化学保鲜剂在果蔬保鲜中的应用

摘    要:化学保鲜剂因具有延缓果蔬衰老、防腐杀菌、降低呼吸强度和减缓水分蒸发等效果,以及使用方便和价格低廉等特点,目前在我国果蔬贮藏保鲜中被广泛推广使用,成为许多果蔬采后、贮藏前或贮藏中的重要处理手段。对化学保鲜剂种类、保鲜机理和用途进行介绍,并就化学保鲜剂向广谱、高效、安全和复合型发展进行了展望。

Abstract:The chemical conserving substance is effective for prolonging caducity, antisepsis, sterilization, decreasing breathing and water evaporation. It is especially convenient, cheap and widely used in fruit and vegetable preservation at present. The conserving substance is an important step after the harvest of the fruits and vegetables, and between the preserving stage. This article introduced about the classification, the principle and the advantage of the chemical conserving substance, and analyzed the development of the broad-spectrum, effective, safe, complex chemical conserving substance.
