Clay group (30%) was lower (P < 0.05) than that in the Control group (90%) at slaughter. The size of necrotic masses in the Clay group was smaller (P < 0.05) than that in the Control group. There was no significant difference in the marbling score, beef color, Longissimus muscle area or subcutaneous fat thickness between the two groups. These results suggest that the clay prevented the occurrence of fat necrosis and did not affect the carcass characteristics in Japanese Black steers.  相似文献

This study was conducted to examine the influence of varying dietary cation anion difference (DCAD) on nutrient intake, digestibility, ruminal characteristics, blood acid base status and in situ digestion kinetics in Nili Ravi buffalo bulls. Four iso‐nitrogenous and iso‐caloric diets having ?110, +110, +220 and +330 mEq/kg dry matter (DM) DCAD were formulated which were represented by A (anionic), LC (low cationic), MC (medium cationic) and HC (high cationic), respectively. These diets were used in four ruminally cannulated Nili Ravi buffalo bulls in a 4 × 4 Latin Square Design. Improved nutrient intake was recorded at high DCAD levels while digestibility remained unaffected. Ruminal ammonia nitrogen, rumen pH, acetate and acetate : propionate ratio were higher in buffalo bulls fed MC and HC diets than those fed A and LC diets. Blood pH and HCO3 also tended to increase as DCAD level was increased in the diet. Serum Ca and Cl concentrations were higher in bulls fed A and LC diets whereas serum Mg, P and S remained unaffected. Urine pH increased with increasing DCAD level. Nitrogen intake and blood urea nitrogen concentrations were also higher in bulls fed MC and HC diets. There was a consistent increase in ruminal DM and neutral detergent fiber degradability, rate of disappearance and extent of digestion at high DCAD levels in the diet. However, lag time decreased at high DCAD level. This study indicated that buffalo bulls fed MC and HC diets improved feed intake, ruminal characteristics and digestion kinetics.  相似文献

Influence of − 11, + 11, + 22 and + 33 mEq/100 g dry matter (DM) of dietary cation anion difference (DCAD) on dry matter intake (DMI), serum concentration of minerals and milk yield and its composition by early lactating Nili Ravi buffaloes was examined in a randomized complete block design during summer. Four iso-energetic and iso-nitrogenous DCAD diets were randomly allotted to four groups, five buffaloes in each group. A linear increase in DMI and water intakes was recorded with increasing the DCAD concentration. Greater nitrogen balance was noticed in buffaloes fed diets containing + 22 and + 33 mEq/100 g DM DCAD than those fed − 11 and + 11 mEq/100 g DM DCAD concentrations. Blood pH and HCO3 concentration increased linearly with increasing DCAD concentrations. Serum chloride concentration was greater with − 11 mEq/100 g DM DCAD concentration, while serum cation anion difference increased linearly with increasing the DCAD concentration. Serum calcium concentration increased significantly with decreasing the DCAD concentration while serum magnesium and phosphorus concentrations remained unaffected. Buffaloes fed − 11 DCAD had higher calcium and chloride balance than those fed + 11, + 22 and + 33 DCAD. Phosphorus, sodium and potassium balance increased in buffaloes fed high (+ 22 and + 33) DCAD. Urine pH was increased significantly with increasing DCAD concentration. Milk yield and milk fat percentage increased linearly with DCAD concentration, whereas milk protein and lactose content were not affected. Increasing DCAD from − 11 to + 33 mEq/100 g DM increased DMI, water intake, milk yield and milk fat content in early lactating buffaloes during summer.  相似文献

Six experiments were conducted to evaluate dietary cation-anion difference (DCAD) in concentrate diets on urinary pH, feedlot performance, and N mass balance. In Exp. 1, 15 wether lambs (33.5 ± 3.0 kg) in five 3 × 3 Latin squares were fed a basal diet of 82.5% dry-rolled corn (DRC), 7.5% alfalfa hay, 5% molasses, and 5% supplement with different proportions of anionic and cationic salts. The DCAD was -45, -24, -16, -8, 0, +8, +16, +24, +32, and +40 mEq per 100 g of DM with the control basal diet (DCAD = +8) included in each square. Urinary pH increased (cubic, P < 0.01) as DCAD increased and DMI increased linearly (P < 0.01) with increasing DCAD. In Exp. 2 and 3, 8 Holstein steers (312 ± 24 kg) were used in 2 consecutive 4 × 4 Latin squares. Steers were fed either the same basal diet as Exp. 1 or a basal diet with 20% wet distillers grains (WDGS) replacing DRC. In Exp. 2, DCAD was adjusted to -2, -12, and -22 mEq per 100 g of DM from the basal diet (DCAD = +8) and DCAD was adjusted in Exp. 3 to -12, -22, and -32 mEq per 100 g of DM from the basal WDGS diet (DCAD = -2). Urinary pH decreased linearly as DCAD decreased (P < 0.01) in both experiments, whereas DMI decreased linearly in Exp. 2 (P = 0.02) but not Exp. 3 (P = 0.96). In Exp. 4, 6 crossbred steers (373 ± 37 kg) were used in a 2-period crossover design. Steers were fed the same basal diet as Exp. 3 with DCAD of -16 (NEG) and +20 (POS) mEq per 100 g of DM. Urinary pH and DMI (P < 0.05) were less for cattle fed the NEG diet compared with POS. In 2 experiments, steers (n = 96 each) were fed NEG or POS as calves (260 ± 22 kg of BW) for 196 d from November to May (Exp. 5) or as yearlings (339 ± 32 kg of BW) for 145 d from June to October (Exp. 6). Final BW, DMI, ADG, and HCW were not different (P > 0.11) among treatments in either experiment. Efficiency of BW gain was increased (P = 0.05) for steers fed NEG compared with POS in Exp. 5 but was not different (P = 0.11) in Exp. 6. Amount of N intake, retention, excretion, and manure N (kg/steer) were not different (P > 0.11) among treatments in either experiment. Manure pH (soil, feces, and urine) was decreased (P < 0.01) in pens fed NEG compared with POS in both experiments. Amount of N lost (kg/steer) was not different (P = 0.44) in Exp. 5, but tended (P = 0.09) to be 10.6% greater for POS compared with NEG in Exp. 6. Urinary pH was decreased by reducing DCAD, but this had minimal effect on N losses in open feedlot pens in these experiments.  相似文献

The fatty acid composition of adipose tissue in beef has been recognized as an important trait because of its relationship with beef quality, including favorable beef flavor and tenderness. Over the last decade, we have tried to identify the genes responsible for the fatty acid composition in cattle, and have found the following. (i) Genetic polymorphism of stearoyl‐CoA desaturase (SCD) is one of the responsible genes associated with fatty acid composition. The average effects of gene substitution of the SCD type A gene on the monounsaturated fatty acid (MUFA) percentage and the melting point of intramuscular fat were approximately +1.0% and ?1.0°C, respectively. (ii) Intron polymorphism of sterol regulatory element binding protein–1 (SREBP‐1) also affected MUFA. (iii) No effect of SCD or SREBP‐1 genotypes on any representative carcass traits of Japanese Black in the field population was observed. (iv) Additional genetic markers adipocytes fatty acid binding protein 4 (FABP4) and liver X receptor α also affected the fatty acid composition. (v) SCD and FABP4 significantly affected fatty acid composition in Holstein steers. These findings will bring new insight into the fat‐related carcass traits of beef cattle and will thus contribute to the beef industry.  相似文献

ABSTRACT

Aims: To compare urine urinary pH, blood pH and concentration of electrolytes in blood of healthy horses fed an anionic salt supplement to achieve diets with a dietary cation-anion difference (DCAD) of ?40 or 0?mEq/kg DM, with horses a fed a diet with a DCAD of 85?mEq/kg DM.

Methods: Eight healthy horses received each of three diets in a randomised crossover design. Diets consisted of grass hay and concentrate feed, with a varying amount of an anionic supplement to achieve a DCAD of 85 (control), 0 or ?40?mEq/kg DM. They were fed for 14 days each with a washout period of 7 days between. Urine pH was measured daily and blood samples were collected on Days 0, 7 and 14 of each study period for the measurement of pH and concentration of electrolytes.

Results: Four horses voluntarily consumed the anionic supplement with their feed, but four horses required oral supplement administration via dose syringe. During the study period mean urine pH was lower in horses fed diets with a DCAD of 0 (6.91; SD 0.04) and ?40 (6.83; SD 0.04) mEq/kg DM compared to the control diet (7.30; SD 0.04). Compared with horses fed the control diet, mean urine pH was lower in horses fed the 0 and ?40?mEq/kg DM diets on Days 1–12 and 14 (p?<?0.05) of the study period. On Day 13 it was only lower in horses fed the ?40?mEq/kg DM diet (p?<?0.01). Urine pH was similar for horses fed the 0 and ?40?mEq/kg DM diets (p?=?0.151). The DCAD of the diet had no effect on blood pH, ionised Ca or anion gap. Mean concentrations of bicarbonate in blood were affected by diet (p?=?0.049); they were lower when horses were fed the 0?mEq/kg diet relative to the control diet on Day 14.

Conclusions and clinical relevance: The anionic supplement reduced urine pH in horses fed diets with a DCAD of 0 or ?40?mEq/kg DM compared with 85?mEq/kg DM. However as urinary pH did not fall below pH 6.5, the pH below which calcium carbonate uroliths do not form, this reduction in urine pH is unlikely to be clinically significant. The supplement was variably palatable and showed minimal promise as an effective urinary acidifier at the doses administered in this study.  相似文献

The aim of the present study was to compare the expression of adipose tissue mRNA related to glucose metabolism between Japanese Black steers (n = 5) and Holstein steers (n = 5). We examined the expression of the resistin, tumor necrosis factor‐α (TNF‐α), glucose transporter 1 (GLUT1) and growth hormone receptor (GHR) genes using real‐time polymerase chain reaction of cDNA in adipose tissue. The cDNA sequence identified by 5′/3′‐rapid amplification of cDNA and the deduced amino acid sequence were highly conserved in human, porcine and murine resistin. Expression of resistin mRNA was significantly greater in Holstein steers than in Japanese Black steers. In contrast, expression of TNF‐α mRNA was slightly greater in Japanese Black steers. Expression of GHR mRNA was significantly greater in Japanese Black steers compared with the Holstein steers, although there was no significant difference in the expression of GLUT1 mRNA. However, the plasma non‐esterified fatty acid (NEFA), glucose, insulin and growth hormone concentrations did not differ between Japanese Black and Holstein steers. The present results show that there is a difference in the expression level of mRNA related to glucose metabolism between Japanese Black steers and Holstein steers.  相似文献

The effects of grazing and supplemental protein concentrations, provided during the grazing period, on subsequent finishing performance and carcass quality were investigated. This experiment was carried out using 15 Japanese Black cattle (Wagyu) steers. The steers were fed as follows: (i) grazing supplemented with moderate protein concentrate (GMP) (18% crude protein (CP); dry matter (DM) basis) before finishing, followed by feeding in a barn until slaughter; (ii) grazing supplemented with low protein concentrate (GLP) (14% CP; DM basis) before finishing, followed by feeding in the barn until slaughter; and (iii) no grazing before finishing (NG). From the end of the grazing season to the end of the growing period, the GMP and GLP steers were managed in the same way as the NG steers. All of the animals were fed the same diet in the finishing period (9 months to 28 months). None of the three treatments affected the average daily gains. For all treatments, chilled carcass weights were more than 450 kg and did not differ significantly among the groups. The longissimus muscle areas in the grazed steers were numerically larger than in those receiving the NG treatment. Fat thickness was significantly greater (P < 0.05) in the NG steers than in the grazed steers. The intramuscular fat and marbling scores were not affected in the grazed steers. In conclusion, the carcass quality of grazed steers was similar to that of the NG steers at a similar final age, and the quantity of meat in the NG steers would be less than that of the GMP and GLP steers. Therefore, spring‐born Wagyu steers should be grazed using the GLP supplement before fattening.  相似文献

To examine the effect of a modification of a typically Irish dairy calf-to-beef production system, Charolais × Friesian steers were offered a finishing ration of grass silage ad libitum and 5.6 kg concentrates daily for 174 days prior to slaughter at 25 months of age or grass silage ad libitum for 174 days, followed by pasture for 167 days and slaughter at 30 months of age. Finishing at pasture increased carcass weight (376 vs. 342 kg) but did not affect intra-muscular lipid concentration (28 vs. 24 g/kg). Finishing at pasture decreased Longissimus thoracis et lumborum lightness (35.6 vs. 36.9) and increased shear force of muscle at 2 (8.54 vs 4.32) and 7 days (5.21 vs 3.64 kg) post-mortem but not at 14 days post-mortem (4.45 vs. 3.42 kg). Finishing at pasture did not affect the sensory characteristics of tenderness, juiciness, firmness or chewiness and tended (P < 0.1) to decrease texture and acceptability. It is concluded that modification of this beef production system as described, had minor effects on beef quality which are unlikely to be of commercial significance.  相似文献

The acid-base status of the extracellular fluid is directly affected by the concentrations of strong basic cations and strong acid anions that are absorbed into the bloodstream from the diet. The objective of this study was to develop and characterize a model for dietary acid challenge in sheep by decreasing the dietary cation-anion difference (DCAD) using NutriChlor (HCl-treated canola meal), an anionic feed supplement. Ten fully fleeced sheep (Rideau-Arcott, 54.3 +/- 6.7 kg of BW) were fed either a control supplement [200 g/d of canola meal, DCAD = 184 mEq/kg of DM, calculated as (Na+ + K+) - (Cl- + S2-)] or an anionic supplement (AS; 200 g/d of NutriChlor, DCAD = -206 mEq/kg of DM) offered twice daily at 0700 and 1100 in a randomized complete block design. The sheep were individually housed and limit-fed a basal diet of dehydrated alfalfa pellets (22% CP and 1.2 Mcal of NE(g)/kg, DM basis) at 1.1 kg of DM/d offered twice daily at 1000 and 1300. Two days before the beginning of the experiment, the sheep were fitted with vinyl catheters (0.86-mm i.d., 1.32-mm o.d.) in the left jugular vein to facilitate blood sampling. Blood and urine samples were obtained daily from 1100 to 1130 on d 1 through 9 and at 0700, 1000, 1300, 1600, and 1900 on d 10. Blood was analyzed for hematocrit, plasma pH, gases, strong ions, and total protein. Urine samples were analyzed for pH. The AS induced a nonrespiratory acid-base disturbance associated with lower (P < 0.05) plasma pH (7.47 vs. 7.39), lower (P < 0.05) urine pH (8.13 vs. 6.09), and lower (P < 0.05) strong ion difference (42.5 vs. 39.5). The AS reduced (P < 0.05) the concentration of plasma glucose, base excess, and bicarbonate and increased (P < 0.05) the concentration of K+ and Cl-. Lowering DCAD increased (P < 0.05) Ca2+ concentrations in plasma by 13%. In conclusion, this dietary model successfully induced a significant acid-base disturbance in sheep. Although the acidifying effects of negative DCAD in the diet may have short-term prophylactic effects of elevating the concentration of Ca2+ in plasma, negative DCAD may have detrimental effects on acid-base balance.  相似文献

Six Japanese Black (Wagyu) steers (average initial weight 467 ± 45 kg) fitted with a ruminal cannula were used in a split‐plot design experiment comprising a 3 × 3 Latin square design (whole‐plot) and a randomized block design (subplot). The whole‐plot treatments were three different feeding levels of urea‐treated potato pulp (PP) silage‐based concentrate: 1.00%, 1.75% and 2.50% of body weight (BW) (on a dry matter (DM) basis). The subplot treatments consisted of the concentrate formulated to contain either soybean meal (SBM) as a rapidly rumen‐degraded protein source or corn gluten meal (CGM) as a slowly degraded protein source. Dry matter intake tended to be lower (P = 0.071) for CGM (8.9 kg/day) than for SBM (9.4 kg/day). Protein sources had no significant effect on digestibility and in situ degradation. Ruminal ammonia nitrogen (NH3‐N) was lower (P = 0.033) for CGM (7.5 mg/dL) than for SBM (9.5 mg/dL). Protein sources did not affect ruminal pH and the total volatile fatty acids (VFA) concentrations. The molar proportions of ruminal acetate and valerate were higher (P = 0.032) for CGM than for SBM. The maximum daily intake of the PP silage‐based concentrate expressed as a percentage of BW was approximately 1.4% of BW. Dry matter intake was higher (P = 0.046) for steers fed at 1.0% of BW of the PP silage‐based concentrate than for steers fed at 1.75% or 2.5% of BW of the concentrate. The feeding levels of the PP silage‐based concentrate had no effect on DM and nutrients digestibility, except for crude protein (CP) digestibility. CP digestibility tended to be lower (P = 0.071) for steers fed at 1.75% of BW of the PP silage‐based concentrate than for steers fed at 1.0% or 2.5% of BW of the concentrate. The feeding levels of the PP silage‐based concentrate also did not affect the in situ degradation parameter of hay and PP silage. The feeding levels of the PP silage‐based concentrate did not affect ruminal pH, NH3‐N and total VFA concentrations. The molar proportion of acetate was highest for steers fed at 1.0% of BW of the concentrate. In conclusion, in the urea‐treated PP silage‐based concentrate, CGM seems to be more effective than SBM for stabilizing the ruminal NH3‐N concentration and to be advantageous for fiber digestion in the rumen. The feeding levels of the PP silage‐based concentrate did not change the amount of VFA production in the rumen and the DM digestibility.  相似文献

Forty-eight Angus and Angus-cross steers (initial BW = 657 ± 5.7 kg) were used in a 2 × 2 factorial design to determine whether feeding an anionic diet or high dietary concentrations of a soluble calcium (Ca propionate) source or both would alter Ca metabolism and subsequently longissimus tenderness. Treatments consisted of 1) control, 2) 4% Ca propionate (CaProp), 3) 2% NH 4Cl (anionic diet), and 4) CaProp plus 2% NH4Cl. Experimental diets were fed for 7 d prior to slaughter. Steers were individually fed using electronic Calan gate feeders. Blood samples were obtained on d 3 and 7 at 2 h post feeding for plasma Ca determination. A striploin steak was obtained from each carcass at 48 h post harvest for muscle Ca analysis and Warner-Bratzler shear force (WBSF) determination. Addition of CaProp or NH4Cl to the high concentrate finishing diet reduced (P < 0.01) ADG and DMI during the 7-d feeding period. The anionic diet reduced ADG to a greater extent than did CaProp. Average daily gain and DMI were lowest for steers fed both NH4Cl and CaProp, indicating that their effects were additive. Carcass characteristics were not affected by CaProp, but the anionic diet tended to reduce hot carcass weights (P=0.13) and longissimus areas (P=0.09). Plasma Ca concentrations were slightly greater in steers fed CaProp on d 3 (P < 0.10) and 7 (P < 0.01) of the study. The anionic diet did not affect plasma Ca. Muscle Ca concentrations and WBSF values were not affected by either CaProp or the anionic diet. Results indicate that beef tenderness was not enhanced in steers fed a diet high in CaProp or those fed an anionic diet.  相似文献

The present study investigated the influence of a diet largely comprising rice whole‐crop silage (rWCS) on growth performance, carcass and meat characteristics, and expression of genes involved in muscle growth of Japanese Black steers. Steers were randomly separated into rWCS‐fed (rWCS ad libitum and restricted feeding of concentrate) and concentrate‐fed groups. Total digestible nutrient intake and daily gain (DG) decreased in rWCS‐fed steers in comparison with concentrate‐fed steers, whereas dressed carcass weight and final body weight did not significantly differ between the groups. Decreases in drip loss in the muscle of rWCS‐fed steers may be caused by α‐tocopherol and β‐carotene in muscle. Feeding large amounts of rWCS to steers may maintain quantitative productivity of beef steers equally to a concentrate‐based diet, and improve the qualitative productivity. Results of gene expression suggest that activation of skeletal muscle growth in rWCS‐fed steers may occur at the late fattening period owing to a decrease in myostatin and increase in myosin heavy chain gene expression. Preadipocyte factor‐1 and myostatin genes may be strongly involved in the control of lipid accumulation. This rearing system would allow beef production to switch to rWCS‐based diets from concentrate‐based diets.  相似文献

This study aimed to determine the effect of dietary cation and anion difference (DCAD) on milk production and body fluid distribution in lactating dairy goats. Ten dairy goats were selected and divided into two groups, five animals each. Animals received either control DCAD (control, 22.81 mEq/100 g dry matter (DM)) or high DCAD (DCAD, 39.08 mEq/100 g DM). The results indicated that rectal temperature (Tr), respiration rate, milk yield and compositions did not differ between groups. But the percentage change of Tr from the DCAD group was lower than the control group between 09.00 and 13.00 hours. DM intake tended to increase in the DCAD group. Dairy goats in the DCAD group drank more water, but urinary excretion and plasma antidiuretic hormone concentration remained unchanged. Apparent water balance was higher from the DCAD group over 24 h. There was no effect of DCAD on plasma and blood volumes, but tended to increase in extracellular fluid and thereby increased total body water. The present results indicate that animals supplemented with high DCAD increase their total body water and apparent water balance. These results have contributed to the process of adaptation for evaporative cooling and would be useful in slowing down the elevation in Tr.  相似文献

The effects of crude protein (CP) concentration in feed using soybean meal as its source in the early fattening period on the levels of free amino acids (FAAs) and dipeptides in the blood, and the levels in the M. longissimus thoracis after slaughter were studied in Japanese Black steers. Sixteen steers were divided into four groups and given feed with a CP content of 12, 14, 16, or 18% of dry matter (DM) from 10 to 20 months old, and they were fed with the same level of CP (13.5–13.9% of DM) until slaughter at 30 months of age. There was no significant difference in the weight gain, carcass weight or marbling score between the groups. Concerning the serum FAA and dipeptide contents at 20 months of age, the alanine, tyrosine and tryptophan levels decreased, while the carnosine (Car) level increased, with increases in the CP level in the feed. Although there were no significant differences in the FAA contents of the Longissimus thoracis muscle between the groups, the Car content decreased with increases in the feed protein level.  相似文献

The objective of this experiment was to determine the effect of different doses of vitamin D3 (VITD) on beef feedlot performance, plasma and muscle Ca2+, tissue residues, and improvement of Warner-Bratzler shear force (WBS) and panel tenderness. A total of 167 steers were fed one of six levels of VITD. The VITD treatments (28 steers/treatment) were 0, 0.5 x 10(6), 1 x 10(6), 2.5 x 10(6), 5 x 10(6), and 7.5 x 10(6) IU/steer daily of VITD fed nine consecutive days before slaughter. Feedlot performance and plasma Ca2+ were measured during the last 21 days on feed. Warner-Bratzler shear force was measured on strip loin and top round steaks at 7, 10, 14, and 21 d postmortem. The VITD treatments of 5 and 7.5 x 10(6) IU/steer daily decreased (P < 0.05) ADG, and VITD supplementation of 2.5, 5, and 7.5 x 10(6) IU/steer daily decreased average dry matter feed intake (P < 0.05) at the end of the feeding trial. Plasma Ca2+ increased linearly with VITD treatment (P < 0.01). Calpastatin and calpain activity were not influenced by treatment (P > 0.05), but muscle Ca2+ was increased (P < 0.05) by VITD treatments of 1, 2.5, 5, and 7.5 10(6) IU/steer daily. Feeding VITD did not influence (P > 0.05) carcass quality or yield traits. Supplementing VITD at levels of 1, 2.5, 5, and 7.5 10(6) IU/steer daily increased (P < 0.05) VITD concentrations in strip loin and liver samples. Cooking liver decreased VITD concentrations 10 to 28%. Vitamin D3 treatments of 0.5 and 7.5 x 10(6) IU/d reduced strip loin steak WBS at d 7 (P < 0.05), but VITD treatments did not decrease strip loin steak WBS at any other time postmortem. The VITD treatments of 0.5, 1, and 5 x 10(6) IU/steer daily decreased top round steak WBS at 7 d, and all VITD treatments decreased 10-d top round steak WBS (P < 0.05). Supplementing steers with 0.5 x 10(6) IU/steer daily of VITD also decreased (P < 0.05) top round steak WBS at 21 d postmortem compared with controls. Sensory tenderness at 7 d postmortem was increased (P < 0.05) by all VITD treatments in top round steaks, yet strip loin tenderness scores were not affected (P > 0.05) by VITD treatment. Treatment with VITD quadratically decreased (P < 0.05) round WBS. Thus, VITD treatment will effectively improve tenderness when cattle tend to be tough and have no impact on cattle that produce tender beef. Feeding steers 0.5 x 10(6) IU of VITD daily for 9 d improved tenderness in two muscles without negatively affecting feedlot performance or tissue residues.  相似文献

The effects that high levels of protein in concentrate feed has during the early fattening stage on physico-chemical composition and sensory characteristics of M. longissimus in Japanese Black heifers were investigated. Four sets (8 head) of identical twins of Japanese Black heifers were divided into two groups: a group fed high levels of protein in concentrate feed in the early fattening stage (HCP); and a control group. Moisture, fat, protein, cooking loss, Warner-Bratzler shear force and fatty acid composition of M. longissimus were similar in both groups. Levels of free amino acid (FAA), aspartic acid, glutamine, taurine and histidine were lower in the HCP group than in the control group ( P  < 0.05). Levels of glutamic acid, serine, asparagine, threonine and total FAA in the HCP group tended to be lower than in the control group ( P  < 0.1). There were no significant differences between the sensory characteristics (juiciness, tenderness, fattiness, flavor and overall acceptability) of the two groups. These results suggest that the use of high levels of protein in concentrate feed during the early fattening stage does not affect the sensory characteristics of Japanese Black beef, but does alter the FAA content.  相似文献

Six ruminally cannulated Wagyu (Japanese Black) steers (average initial bodyweight (BW) 387 ± 29 kg) were used in a split‐plot design experiment, comprising a 3 × 3 Latin square design (whole plot) and a randomized block design (subplot). The whole plot treatments were three different feeding levels of supplemental diet, fed at 0.2, 0.4 and 0.6% of BW, on a dry matter (DM) basis. Subplot treatments were two different supplemental diets: a potato pulp silage‐based diet (PPS) and a grain‐based diet (GRAIN). Chopped, medium‐quality cool‐season grass hay (predominately Timothy, Phleum pratense L) was fed daily at 0.7% BW (on a DM basis) as the basal diet. Each period consisted of 21 d, which included 11 d of adaptation to the diets and 10 d of the collection period. Chromium oxide was used as an indigestible marker. In situ forage degradation was measured using the nylon bag technique. The dry matter intake increased (linear; P < 0.01) as the feeding level increased and was not affected by the diet. Digestibility was not affected by any treatments. The GRAIN diet tended to decrease the rate of in situ forage degradation as the feeding level increased, but this trend was not found in the steers fed the PPS diet. Steers fed the GRAIN diet had a lower (P < 0.1) ruminal pH compared with steers fed the PPS diet. Ruminal pH was not significantly affected by feeding level; however, it was numerically higher for steers supplemented at 0.2% per BW than that for the steers supplemented above 0.4% per BW due probably to the higher starch intake. The total volatile fatty acids concentration numerically increased as the feeding level increased and was not affected by the diet. Increasing the feeding level decreased (linear, P < 0.01) the proportion of acetate. Neither diet nor the feeding level had any effects on the proportion of ruminal propionate. The results suggested that, for steers fed the PPS diet, there are not adverse effects on forage digestion in the rumen that occur as the feeding level is increased.  相似文献

Strip loins from 236 carcasses from crossbred yearling steers were collected on each of 2 slaughter dates (slaughter 1 or 2) to determine the effects of feeding corn or sorghum distillers grains (DG) on beef color, fatty acid profiles, lipid oxidation, tenderness, and sensory attributes. Dietary treatments consisted of a steam-flaked corn (SFC) diet without (control) or with 15% (DM basis) corn dry or wet DG (CDDG and CWDG) or sorghum dry or wet DG (SDDG and SWDG) and alfalfa hay (R). Additional treatments included SDDG or SWDG with no alfalfa hay (NR). In slaughter 2, steaks from steers fed SFC had lesser L*, but greater a* (P < 0.05) values than those from steers fed DG. When comparing sorghum and corn DG steaks, the same color differences were detected. Steaks from steers fed sorghum DG had lower L*, but greater a* (P < 0.05) values than those from steers fed corn DG. Also, L* values in steaks from steers fed SWDG with R were greater (P < 0.05) than those from steers fed SWDG with NR. In slaughter 1, feeding DG increased (P < 0.05) steak n-6 fatty acid concentrations compared with SFC. In both slaughter groups, feeding dry DG increased (P < 0.05) steak linoleic acid concentrations compared with wet DG. In slaughter 2, feeding corn DG diets increased (P < 0.05) linoleic acid concentrations of steaks compared with sorghum DG diets. In addition, increased (P < 0.05) concentrations of alpha-linolenic acid in steaks resulted from feeding SDDG or SWDG with R compared with those sorghum treatments with NR. In each slaughter group, feeding DG increased (P < 0.05) the n-6:n-3 ratio of steaks compared with SFC, and feeding corn DG increased (P < 0.05) this ratio compared with sorghum DG. Furthermore, steaks from steers fed corn DG had greater (P < 0.05) concentrations of trans-vaccenic acid than those from steers fed sorghum DG. In slaughter 1, the CLA isomer 18:2, trans-10, cis-12 was greater (P < 0.05) in steaks from DG diets. On d 1 of retail display, steaks from steers fed SDDG with R in slaughter 2 had greater (P < 0.05) thiobarbituric acid reactive substances values than those from steers fed SDDG with NR. Feeding DG at 15% of the dietary DM did not affect sensory attributes or Warner-Bratzler shear force values of steaks. Feeding DG from either corn or sorghum as either a wet or dry by-product had no effect on beef sensory attributes.  相似文献
