摘    要:以15个糜子品种干燥种子为原料,对糜子壳粉中多酚类物质的含量及抗氧化活性进行研究。结果表明,在15个糜子样品中,壳粉中酚含量(以对应的没食子酸量表示)为9.357 3~19.092 9 mg/g,且主要以结合酚的形式存在;壳粉中黄酮含量以对应的芦丁量表示为0.247 9~0.682 4 mg/g,且主要以游离黄酮形式存在;糜子外壳颜色越深,其自由酚含量与自由黄酮含量越高。糜子壳粉中不同存在形式的多酚物质均具有抗氧化活性,其组分构成有明显差异。

Abstract:Fifteen proso millet varieties with different color of seed pericarp were employed to study the contents and antioxidant activities of phenolic compounds in their seed pericarp.Results showed as follows:in fifteen proso millet varieties,total phenolic compounds contents in 1g whole pericarp flour ranged from 9.357 3 to 19.092 9 mg gallic acid,while most of the phenolic compounds in pericarp were in the bound form.Total flavonoid contents in 1g whole pericarp flour ranged from 0.247 9 to 0.682 4 mg rutin;The...
