摘    要:大豆异黄酮是一类植物雌激素,对动物机体的调控作用非常广泛。近年来研究发现,大豆异黄酮对动物的骨骼肌发育有很重要的调控作用。本文综述了大豆异黄酮对肌肉能量与蛋白代谢、肌细胞的增殖与分化以及肌纤维类型转化的影响,并进一步探讨了大豆异黄酮对动物肌肉品质的调控作用。

Abstract:Soybean isoflavones are a class of phytoestrogens, which have extensive effects on animal body. Recently,numerous studies have found that isoflavones play an important role in the regulation of skeletal muscle development in animals. In this article, we reviewed the effects of isoflavones on skeletal muscle energy and protein metabolism, myoblast proliferation and differentiation, and muscle fiber type transformation, and further explored the regulation of isoflavones on meat quality in animals.
