斜面培养法在冷饮食品大肠菌群检测中的应用

摘    要:大肠菌群是评价冷饮食品卫生质量的重要指标菌。目前,国家卫生部颁布的GB发酵检验方法,操作手续繁琐,费用高,且耗时3 d,不适应基层监测的实际要求;而应用快速斜面培养法检测冷饮食品中的大肠菌群,具有操作简单、结果准确等特点,在18~24 h内即可报告结果,比发酵法缩短2 d时间,且结果同样可用MPN报告数值。

Abstract:The intestinal colony was an important index indicating the quality of cold drink and snack.The prevailing inspection method,named as fer-mentation(GB),was set up by the Ministry of Health,which involves a great deal of paperwork.But it was practically expensive,time-consuming and in-convenient for the grass-root.What we propose was the method of slant culture,which can shorten the procedure for about 48 hours(from 72 hours to 18 ~24 hours),and the result can be reported as MPN.
