摘    要:介绍了我国传统风味食品虎皮蛋的产品特点。探索以鹌鹑蛋为主料,研制具有保健作用的五香型虎皮鹌鹑蛋软包装方便食品的工艺条件和产品配方。

Abstract:This article described the characteristics of Hupi quail eggs as Chinese traditional preserved eggs.Taking the quail eggs as the masterbatch,the article introduced the health care function of quail eggs,explored the technological conditions and the product formula of processing soft canned food of Hupi quail eggs with health effect.
