  1. A 42-d trial was conducted to investigate the effect of adding a synbiotic supplement to diets containing two different types of fat on performance, blood lipids and fatty acid (FA) composition and oxidative stability of breast and thigh meat in broilers.

  2. A total of 800 one-d-old male broiler chickens were randomly assigned into 1 of 8 treatments with 4 replicates of 25 birds per treatment. The experiment consisted of a 4 × 2 factorial arrangement of treatments including 4 concentrations of synbiotic (0, 0.5, 1 or 1.5 g/kg diet) and 2 types of fat [sunflower oil (SO) or canola oil (CO)] at an inclusion rate of 50 g/kg diet.

  3. Dietary fat type did not affect body weight gain (BWG) or feed conversion ratio (FCR) during the overall experimental period (0–42 d). However, fat type modified serum lipid profile and FA composition and 2-thiobarbituric acid-reactive substances (TBARS) content in breast and thigh meat.

  4. The addition of synbiotic to the diet linearly improved overall BWG and FCR and also decreased serum cholesterol and low-density lipoprotein cholesterol concentrations. The TBARS value in thigh meat after 30 d of storage at 4°C was linearly decreased as the synbiotic inclusion concentrations in the diets increased. Dietary synbiotic also decreased the proportion of monounsaturated fatty acids and increased n-6 polyunsaturated fatty acid (PUFA) concentration in thigh meat, whereas the FA profile of breast meat was not affected by synbiotic supplementation. Moreover, the PUFA/SFA ratio in the breast meat was linearly increased when synbiotic was included in the CO-containing diets.

  5. In conclusion, the addition of synbiotic to broiler diets had a positive effect on growth performance, blood lipid profile and meat quality. The results also support the use of synbiotic to increase the capacity of canola oil for enhancing PUFA/SFA ratio of breast meat in broilers.

Two experiments were performed to assess the effect of different amounts of dietary polyunsaturated fatty acids (PUFA) on fatty acid composition of chickens. The contribution of de novo fatty acid synthesis to fatty acid profile was also estimated. In trial 1, different fat sources were blended in different ratios allowing a gradient of dietary PUFA (from 15 to 61 g/kg), keeping added fat constant (9%). In trial 2, PUFA-rich oil was added at increasing inclusion rates (2, 4, 6 and 8%), achieving a dietary PUFA content ranging between 27 and 59 g/kg. Increasing dietary PUFA inclusion resulted in an increase in PUFA deposition, with higher efficiency when dietary fat also provided saturated (SFA) and monounsaturated (MUFA) fatty acids (trial 1). Increasing dietary PUFA in both trials resulted in a decrease in SFA and MUFA concentration in the whole body. The estimated deposition of fatty acids from de novo synthesis was reduced when dietary fat content increased from 0 to 10%, varying between 35.34 and 17.66% for SFA and between 52.70 and 7.01% for MUFA in the whole body. The greater variation range for the MUFA supports the existence of a mechanism maintaining the SFA: (MUFA + PUFA) ratio within a specific range in biological membranes.

Our objective was to determine the effect of oil supplementation of pasture fed, beef cattle on the fatty acids, particularly CLA and PUFA, of muscle and s.c. adipose tissue. Forty-five Charolais crossbred heifers were blocked on BW and randomly assigned to 1 of 3 dietary regimens in a randomized complete block design (n = 15). The 3 treatments were: unsupplemented grazing (GO), restricted grazing plus a sunflower oil-enriched ration (SO), or restricted grazing plus a linseed oil-enriched ration (LO). Heifers were fed the experimental diets for approximately 158 d. Samples of LM muscle and s.c. adipose tissue were taken postmortem, the muscle fat was separated into neutral lipid and polar lipid (no separation was performed on the s.c. adipose tissue), and the fatty acid profile was determined by GLC. No effect of dietary treatment on carcass weight or total fatty acid concentration (mean 2,571 mg/100 g of muscle) in muscle fat was detected. Heifers offered SO had a greater (P < 0.001) proportion of CLA and C18:1trans-11 (1.90 and 9.35 vs. 1.35 and 6.89 g/100 g of fatty acids, respectively) in neutral lipid of muscle fat compared with those offered LO, which had a greater proportion of CLA and C18:1trans-11 than heifers offered GO (0.78 and 3.37 g/100 g of fatty acids, respectively). Similar effects were observed in the polar lipid and s.c. lipid. The PUFA:SFA ratio was greater in muscle fat and s.c. adipose tissue from supplemented heifers than in those offered GO (P < 0.001). Compared with LO, the PUFA:SFA ratio was greater (P < 0.05) in muscle fat of heifers offered SO, but there was no difference between SO and LO for this ratio in s.c. adipose tissue. The n-6:n-3 PUFA ratio was similar in muscle and s.c. adipose tissue for GO and LO, but it was greater (P < 0.05) for SO. It is concluded that supplementation of pasture-fed cattle with plant oil-enriched concentrates resulted in an increase in beef fat of some fatty acids considered to be of benefit to human health. Concentrates enriched with sunflower oil were more effective in increasing the CLA concentration, whereas linseed oil-enriched concentrates resulted in a more favorable n-6:n-3 PUFA ratio. The relevance to human health of the associated increase in C18:1trans-11 merits investigation.

The experiment was carried out to study the composition and contents of fatty acids of Nanyang Black pig, and to provide a theoretical basis for the protection and exploitation of local pig genetic resources in China. 12 Nanyang Black pigs and 12 Large White pigs were chosen, and the composition and contents of fatty acids in longissimus dorsi muscle were measured, and the quality of fatty acids was comprehensive evaluated from nutrition, health, flavor and storage aspects. Monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), 12-16 carbon saturated fatty acids (SFA1), other saturated fatty acids (SFA2), unsaturated fatty acids (UFA), saturated fatty acids (SFA), SFA2/SFA1, MUFA/PUFA, essential fatty acid (EFA), conjugated linoleic acids (CLA), PUFA/SFA and ω-6 PUFA/ω-3 PUFA were used as the indexes of multiple comparison. The results showed that there were 30 kinds of fatty acids were detected and 23 of them had significant or extremely significant differences between the two pig breeds (P<0.05;P<0.01). Nanyang Black pig had higher values of above measured indexes than that of Large White pig in addition to SFA2/SFA1 and ω-6 PUFA/ω-3 PUFA. 11 indexes such as SFA1,MUFA,PUFA,SFA,UFA, UFA/SFA,SFA2/SFA1,PUFA/MUFA, EFA,CLA, PUFA/SFA and ω-6 PUFA/ω-3 PUFA differed significantly or extremely significantly between the two pig breeds (P<0.05;P<0.01), while SFA2 and PUFA/MUFA had no significant differences between the two pig breeds (P>0.05). In conclusion, the fatty acids of Nanyang Black pig were significantly better than that of Large White pig.

The objective of this study was to compare fatty acid weight percentages and cholesterol concentrations of longissimus dorsi (LD), semitendinosus (ST), and supraspinatus (SS) muscles (n = 10 for each) of range bison (31 mo of age), feedlot-finished bison (18 mo of age), range beef cows (4 to 7 yr of age), feedlot steers (18 mo of age), free-ranging cow elk (3 to 5 yr of age), and chicken breast. Lipids were analyzed by capillary GLC. Total saturated fatty acids (SFA) were greater (P < 0.01) in range bison than in feedlot bison and were greater (P < 0.01) in SS of range beef cattle than in feedlot steers. Muscles of elk and range bison were similar (P > 0.05) in SAT. In LD, polyunsaturated fatty acids (PUFA) were highest (P < 0.01) for elk and range bison and lowest (P < 0.01) for feedlot steers within each muscle. Range bison and range beef cows had greater (P < 0.01) PUFA in LD and ST than feedlot bison or steers, respectively. Range-fed animals had higher (P < 0.01) n-3 fatty acids than feedlot-fed animals or chicken breast. Chicken breast n-6 fatty acids were greater (P < 0.01) than for muscles from bison, beef, or elk. Elk had higher (P < 0.01) n-6 fatty acids than bison or beef cattle; however, range-fed animals had higher (P < 0.01) n-6 fatty acids than feedlot-fed animals in ST. Conjugated linoleic acid (CLA, 18:2cis-9, trans-11) in LD was greatest (P < 0.01) for range beef cows (0.4%), and lowest for chicken breast and elk (mean = 0.1%). In ST, CLA was greatest (P < 0.01) for range and feedlot bison and range beef cows (mean = 0.4%) and lowest for elk and chicken breast (mean = 0.1%). Also, SS CLA was greatest (P < 0.01) for range beef cows (0.5%) and lowest for chicken breast (0.1%). Mean total fatty acid concentration (g/100 g tissue) for all muscles was highest (P < 0.01) for feedlot bison and feedlot cattle and lowest (P < 0.01) for range bison, range beef cows, elk, and chicken. Chicken breast cholesterol (mg/100 g tissue) was higher (P < 0.01) than LD and ST cholesterol, which were lowest (P < 0.01; 43.8) for range bison and intermediate for the other species. Cholesterol in SS was highest (P < 0.01) for feedlot bison and steers, which were similar to chicken breast (mean = 61.2 vs 52.8 for the mean of the other species). We conclude that lipid composition of bison muscle varies with feeding regimen, and range-fed bison had muscle lipid composition similar to that of forage-fed beef cows and wild elk.

The Western diet is characterized by a high intake of SFA relative to PUFA, and the consumption of n-3 PUFA is decreased relative to n-6 PUFA. Therefore, there has been much interest in recent years in ways to manipulate the fatty acid composition of meat. The objective of this work was to determine the effects of dietary extruded linseed, an n-3 PUFA source, on growth performance, carcass composition, meat quality, and oxidative stability of pigs slaughtered at 111.0 (+/-4.8) kg of BW and 160.0 (+/-9.2) kg of BW. The association of these factors with BW at slaughter was also examined. Forty barrows, 78.1 (+/-1.75) kg of initial BW, were fed a control diet (2.5% sunflower oil) or a linseed diet containing 5% of whole extruded linseed. Both diets contained 170 mg of vitamin E and 250 mug of selenium. Eight pigs from each dietary treatment were slaughtered at 110 kg of BW and the others at 160 kg of BW. There was no dietary effect (P > 0.05) on growth, carcass characteristics, meat quality, or the activity of malic enzyme in LM and backfat. Inclusion of linseed increased (P < 0.05) n-3 PUFA content in both LM and backfat and decreased the n-6:n-3 PUFA ratio from 12 to 4.5 in LM, and from 11 to 3 in backfat. Liveweight at slaughter significantly influenced carcass characteristics, meat quality, total lipid and oxidative stability of LM, malic enzyme activity in adipose tissue, and fatty acid content of LM and backfat. This study shows that the inclusion of linseed in swine diets may improve the fatty acid profile of pork without deleteriously affecting oxidation or color stability. Thus, such a feeding practice may improve human health based on the n-6:n-3 PUFA ratio recommended for the human diet.

1. The effect of dietary fat and vitamin E supplementation on quality attributes (drip loss, oxidative stability, sensory quality) in chicken meat and meat products was investigated. Broiler chicks were fed on diets containing tallow (60 g/kg) or olive oil (60 g/kg) at a basal (30 mg/kg diet) or supplemental (200 mg/kg diet) concentration of alpha-tocopheryl acetate for 8 weeks. The alpha-tocopherol content and fatty acid composition of breast and thigh meat was determined. Drip loss was determined in breast fillets. Lipid oxidation (thiobarbituric acid-reacting substances/TBARS) and sensory quality (warmed-over flavour development/WOF) were assessed in minced thigh meat during storage. 2. Dietary olive oil increased the ratio of monounsaturated to saturated fatty acids (MUFA/SFA) in the diets. In breast and thigh, this resulted in approximately a two-fold increase in the MUFA/SFA ratio. Supplemental alpha-tocopherol increased the alpha-tocopherol content of muscles. 3. Dietary fat did not influence drip loss in thawed breast fillets during refrigerated storage, but supplemental alpha-tocopherol reduced drip loss. 4. TBARS and WOF development in minced thigh meat patties were also reduced by supplemental alpha-tocopherol following frozen storage, or cooking and refrigerated storage. Storage stability was not adversely affected by dietary fat. 5. Overall, the results showed that increasing the monounsaturated profile of chicken meat lipids did not adversely affect quality characteristics. Dietary alpha-tocopherol supplementation was a more important factor in the determination of broiler meat quality.

The influence of fish oil (highly unsaturated) and beef tallow (highly saturated) with vitamin E (100 IU/kg) supplementation on the antioxidant status of broiler chicken cockerels was investigated. Chicks were fed a control diet with no added fat, 40 g/kg each of fish oil and beef tallow diets, respectively, from 11 to 42 days of age. Tocopherol concentration and the rate of lipid peroxidation, thiobarbituric acid reactive substance (TBARS) in liver, fatty acid composition of the liver lipids, blood serum total antioxidant status (TAS), and reduced glutathione (GSH) content were determined. Vitamin E supplementation of the diet increased liver alpha-tocopherol content in chicks regardless of the type of dietary fat. Fish oil diet resulted in higher liver TBARS value while beef tallow diet showed lower values compared to the control diet. Vitamin E supplementation reduced liver TBARS as well as serum GSH, and raised serum TAS for all diets. Serum GSH was the same for vitamin E supplemented diets regardless of the fat supplement. Fish oil diets resulted in a significant increase in hepatic lipid n-3 PUFA content. A significant positive correlation was found between liver TBARS and n-3 PUFA content. No relationships were established, however, between liver TBARS and n-6 PUFA or saturated fatty acids. The results suggest that feeding oils rich in n-3 PUFA increases tissue concentration of these fatty acids, consequently increasing tissue lipid peroxidation and reducing the antioxidative status of broiler chickens. Supplementing high levels of vitamin E with such oils may increase tissue oxidative stability. Serum TAS or GSH may be used as a measure of antioxidative status in chickens.

1. Three experiments were conducted with broiler chickens using hypobaric chambers and control pens, feeding diets containing 25 or 50 g flax oil/kg food or control diets with equivalent amounts of animal/vegetable (A/V) blend oil for 4 weeks. The effect of these diets on haematological variables and the extent of right ventricular hypertrophy (RVH) leading to ascites was determined. 2. Overall growth rate was not consistently affected by dietary treatment, although feeding the 25 g flax oil/kg diet reduced weight gain in week 4 of one experiment. Feeding the 50 g flax oil/kg diet but not the 25 g flax oil/kg diet reduced RVH in birds exposed to hypobaric conditions compared to feeding control diets. 3. Feeding the 50 g flax oil/kg diet under hypobaric conditions reduced the haematocrit and haemoglobin content, increased the erythrocyte deformability and the proportion of unsaturated fatty acids in the erythrocyte membranes, and reduced the whole blood viscosity compared to feeding control diets. These effects were not seen when the 25 g flax oil/kg diet was fed. The ratio of n-3 to n-6 fatty acids in erythrocyte membranes was increased in the 50 g flax oil/kg treatment group compared to controls. 4. Including 50 g flax oil/kg broiler diet reduces RVH in broiler chickens. This may be attributable in part to an increase in erythrocyte deformability from an increased proportion of unsaturated fatty acids in the erythrocyte membranes.

Diet-induced changes in the polyunsaturated fatty acid (PUFA) content of immune cells influences the immune phenotype that develops following infection. The aim of this study was to examine the effect of manipulating dietary PUFA supply on tissue fatty acids composition and immunity to a mixed infection with an abomasal and an intestinal nematode parasite in calves. Calves (n=24) were allocated into two treatment groups and fed 25 g/day of either fish oil (n-3 group) or a binary mixture of palm/rapeseed oil (normal group) as a supplement in milk replacer. Within each treatment group eight calves were infected with 2000 L3 Ostertagia ostertagi and Cooperia oncophora, three times per week for 8 weeks, the remaining calves were pair-fed uninfected controls. Faecal egg counts (FEC) were carried out twice weekly. At slaughter, the whole gut was removed intact for worm counts and tissue samples were taken for fatty acid analysis. Samples of abomasum, duodenum and mid-gut were also collected for immunohistological analysis. FEC were not significantly influenced by oil supplement but tended to remain higher in the palm/rapeseed oil-fed group (normal infected). The number of intestinal immature worms was significantly (p<0.05) higher in the n-3 group. Mucosal mast cell (MMC) and eosinophil numbers were significantly increased (p<0.05) by infection and were significantly lower (p<0.05) in the intestinal tissue of the fish oil supplemented and infected group (n-3 infected group). These results suggest that feeding an n-3 PUFA-rich supplement (fish oil) can influence cellular mediators of immunity to nematode infection. This is the first report of the establishment of patency and the subsequent development of immunity to a mixed infection with O. ostertagi and C. oncophora in calves undergoing early rumen development. The trend in the FEC, MMC and eosinophil numbers in the n-3 group suggests that decreasing the dietary n-6/n-3 PUFA ratio may be a worthwhile immunonutritional strategy for potentiating the immune response to nematode parasite infection in the calf.

In this study, the effects of diet including different levels of olive cake were investigated on the fattening performance, blood parameters, certain slaughtering traits, and carcass quality of lambs. Thirty-six male lambs were used in the experiment. The lambs were randomly assigned to three groups with 12 lambs each. Groups included control, 12.5 and 25% olive cake (OC). The mixed feeds were offered ad libitum. All lambs were also allowed to consume alfalfa hay (83.8 g DM/animal/day). The experiment lasted for a period of 56 days. The effect of different levels of olive cake was not found different in fattening performance values of lambs in 0–56 days (P > 0.05). Carcass weight, pH, and yield were not different (P > 0.05). While the values of color parameters, cooking loss, tenderness, and ether extract level of longissimus dorsi muscle (MLD) was not found different (P > 0.05), it was determined that the levels of olive cake increased the water-holding capacity of meat (P < 0.05). Furthermore, although the levels of olive cake were shown to decrease total n-3 and total saturated fatty acids (Σ SFA), they also increased total n-6, n-6/n-3 ratio, total monounsaturated fatty acids (Σ MUFA), and total polyunsaturated fatty acids (Σ PUFA) were not different (P > 0.05).

Two trials were performed to assess the meat fatty acid profile of goat kids from different genotypes, production systems and sex. In the first trial, genotype effect was determined in 24 suckling male kids from Turkish Saanen, Maltese and Gokceada breeds. In the second trial, male and female Gokceada Goat kids were used to compare the effect of extensive and semi‐intensive production systems on fatty acid composition of meat. Significant genotype effect was observed in the percentages of myristic acid (C14:0), palmitic acid (C16:0), oleic acid (C18:1 n‐9), linolenic acid (C18:3 n‐3), arachidonic acid (C20:4 n‐6) and docosahexaenoic acid (C22:6 n‐3), despite no differences on the ratios of polyunsaturated fatty acids to saturated fatty acids (PUFA/SFA) and n‐6/n‐3 (P > 0.05). The effect of production system had also significant effects on fatty acids, but sex only influenced significantly stearic acid (C18:0), C18:1 n‐9 and C18:3 n‐3 fatty acids and total PUFA level and PUFA/SFA ratio. This study confirms that dairy breeds are prone to produce higher levels of unsaturated fatty acids in their muscle. Meanwhile, meat from Gokceada goat kids, which is one of the indigenous breeds in Turkey, had similar PUFA/SFA and n‐6/n‐3 ratios to Turkish Saanen and Maltase.

Rations containing 25% of either regular rapeseed oil (36% erucic acid), Oro rapeseed oil (1.9% erucic acid), soybean oil or a mixture of lard and corn oil were fed to chickens, ducks and turkeys. The regular rapeseed oil ration caused growth depression, increased feed conversion and anemia in all species. All the ducks and some of the chickens fed the regular rapeseed oil ration died. These dead birds were affected with hydropericardium and ascites. No deaths in the turkeys could be attributed to the regular rapeseed oil ration but some turkeys fed this ration had degenerative foci characterized by infiltrations of histiocytic and giant cells in the myocardium. Severe fatty change in the heart, skeletal muscles, spleen and kidney was found at an early age in all birds fed the regular rapeseed oil ration. Less severe fatty change but no other lesions were found in birds fed the Oro rapeseed oil and soybean oil rations.

Eighteen steers were used to evaluate the effect of supplemental corn oil level to steers grazing endophyte-free tall fescue on fatty acid composition of LM, stearoyl CoA desaturase (SCD) activity and expression as well as cellularity in s.c. adipose. Corn oil was supplemented (g/kg of BW) at 0 (none), 0.75 (medium), and 1.5 (high). Cottonseed hulls were used as a carrier for the corn oil and were supplemented according to pasture availability (0.7 to 1% of BW). Steers were finished on a rotationally grazed, tall fescue pasture for 116 d. Fatty acid composition of LM, s.c. adipose, and diet was determined by GLC. Total linoleic acid intake increased linearly (P < 0.01) with corn oil supplementation (90.7, 265.1, and 406.7 g in none, medium, and high, respectively). Oil supplementation linearly reduced (P < 0.05) myristic, palmitic, and linolenic acid percentage in LM and s.c. adipose. Vaccenic acid (C18:1 t11; VA) percentage was 46 and 32% greater (linear, P = 0.02; quadratic, P = 0.01) for medium and high, respectively, than none, regardless of tissue. Effect of oil supplementation on CLA cis-9, trans-11 was affected by type of adipose tissue (P < 0.01). In the LM, CLA cis-9, trans-11 isomer was 25% greater for medium than for none and intermediate for high, whereas CLA cis-9, trans-11 CLA isomer was 48 and 33% greater in s.c. adipose tissue for medium and high than for none, respectively. Corn oil linearly increased (P 0.05) the percentage of total SFA, MUFA, or PUFA but linearly increased (P = 0.03) n-6:n-3 ratio from 2.4 to 2.9 in none and high, respectively. Among tissues, total SFA and MUFA were greater in s.c. adipose than LM, whereas total PUFA, n-6, and n-3 fatty acids and the n-6:n-3 ratio were lower. Trans-10 octadecenoic acid, VA, and CLA trans-10, cis-12 were greater (P < 0.01) in s.c. adipose than in LM. Oil supplementation did not alter (P > 0.05) stearoyl CoA desaturase activity or mRNA expression. Corn oil supplementation to grazing steers reduced the percentages of highly atherogenic fatty acids (myristic and palmitic acids) and increased the percentages of antiatherogenic and anticarcinogenic fatty acids (VA and cis-9, trans-11 CLA).

The effects of grazed grass, grass silage, or concentrates on fatty acid composition and conjugated linoleic acid (cis-9, trans-11-18:2; CLA) concentrations of i.m. fat of steers fed to achieve similar carcass growth rates were investigated. Fifty steers were divided into 10 blocks based on body weight and assigned at random from within blocks to one of five dietary treatments. The experimental rations offered daily for 85 d preceding slaughter were 1) grass silage for ad libitum intake plus 4 kg of concentrate, 2) 8 kg of concentrate plus 1 kg of hay, 3) 6 kg of grazed grass DM plus 5 kg of concentrate, 4) 12 kg of grazed grass DM plus 2.5 kg concentrate, or 5) 22 kg of grazed grass DM. The concentration of polyunsaturated fatty acids (PUFA) in i.m. fat was higher (P < .05) for steers offered ration 5 than for those given any other ration. Decreasing the proportion of concentrate in the diet, which effectively increased grass intake, caused a linear decrease in the concentration of i.m. saturated fatty acids (SFA) (P < .01) and in the n-6:n-3 PUFA ratio (P < .001) and a linear increase in the PUFA:SFA ratio (P < .01) and the conjugated linoleic acid concentration (P < .001). The data indicate that i.m. fatty acid composition of beef can be improved from a human health perspective by inclusion of grass in the diet.

1. In a cross-over trial, the egg cholesterol and fatty acid composition of Araucana hens was compared with those of two commercial breeds (Lohmann Selected Leghorn and ISA Brown) under two feeding regimes, either high (Hn-3) or low (Ln-3) in long-chain n-3 fatty acids. 2. The Hn-3 diet was formed by isocaloric substitution of animal fat in the control diet (Ln-3) by a dry product containing stabilised fish oil with standardised concentrations of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). 3. Both breed and diet had influences on egg composition, without interactions. 4. The Araucana breed showed lower feed intake and lower egg weights than the other two breeds. The yolk weight was similar, leading to a much higher yolk:albumen ratio in the Araucana eggs. 5. In comparison to commercial breeds, Araucanas produced eggs with higher cholesterol content per g of yolk, which was even more pronounced when expressed per g of egg, due to the high yolk content of the eggs. The cholesterol content of an egg remained unchanged by the diet, irrespective of the dietary fat source. 6. Changing to the Hn-3 diet led to greater concentrations of polyunsaturated fatty acids (PUFA) and lower concentrations of monounsaturated fatty acids (MUFA) contents in the yolk, without a change in the ratio of saturated (SFA) to unsaturated fatty acids (UFA). 7. Within the PUFA, the n-3 fatty acids increased at the expense of the n-6 fatty acids, indicating a competition between n-3 and n-6 fatty acids for incorporation in the yolk.
