We investigated the effects of long‐term microalgae supplementation (7% in a piglet diet and 5% in a fattening diet) on muscle microstructure and meat quality, including fatty acid composition in female Landrace pigs (n = 31). The major effects were muscle‐specific increases in n‐3 and n‐6 polyunsaturated fatty acids (PUFA) concentrations, resulting in increased accumulation of docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA). Carcass traits and meat quality of longissimus thoracis muscle were not affected by the microalgae diet with the exception of reduced drip loss (p = 0.01) and increased protein proportion (p = 0.04). In addition, the microalgae diet resulted in a shift to a more oxidative myofibre type composition in semitendinosus but not longissimus thoracis muscle. In conclusion, microalgae supplementation offers a unique opportunity to enhance essential n‐3 PUFA contents in pig meat. The results support small but coordinated changes in skeletal muscle phenotypic appearance and functionality.  相似文献

The valorization of natural resources in small ruminants feeding can reduce the cost of feed and produce good meat quality. The objective was to evaluate the effects of local feed resources on the physico‐chemical aspects, the sensorial characteristics and the fatty acid profile of goat kid's meat. Twenty‐six kids are divided in three groups (average body weight = 15.85 kg; age = 4 months). The groups received oat hay (group control C), dried olive leaves + dried Stipa tenacissima (group OL) or grass hay (group Ko). The animals were slaughtered after 90 days of experience, with an approximate final live weight of 18.5 kg. Total solids, pH, fat, crude protein, vitamin, cholesterol and fatty acid contents of meat were determined. The OL group had the highest ultimate pH (6.82 vs. 6.73); cooking loss, gross composition (total solids, protein and fat), cholesterol and colour coordinates (L, a* and b*) were similar among groups. The vitamin E, affected by diet, was higher in group OL than the other groups (3.71 mg/kg vs. 1.32 and 2.17 mg/kg, respectively, for C and Ko groups). Moreover, meat from this group showed the highest saturated fatty acid. Unsaturated fatty acids content was higher in the meat of C and Ko groups. On the other side, polyunsaturated fatty acid level was not affected by the diet treatment. The n6/n3 ratio was significantly affected by the diet; it was lower in meat of groups Ko and OL (3.17 and 3.38 respectively). The feeding effect on sensory quality of meat was not significant.  相似文献

Inactivated mycobacterium phlei (M. phlei) is well known for its immune‐stimulatory functions in humans and livestock, but less information is available about the influence on meat quality of pigs when used as a feed additive. This study was designed to evaluate the effects of inactivated M. phlei on growth performance as well as meat quality of fattening pigs. A total of 240 cross‐bred pigs ([Landrace × Yorkshire] × Duroc) with initial body weight of 80.14 ± 0.29 kg were randomly allocated to five treatments, each of which consisted of eight replicates with 6six pigs per replicate. The basal diet supplemented with five levels of inactivated M. phlei preparations (0, 3.5 × 109 [0.1% w/w], 7 × 109 [0.2%], 1.4 × 1010 [0.4%] or 2.1 × 1010 [0.6%] colony‐forming units/kg) was respectively fed to the control group and four treatment groups for 30 days. Adding 0.4% of inactivated M. phlei to diet increased the average daily feed intake and average daily gain of pigs. Importantly, intramuscular fat percentage in the Longissimus dorsi (LD) was increased by feeding diet containing 0.2%, 0.4% and 0.6% of inactivated M. phlei, despite the pH value, drip loss, cooking loss and filter paper fluid uptake not being influenced. Analysis of the fatty acid components showed that some saturated fatty acids were decreased in LD after feeding inactivated M. phlei, but some monounsaturated fat acids (MUFAs) and polyunsaturated fatty acids were increased (PUFAs), which induced the total contents of MUFAs and PUFAs were improved. RT‐PCR assay revealed that feeding inactivated M. phlei up‐regulated genes implicated in fat metabolism in muscle, including ELOVL6, FASN, SCD1 and H‐FABP. This study revealed that feeding inactivated M. phlei not only increased growth performance of fattening pigs, but also improved the meat quality by increasing intramuscular fat content, thus inactivated M. phlei probably has high utilization value in modern pig production.  相似文献

A study was conducted to determine the effect of two levels of linoleic acid (LA) intake at either high or low α‐linolenic acid (ALA) intake on their conversion and subsequent deposition into long‐chain (20–22 C‐atoms) polyunsaturated fatty acids (LC PUFA) in muscle and backfat in growing pigs. In a 2 × 2 factorial arrangement, 32 gilts from 8 litters were assigned to one of four dietary treatments, varying in LA and ALA intakes. Low ALA and LA intakes were 0.15 and 1.31 g/(kg BW0.75/day), respectively, and high ALA and LA intakes were 1.48 and 2.65 g/(kg BW0.75/day) respectively. There was a close positive relation between intake of ALA and the concentration of ALA in backfat and in intramuscular fat. Dietary ALA did not affect the concentration of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), but increased docosapentaenoic acid (DPA) in backfat. High ALA intake did not significantly affect DHA but significantly increased EPA, 20:3 n‐3 and DPA concentrations in intramuscular fat. The n‐3 LC PUFA proportion in backfat was increased from approximately 1–3%, which may be useful to enrich meat with these fatty acids. The effect of ALA intake on n‐3 LC PUFA was suppressed by LA intake. Dietary ALA suppressed the concentration of n‐6 LC PUFA in blood plasma by more than 50%. When compared at equal incremental dose, the inhibiting effect of ALA on blood arachidonic acid was stronger than the stimulating effect of LA as precursor.  相似文献

Focus on the enrichment of eggs and poultry meat with polyunsaturated fatty acids has increased given their important roles in the human health. The inclusion of polyunsaturated fatty acids (especially n‐3 fatty acids, n‐3 FA) is achieved by different biological methods. The objective of this study was to investigate the effects of inclusion of different oils into the feed on the production performances and fatty acids composition of the meat in Taihe Silky Fowl. A total of 80 fowls were selected at 8 weeks and randomly divided into four groups and fed with basal diet, basal diet + 4% fish oil, basal diet + 4% soybean oil and basal diet + 4% palm oil within 3 weeks respectively. The results showed that: the fowls fed with the diet inclusion of 4% fish oil had higher total gain, average daily gain, the second and the third week average daily gain than those in control group (p < 0.05). Also, inclusion of fish oil could improve the content of C22:5 n‐3 and C22:6 n‐3 polyunsaturated fatty acids in the meat significantly compared with the other three groups (p < 0.01). Meanwhile, C18:3 n‐3 and C18:4 n‐3 polyunsaturated fatty acids were also higher than in the other three groups (p < 0.05 and 0.01). Oils Supplementation could enhance C14:0 and C16:0 (p < 0.05) level, but they did not affect the total saturated fatty acids in the meat. Compared with the control group, fish oil inclusion could lower the C18:2 n‐6 level, higher the C18:3 n‐6, C22:4 n‐6 and C22:5 n‐6 polyunsaturated fatty acids in the meat (p < 0.05). Moreover, diets supplied with 4% fish oil reduced the total n‐6 polyunsaturated fatty acids level and enhanced the total n‐3 polyunsaturated fatty acids level in the meat, which resulted in that the ratio of n‐3/n‐6 was improved, and could meet the need of human body.  相似文献

本研究旨在观察饲粮中添加不同比例多花黑麦草(Lolium multiflorum Lam)对鹅肉脂肪酸组成影响,揭示牧草摄食量与鹅肉α-亚麻酸(ALA)相对含量之间的关系。选用50羽14日龄长乐灰鹅,分成5个处理,饲养期60 d。各处理饲粮中黑麦草干物质比例分别为: 0.00%(CK),5.42%,11.92%,19.52%和27.24%。结果表明:随着饲粮中黑麦草比例的提高,鹅肉ALA相对含量显著增加,试验各组分别比对照组增加了86.90%,197.24%(P<0.05),393.10%(P<0.05)和304.83%(P<0.05);PUFA/SFA显著上升(P<0.05);n-6PUFA/n-3PUFA显著下降(P<0.05)。鹅肉ALA相对含量与饲粮中黑麦草比例的曲线回归模型方程为:y=0.270+0.106x-0.002x2(F=22.99**)。当饲粮中黑麦草的干物质比例在0%~26.50%时,鹅肉ALA的含量呈上升趋势;当黑麦草的比例超过26.50%时,鹅肉ALA的含量转而呈下降趋势。说明黑麦草中的ALA能够通过摄食消化过程沉积到鹅肉中。  相似文献

本试验旨在研究饲粮添加大豆素对湘中黑牛育肥牛胴体性能和肉品质的影响。选择14头健康、体重[(450±20)kg]相近、2岁左右阉割湘中黑牛,随机分成2组,每组7头,对照组饲喂基础饲粮,试验组饲喂基础饲粮+500 mg/kg大豆素。试验期为120 d。结果表明:与对照组相比,1)添加大豆素对宰前活重、热胴体重、屠宰率无显著影响(P0.05),胴体的脂肪含量、背膘厚有降低趋势,但差异不显著(P0.05);2)添加大豆素显著提高了背最长肌的粗脂肪含量及大理石花纹评分(P0.05),分别提高了8.34%、1.93分,并显著降低了排酸24 h肌肉的p H和水分含量(P0.05),显著增加了肌肉的红度值(P0.05);3)添加大豆素显著降低了血清中葡萄糖、尿素氮、甘油三酯、总胆固醇、非酯化脂肪酸、高密度脂蛋白胆固醇、低密度脂蛋白胆固醇的浓度(P0.05);4)添加大豆素分别显著提高和降低了背最长肌的异柠檬酸脱氢酶活性和葡萄糖-6-磷酸脱氢酶活性(P0.05)。结果提示,饲粮添加大豆素能够影响育肥牛的脂类代谢,促进肌肉脂肪沉积,改善牛肉的大理石花纹和品质。  相似文献

Fatty acid composition, marbling score and melting point data collected between 1994 and 1996 were analysed. The data were from the adipose tissue of 764 Angus, Belgian Blue, Hereford, Jersey, Limousin, South Devon and Wagyu crossbred cattle slaughtered after lot‐feeding at 500 days of age. The aim was to investigate sire‐breed differences and to estimate heritability and genetic and phenotypic correlations. Significant breed differences were found: Jersey crosses had the highest marbling score and Belgian Blue crosses had the lowest. Limousin crosses had the highest melting point and Jersey crosses the lowest. South Devon crosses had the highest proportion of stearate and Jersey crosses the lowest. Desaturation indices in C16 and C18 fatty acids were highest in Jersey crosses and lowest in Limousin and South Devon crosses. In contrast, there were no breed differences in the proportions of palmitate, oleate, total saturated, total mono‐unsaturated fatty acids and elongation index. Heritability estimates of individual fatty acids and their summations, melting point and marbling were low to moderately low (0.05–0.27). Strong genetic correlations of melting point and desaturation index in C16 fatty acids (‐0.93), melting point and stearate (0.62), marbling and stearate (‐0.71) and marbling and desaturation index in C18 fatty acids (0.62) were observed. Phenotypic correlation were generally low. The results imply that fatty acids in the adipose tissue of lot‐fed cattle have a moderately low heritability, hence genetic progress might be slow.  相似文献

The present study investigated the influence of feeding a large amount of grass hay to steers from the early to middle fattening period on growth, carcass characteristics, and meat characteristics. Steers were randomly divided into grass hay‐fed (GHF, n = 6) and concentrate‐fed (CF, n = 6) groups. The dressed weight of the GHF steers was lower than that of the CF steers, but the final body weight was not significantly different between the groups. The GHF steers had decreased subcutaneous fat and rib thickness compared with the CF steers. Lipid content, monounsaturated fatty acids, and drip loss in the muscles were lower in the GHF steers than in the CF steers. Furthermore, n‐3 polyunsaturated fatty acids were higher in the GHF steers compared with the CF steers. The GHF steers had lower body weight during the middle fattening stage, which may have occurred as a result of muscle growth suppression caused by increased Myostatin expression; an increase in daily gain during the finishing period may have occurred as a result of muscle growth activation caused by decreased Myostatin expression. Feeding steers a grass hay‐based diet during the early fattening period possibly maintains the quantitative productivity of beef similarly to feeding a concentrate‐based diet.  相似文献

This review summarises the main factors that influence meat production and quality in fat-tailed Barbarine (FTB) lambs. As a general feature, FTB lamb's growth is moderate, and the average daily gain ranges between 100 and 350 g. The carcass being relatively fatty, carcass fat content varies from 10% to 32%; white fat and rose meat are often dominant in these carcasses. The meat fatty acid profile of this fat-tailed breed is similar to that of thin-tailed ones, with a prevalence of palmitic, stearic and oleic acids. The order of dissected adipose tissues accumulation, estimated by allometry coefficients, is in agreement with observations in thin-tailed sheep. However, tail fat allometry coefficient is closer to kidney fat values rather than to the subcutaneous one. Concerning effects of feed level, growth of FTB lambs fed silage is higher than those fed oat hay. With moderate concentrate supply, FTB lambs' growth is more pronounced on pasture diet than on the feedlot (FL) diet. Furthermore, at similar slaughter weights, carcasses of lambs fed pasture diet have less tail and carcass fat than those from lambs fed FL diet (5% and 18% vs. 9% and 24% for grazing and FL lambs, respectively). No difference in fat colour, fat firmness or cooked meat flavour is observed between carcasses obtained at different slaughtering weight (i.e. from 25 to 35 kg). The tail docking of FTB improved lambs' growth particularly before weaning. Its effect on carcass composition and fat proportion depends on stage of slaughtering and type of fattening diet. For suckled lambs (4 months), the docking resulted in the lower carcass fat weight (and proportion), while for fattened lambs, carcass composition was similar for all types of lambs. Overall, FTB lambs always grow slower than Noire de Thibar lambs. This is particularly pronounced during the fattening phase. Then, for FTB breed, the possibilities to obtain heavy carcasses are at risks of fat accumulation, 22.8% vs. 14.4% for FTB and Noire de Thibar thin-tailed lambs, respectively. However, the main advantage of FTB breed is that adults are well adapted to food scarcity and may produce lambs even under harsh conditions.  相似文献

This study investigated whether offspring from n‐3‐supplemented breeders have an enhanced performance and immune organ weight when fed a post‐hatch n‐3‐enriched diet in comparison with their control‐fed counterparts and the importance of timing of omega‐3 supplementation. Therefore, 480 Ross‐308 broiler breeder hens were fed one of four different diets (120/treatment). The control diet (CON) was a basal diet, rich in n‐6 fatty acids (FA). The three other diets were enriched in n‐3 FA, formulated to obtain a different EPA/DHA ratio of 1/1 (EPA = DHA), 1/2 (DHA) or 2/1 (EPA). At 33 weeks of age, eggs were incubated to obtain 1440 offspring. They were set up according to their maternal diet and sex in 48 pens of 30 chicks each (12 pens per maternal treatment: six male and six female). Half of the offspring were given a post‐hatch control diet, whereas to other half received an n‐3‐supplemented diet. Zootechnical performance was followed for starter, grower and finisher phase, and at the end of each phase two, chicks per pen were sacrificed to determine the weight of the immune organs. No interaction was found between maternal and post‐hatch n‐3 treatment for zootechnical performance. An interaction arose between the maternal and post‐hatch n‐3 supplementation for proportional bursa weight at day 1 and day 14 and proportional liver weight at day 14, but effects on immune organ weight were rather limited. Offspring post‐hatch n‐3 supplementation did not enhance maternal n‐3 supplementation.  相似文献

The study evaluated the effect of gender status on carcass and meat quality of feedlot Angus × Nellore cattle. A total of 176 cattle, 20 months old, were confined for 190‐days and assigned to four treatments: bulls, immunocastrated, steers, and heifers. Bulls had greater rib eye area and HCW (p = 0.0001). Heifers had increased fat thickness (p = 0.0001). Steers and heifers had higher marbling scores (p = 0.0001). There was interaction between gender and aging time for Warner‐Bratzler Shear Force (p = 0.0002), L* (p = 0.0118), and b* (p = 0.0113) values of beef. The sensory panel results showed that beef from bulls had the lowest consumer overall acceptance (p = 0.0278). Especially, regardless tenderness, steers and immunocastrated beef were considered tender, independent of aging time. Beef produced by heifers, steers, and immunocastrated is considered to be of higher quality than bulls. Thus, it is may be an interesting alternative to produce high‐quality beef than bulls, to attend the consumer demand for high‐quality products. Additionally, the low fatty acids n6 levels and low n6:n3 ratio, high levels of CLA, MUFAs, and oleic acid suggests that the heifer meat is favorable for human health.  相似文献

An in vivo experiment was conducted to compare the effects of dietary supplementation with oleuropein and/or α‐tocopheryl acetate on growth performance, serum lipid concentrations and lipid oxidation of Japanese quail meat during refrigerated storage. Performance and slaughtering parameters were not affected by dietary treatments. The diets supplemented with oleuropein at the levels of 150 or 200 mg/kg were more effective in delaying lipid oxidation in breast and thigh meats compared with the control diet. The dietary inclusion of neither vitamin E nor oleuropein at different levels did not significantly affect the fatty acid compositions of the breast meat compared with the control diet. The diets supplemented with oleuropein at the levels of 150 or 200 mg/kg had significantly the highest polyunsaturated fatty acid and omega‐3 fatty acid contents in thigh meat compared with the vitamin E diet. The ratio of omega‐6 fatty acids to omega‐3 FAs in thigh meat of quails fed diet supplemented with vitamin E at the level of 200 mg/kg was equivalent to those of quails fed the diets supplemented with oleuropein at the levels of 100 and 150 mg/kg . The results showed that the dietary oleuropein supplementation at 150 mg/kg level may be used in quail diets enriched with the polyunsaturated fatty acids of vitamin E as a natural antioxidant.  相似文献

The present experiment tested a dietary supplementation with linseed oil and selenium to growing rabbits. The basal diet (B) contained 3% sunflower oil, while it was substituted with 3% linseed oil in the experimental feed (S). The selenium (Se) content of the two diets was 0.10 vs. 0.46 mg/kg. Rabbits were fed with B diet from the age of 18 days. One group was fed with the B diet until 11 weeks of age (group B), whereas the experimental groups were fed with S diet for 1, 2, 3 or 4 weeks (groups S1, S2, S3 and S4, respectively), before slaughtering (11 weeks of age). Live performance and carcass traits of rabbits, fatty acid (FA) profile and selenium content of their hind leg (HL) and Longissimus thoracis et lumborum (LTL) meat were considered in this study. In addition, the effect of two different cooking methods on the nutritional value of the enriched HL meat was also assessed. The tested dietary supplementation only minimally affected the live performance and carcass traits of rabbits. The S supplementation significantly reduced the Σ n‐6 FA and increased the Σ n‐3 FA of the HL meat and LTL meat, compared to the B diet (p < 0.001); thus, n‐6/n‐3 ratio was improved (p < 0.001). In addition, HL meat and LTL meat of S fed rabbits were significantly enriched in Se reaching a twofold increase in both meat cuts (p < 0.01). Therefore, the S supplementation improved the functional value of the rabbit meat. The heat treatment affected cooking loss, Se and vitamin E contents as well as the oxidative status of the HL meat (p < 0.001), with the different cooking methods providing different results. In addition, even if the beneficial C20:5 n‐3 and C22:6 n‐3 decreased with cooking, the n‐6/n‐3 ratio remained unaffected.  相似文献

Beef marbling is an important trait of meat quality and beef marbling influences the tenderness and flavor of beef, which contributes directly to the value of beef especially in the Japanese market. The lipid content of beef depends on the strain, sex, diet and fattening period of the animal. Japanese Black cattle (Wagyu) are well‐known for their ability to produce marbling beef and this is a popular strain in Japan. The development of beef marbling was closely associated with an increase in the number of adipocytes, that is, adipocyte differentiation in the skeletal muscle. This review article describes our experiment and related reports on micronutrients, especially vitamins and minerals, affecting adipogenesis in beef cattle. We pursue the possibility that manipulating the level of dietary micronutrients may become a new technique to promote beef marbling.  相似文献

为探讨育肥猪出栏前不同时间去掉预混料对胴体和肉品质的影响,选用180头体重为80kg左右的杜长大三元杂交育肥猪,随机分成3组(对照组、试验1组、试验2组),每组3个重复(圈),每重复(圈)20头。对照组饲喂含有4%商业预混料的日粮,试验1组宰前2周饲粮中去掉预混料(用沸石粉代替预混料),试验2组宰前4周饲粮中去掉预混料(用沸石粉代替预混料)。屠宰后测定并比较各组猪只的胴体品质和肉品质指标。结果表明:宰前不同时间去掉预混料对猪胴体品质、肉品质均无显著影响(P>0.05)。研究结果为减少生猪养殖过程中的粪污排放对环境的污染以及降低生产成本提供了有益参考。  相似文献

This study aims to investigate the effect of soy lecithin on the total cholesterol content, the fatty acid composition and carcass characteristics in the Longissimus dorsi in Hanwoo steers. Hanwoo steers (24 head) were fed two diets: Control (CON) (concentrate + alcohol‐fermented feed (AFF)) and soy lecithin treatment (CON + soy lecithin at 0.5% of the AFF). Soy lecithin treatment increased average daily gain, serum concentrations of triglyceride, total cholesterol and high‐density lipoprotein‐cholesterol in the blood. A lower cholesterol concentration was found in the Longissimus dorsi for the soy lecithin diet compared to the CON diet. With respect to the marbling score and quality grade of Longissimus dorsi, soy lecithin supplementation significantly increased the C20:5n3, C22:4 and polyunsaturated fatty acids contents compared to the CON diet. Soy lecithin supplementation would alter the total cholesterol content, polyunsaturated fatty acid profile and meat quality of Longissimus dorsi.  相似文献

The dietary use of phytochemicals may contribute to improving lamb meat preservation under different packing atmospheres. The objective was to test the preservative potential of a dietary rosemary extract (RE) containing carnosic acid and carnosol (at 1:1 w:w) in chilled lamb patties packed in air, vacuum and 70/30 O2/CO2 modified atmosphere. Three experimental diets, (C) control, (RE) C plus 600 mg RE/kg feed and (E) C plus 600 mg vitamin E/kg, were given to fattening lambs. Unlike the C‐ and E‐diets, the RE‐diet had a double antimicrobial and antioxidant effect on the lamb patties packed in all the environments studied. The RE‐diet inhibited total viable and lactic acid bacteria and Enterobacteriaceae, but not Brochothrix thermosphacta and Pseudomonas spp. and also improved oxidative stability (measured as CIE Lab color and thiobarbituric reagent substances), appearance and odor. The E‐diet had a better antioxidant effect than the RE‐diet but had no antimicrobial effects. Escherichia coli and Salmonella spp. were not detected. The dietary use of RE was most suitable for preserving vacuum‐packed meat, which is more exposed to spoilage by anaerobic bacteria, while the use of dietary vitamin E allowed better control of oxidation in the meat packed in a bacteriostatic and oxidizing environment.  相似文献

ABSTRACT

1. Although fattening dual-purpose types or male layer hybrid chickens appears more ethical than the common practice of culling day-old male layer chicks, the lower feed efficiency of these birds raises concerns. Replacing feed ingredients that compete with food production by those of lower value for human nutrition would be beneficial.

2. Lohmann Dual (LD), a modern dual-purpose type, Lohmann Brown (LB), a male layer hybrid, and Hubbard JA 957 (HU), a slow-growing broiler type, were fattened for nine weeks on two diets (control or ?20% crude protein; n = 6 × 12 birds). Growth, carcass and meat quality were analysed.

3. Growth performance of HU exceeded that of LD and especially of LB. The growth depression caused by the low-protein diet fed to LD (?7%) was only half of that found in HU (?13%). The LD fed the control diet had the same feed efficiency as the HU fed the low-protein diet. Even the LB had a lower performance and feed efficiency with the low-protein diet in growth. There was a gradient in carcass properties (weight, dressing percentage, breast meat yield, breast proportion and breast angle) from HU to LD to LB, with some additional adverse effects of the low-protein diet especially in HU. There were some breed differences in fatty acid profile in the intramuscular fat.

In conclusion, the dual-purpose type used complied with regulations for Swiss organic poultry systems in terms of growth rate and was found to respond less when fed a low-protein diet than the slow-growing broiler type. The LB males were inferior in all growth and carcass quality traits. Seventy-one bulls representing six breed types: Brahman (BR), F1-Romosinuano (F1ROMO), F1-Limousin (F1LIMO), F1-Angus (F1ANG), F1-Gelbvieh (F1GELB) and ¾ Bos taurus (BT) were used to study the effect of breed type and supplementation on carcass traits and meat quality. Slaughter weight endpoint was at approximately 500 kg. In the non-supplemented group, carcasses of F1ANG and BR surpassed the 56% dressing value, whereas those from F1ROMO, F1LIMO and BT dressed less than 56%. However, F1ROMO and BT groups improved their carcass dressing in two percentage points approximately (P < 0.05), with supplementation. Carcass weight was only affected by supplementation treatments (P < 0.05). At slaughter, the supplemented group dressed higher (56.1%) and produced heavier, less mature, better shaped carcasses than the control group. F1 GELB and F1LIMO showed larger (> 68 cm2) longissimus muscle area (LMA) whereas F1ANG and BR carcasses had better external fat finishing scores and thicker 12th-rib fat thickness (< 1.3 mm). Breed types significantly differed in the yield of most-valuable boneless cuts. Carcasses from supplemented bulls yielded 0.8% more trimmed fat and 1.5% less total retail product.The supplementation × breed type interaction was significant for Warner–Bratzler shear force (WBSF) and overall tenderness. Steaks from BR, F1GELB and BT resulted with higher WBSF values and lower scores for overall tenderness when animals were supplemented (P < 0.05) whereas the highest tenderness score and lowest WBSF value were obtained by non-supplemented BT bulls. The small differences found between BR and crossbred types allows for describing a similar carcass/beef quality performance under the present grazing conditions. Supplementation on pasture, as designed herein, proved to be a useful practice to improve carcass dressing and overall carcass finish but had detrimental effects on bull meat quality. Other management strategies such as castration, and (or) implants, combined with alternate fattening regimes on tropical savannahs, must be designed to improve meat quality of Zebu-influenced bulls.  相似文献
