| 摘 要： | 对紫色玉米穗轴色素的提取及其稳定性进行了分析研究。结果表明,玉米穗轴色素提取简便,提取率为10.85%;色素的耐光、耐热性较好;耐氧化性、还原性较差;葡萄糖、蔗糖、氯化钠及金属离子对色素稳定性有一定的促进作用。

| Abstract: | The extraction and stabitity of purple corn cobs pigment were studied in this paper.The results showed that the method of extraction was convenient,the extracted total yield can be up to 10.85%.The pigments were stable to the light and heat.The antioxidand and antireduce were unstable.Glucose,sugar,Nacl,some species of metalions have promoted functios to the stable of the pigment. |
