白纹肉与木质化鸡胸肉的研究进展

摘    要:近年来,快速增长和胸肌增生型肉鸡品种的选育导致白纹肉与木质化鸡胸肉发生率不断升高,给肉鸡产业造成严重的经济损失。本文主要综述了白纹肉与木质化鸡胸肉的判定标准和品质特性,并讨论了其潜在的发生机制,以期为白纹肉与木质化鸡胸肉的相关研究提供理论依据,并为探索其发生机制提供新的思路。

Research Progress on White Striping and Wooden Breast Myopathy in Broilers

Abstract:In recent years, the genetic selection of high growth rate and breast yield broilers have led to an increase in the incidence of white striping and wooden breast, causing serious economic losses to the broiler industry. This paper reviews the criteria and quality characteristics of white striping and wooden breast and discusses their potential mechanisms. The review is expected to provide a theoretical basis for the study of white striping and wooden breast and new ideas for the further exploration of the mechanisms.
