摘    要:由闽北水仙乌龙茶经提取、醇析、透析和除蛋白等过程所得的茶多糖主要由葡萄糖、阿拉伯糖和半乳糖构成,结舍除蛋白质过程中半乳糖的损失和红外光谱,表明茶多糖是一种多糖和蛋白质的复合体。

Abstract:The tea-polysaccharide was extracted from the Oolong tea, and then following processing were adopted, alcohol-sedimentation, dialysis and protein isolating. The results showed that Oolong tea-polysaccharide is compounded by Glucose, Arabinose and Galactose. According to its IR spectrum and Galactose losing in protein-isolating, the Oolong tea-polysaccharide is a compound of protein and polysaccharide.
