摘    要:以接种扩展青霉的苹果为材料,采用裸露、敞口、掩口3种不同的方式包装冷链运输,对果实中扩展青霉含量、棒曲霉素含量及相关生理指标进行测定,研究公路运输对扩展青霉产生的棒曲霉素及苹果品质的影响。结果表明:运输会加快扩展青霉的菌落增长,3种包装方式中敞口包装和掩口包装易于扩展青霉菌落的生长。运输处理的苹果中棒曲霉素含量低于未运输处理的苹果,敞口、掩口包装的苹果中棒曲霉素含量高于裸露包装处理的苹果。此外,运输处理降低了苹果中可溶性固形物和滴定酸含量,提高了苹果的失重率、乙烯释放量及总酚含量。

Effects of Transport Conditions on Patulin Content and Physiological and Biochemical Indexes in Apples
Abstract:The apples incoulated with Penicillium expansum were used as materials and were transported under different packaging methods. The changes of Penicillium expansum, patulin content and related physiological indicators of the fruit were determined to evaluate changes in the quality of patulin and apples under different transporting ways. The results showed that the transportation could accelerate the growth of colonies of P. expansum. The open and the closed packing methods tended to expand the colony growth of P. expansum. The content of patulin in the transported apples was lower than that of the untransported one, and content of patulin under the open and the closed packing methods were higher than that that under the bare packing condition. In addition, transportation treatment reduced the soluble solid and titrated acid content and improved the weight loss rate, ethylene release and total phenolic content of the apples.
