大豆膳食纤维提取工艺研究进展

摘    要:纤维素具有较强的持油、持水、增容、诱导肠道微生物生长、解毒等生理功用,被营养学家誉为"第七营养素"。近年来,随着人民膳食结构发生改变,人们对膳食纤维的摄入量严重不足,出现了一些"富贵病"。为提高人民的健康水平,有必要积极开展对膳食纤维的开发利用。鉴于此,综述了大豆膳食纤维的功效、提取工艺和提取过程中膳食纤维的改性等方面的研究进展,旨在为研究者今后的研究提供指导。

Abstract:Cellulose, known as"the seventh nutrient"by nutritionists, has many physiological functions including strong holding of oil, moisture, compatibilization, detoxification, and induction of intestinal microorganism growth. In recent years, with the changes in people's diet structure, the serious shortage of dietary fiber intake has been found, contributing to some"rich diseases". In order to improve the health level of the people, it is necessary to actively develop and utilize the dietary fiber. In view of this, the research progress in the soybean dietary fiber effect, the extraction process and modification of dietary fiber after extraction was reviewed, with an aim to provide guidance for the researchers in the future.
