含水果颗粒胶体溶液通电加热速度建模与工艺优化

摘    要:为研究含水晶梨颗粒亲水性胶体溶液通电加热过程中,颗粒尺寸、颗粒体积分数、CMC-Na体积分数、胶体溶液质量分数和柠檬酸质量分数五因素对通电加热速度的影响,采用五因素二次正交旋转组合设计试验进行回归分析,建立了加热速度数学模型,对影响加热速度的工艺参数进行了优化,得到影响通电加热速度的工艺参数从大到小依次为:胶体溶液质量分数、CMC-Na体积分数、柠檬酸质量分数、颗粒尺寸、颗粒体积分数;影响加热速度的各工艺参数的最优组合:颗粒尺寸1.0 cm、颗粒体积分数30%、CMC-Na体积分数40%、胶体溶液质量分数4%、柠檬酸质量分数0.25%。
