嘉平大枣果实发育过程中维生素C的变化及其相关性研究

嘉平大枣果实发育过程中,每100g果实维生素C含量的变化无论是头棚果或是二棚果,每年均呈低→高→低相同的趋势变化,在果核完全硬化时(头棚果花后60d,二棚果花后50d)达最高,进入完全成熟期呈缓慢下降趋势。每100g果实维生素C含量与生长期,平均单果重,纵、横径均呈极显著的三次多项式相关性;硬核前、硬核后每100g果实维生素C含量与抗坏血酸氧化酶,过氧化氢酶活性呈不同的变化趋势。单果内维生素C总量的累积头棚果、二棚果均随果重的增加而增加,到果实完全成熟,果皮皱缩,果重减轻时总含量缓慢下降。单果内维生素C总量的增加与生长期的拟合曲线为三次多项式,r=0.998 9**(n=7);与抗坏血酸氧化酶、过氧化氢酶活性呈极显著负相关。

Study on the Variation Pattern of Vitamin C During Fruit Developing Process in Jujube

Study was conducted with Jiapingdazao jujube variety, the changes of the content of vitamin C during fruit developing process of the first fruit setting samples and the second fruit setting samples were analyzed. Results showed that the variation of vitamin C content expressed as a low→high→low pattern, with a peak at the stage of pit hardening, following a slow decrease at the late stage of full maturity.The vitamin C content showed a significant cubic polynomial correlation with growing period, average fruit weight, fruit vertical and across diameter during the fruit development; it showed a different correlation with the activity of ascorbate oxidase and catalase until the fruit kernel hardening (40~60 d after flowing) and later (60~100 d). The accumulation of vitamin C in the fruit increased with the fruit weight increasing and decreased at late stage of fruit full maturity; it showed a significant cubic polynomial correlation with growing period, r=0.985 5**(n=7), and showed a significant negative correlation with the activity of ascordate oxidase and catalase.
