摘    要:为获得营养品质较高的马铺山药品系,以福建马铺7个主栽的山药品系为研究对象,测定多糖、尿囊素及基本营养成分,并通过模糊数学平均隶属函数法对其营养品质进行评价分析。结果表明:7个山药品系的多糖、尿囊素、蛋白质、淀粉、粗纤维、灰分、以及总氨基酸的平均含量分别为2.98%、4.79‰、8.59%、65.63%、1.29%、2.07%、6.28%,不同品系山药各有特点,MP1尿囊素含量最高,MP6的多糖、蛋白质和粗纤维含量最高,MP3的总氨基酸、必需氨基酸和呈味氨基酸含量均最高;用隶属函数法分析得到综合营养品质较优的为MP1、MP3和MP6,其中MP6营养品质最优。研究结果可为马铺山药特色种质筛选利用提供参考。

Abstract:In order to select high-quality yam varieties in Mapu, Fujian, China, 7 yam clones (Dioscorea spp.) cultivated in Mapu were collected to determine their contents of polysaccharide, allantoin and basic nutrients, and their nutritional quality was evaluated by using fuzzy membership function method. The results showed that the average contents of polysaccharide, allantoin, protein, starch, crude fiber, ash, and total amino acids of the 7 yam clones were 2.98%, 4.79‰, 8.59%, 65.63%, 1.29%, 2.07%,and 6.28%, respectively. The Mapu yam clones were different in nutrient contents. MP1 had the highest content of allantoin, and MP6 had the highest contents of polysaccharide, protein, crude fiber and crude ash, while MP3 had the highest contents of total amino acid, essential amino acids, and flavor amino acid. Clones MP1, MP3 and MP6 contained higher general nutrients among the 7 clones according to the results of the fuzzy membership function analysis, and MP6 was the best in general nutrient quality. The results might provide some references for the selection and breeding of yam varieties in Mapu.
