摘    要:本文对山西省汾阳市核桃资源圃13个核桃品种坚果的外观品质进行了调查评价,并分析测定了其果仁中的矿质养分含量。结果表明:核桃不同品种之间的坚果外观品质有差异,‘中林5号’、‘鲁光’、‘京746’、‘晋龙2号’外观品质较优。‘中林1号’、‘中林2号’、‘辽核1号’、‘温185’和‘晋龙2号’粗脂肪含量相对较高,超过了65%,达到了国家特级标准。13种核桃仁的粗蛋白含量均超过国家特级标准,其中超过20%的有‘中林3号’、‘中林5号’、‘中林6号’、‘京746’、‘晋龙2号’。所测定的核桃不同品种间的各矿质养分含量有差异,Ca、Fe、Mn各元素差异较大,P、K、Mg、Zn、Cu各元素差异相对较小。

Abstract:The paper investigated and evaluated the nut qualities of 13 walnut cultivars of Fenyang in Shanxi province,and the mineral nutrition content of their nutmeats were determined.The results showed that the nut qualities of different walnut cultivars differentiates each another,and that of‘Zhonglin No.5’,‘Luguang’,‘Jing746’and‘Jinlong No.2’were better.The crude fat content o‘fZhonglin No.1’and‘Zhonglin No.2’‘,Li?aohe No.1’,‘Wen185’and‘Jinlong No.2’were all relatively higher and over 65%and reached the super standard of nation.The crude protein content of 13 types of walnut all exceed super standard of nation,and that of‘Zhonglin No.3’,‘Zhonglin No.5’,‘Zhonglin No.6’,‘Jing746’and‘Jinlong No.2’exceeded 20%.The mineral nutrient contents of different kinds of walnut cultivars were different,Ca、Fe and Mn of which were bigger and P、K、Mg、Zn and Cu were relatively smaller.
