小米及小米糠产品发展现状研究

摘    要:小米营养丰富,具有很高的食疗保健作用,小米糠作为其加工副产品,有着广泛的加工应用前景.针对小米粥、小米酒、小米醋、小米饼干、小米糠油等加工产品和小米黄色素、小米黄酮、小米糠蜡、小米糠蛋白及多肽等提取产品的发展历程、工艺条件、发展前景、最新研究成果等进行论述.

Abstract:Millet is rich in nutrition and has a high role in food therapy and health care.As a by-product of its processing,millet bran has a wide range of processing and application prospects.The development process,technological conditions,development prospect and latest research achievements of processing products such as millet congee,millet wine,millet vinegar,millet biscuit,millet bran oil,extraction products such as millet yellow pigment,millet flavone,rice bran wax,rice bran protein and polypeptide were discussed in detail.
