摘    要:在种植、生长、储存与流通等环节中影响大葱质量的因素较多,如种质资源、环境因素、栽培状况、施肥状况、农药使用情况、病虫危害等。本文主要从大葱的质量指标、质量影响因素及安全性影响因素三方面进行综述,以期为确保大葱质量安全提供参考。

Research Progress on the Influencing Factors and Monitoring of Green Onion Quality and Safety
Abstract:As a common agricultural product in daily life, the functional components of green onion mainly include polysaccharides, flavonoids, sterols, sulfur compounds and so on, with a variety of physiological activities. However, the quality of green onion is easily affected by many factors in the process of planting, growth, storage and circulation, such as germplasm resources, environmental factors, cultivation status, fertilization status, pesticide use, diseases and insect pests and so on. This paper mainly focuses on the quality indexes, quality influence factors and safety influence factors of green onion to clarify the effects of planting, growth, storage and circulation on the quality of green onion and the effects of heavy metals and pesticide residues on the safety of green onion and its control measures. In order to ensure product quality and safety and take into account the human sustainable development, a scientific and effective quality and safety evaluation and monitoring system should be established.
