唐代西南地区糖业述略

摘    要:西南地区食糖(主要包括蜂蜜和蔗糖)生产历史悠久,至唐代又有了显著的进展。本文通过对食糖的品种、生产过程、产地等方面的分析,较为深入地探讨了唐代西南地区糖业的发展状况。糖业对当地社会经济发展颇具影响,既促进了饮食业的发展,也繁荣了商品市场,推动了商品化生产。

Abstract:The sugar production(mainly honey and cane sugar)of Southwest China has a long history and had made prominent progress in Tang Dynasty.By analyzing the sugar's species,producing process and producing area etc.,this paper delves deeply into the developing history of the sugar industry in Southwest China in Tang Dynasty.The sugar industry had social and economical influence on local society:it had stimulated catering industry,made commercial market booming and promoted the production of commodities.
