| 摘 要： | 对石斛兰色素提取的最佳方法以及稳定性的研究结果表明：石斛兰色素的最大吸收波长为545nm;提取最佳条件组合为：提取温度50℃,提取时间2h,提取浓度50%乙醇溶液,料液比为1∶5;色素在pH值为4左右较稳定,碳水化合物对色素有保护作用,金属离子Fe2＋、有机酸、氧化剂H2O2和还原剂Na2SO3均对色素有破坏作用。
