微波辅助提取竹荪中膳食纤维的工艺优化

摘    要:以竹荪为原料,用微波辅助法提取其膳食纤维。在单因素试验结果的基础上,采用响应面法对提取工艺进行优化,以微波功率、微波提取温度、提取时间、液料比为自变量,利用Box-Behnken的中心组合设计原理进行响应面设计,优化提取工艺参数。结果表明:竹荪水溶性纤维(SDF)的最佳提取工艺条件为微波功率490 W、微波提取温度60℃、提取时间10 min、液料比20∶1,此条件下竹荪SDF得率可达12.26%,非水溶性纤维(IDF)得率为74.34%,该SDF得率与SDF得率的最大估计值比较,相对误差约为0.65%,且重复性也很好,因此,该优化提取工艺参数准确可靠。

Abstract:Dictyophora was used as raw material for extraction of dietary fiber with microwave-assisted method.Response surface methodology(RSM) was used to optimize the extraction process based on single factor tests.Box-Behnken central composite design principles were used for response surface design,with the power of microwave,liquid-to-solid ratio,microwave-assisted extraction time and temperature as four parameters.The optimum extraction conditions were as follows:microwave power of 490 W,extraction temperature of 60 ℃,microwave-assisted extraction time of 10 min,and liquid-to-solid ratio of 20:1.Under the above optimum extraction conditions,the actual yield of SDF from Dictyophora was 12.26%,and the yield of IDF was 74.34%.The relative standard deviation between the theoretical and practical yields was 0.65%,and the results demonstrated a good reproducibility,indicating the effectiveness and reliability of the RSM model.
