摘    要:目的]比较不同预处理方法对番茄红素提取的影响,优化其预处理工艺。方法]采用离心脱水、冷冻、干燥、乙醇处理等方法对番茄浆样进行预处理。研究预处理方法对番茄红素提取的影响。结果]提取液在444、472和502nm处各有1个吸收峰,其最大吸收在472nm。各预处理番茄浆的番茄红素提取率高低为:离心脱水处理〉冷冻处理〉45℃烘干、粉碎〉60℃烘干、粉碎。无水乙醇处理稍低于不处理番茄浆。番茄浆经离心脱水和冷冻处理后用石油醚:丙酮=1:1提取1h,提取液的吸光度变化较小,番茄浆经干燥处理再用有机溶剂提取1h。提取液的吸光度变化较大。料液比为1:6时,番茄红素的提取效果较好。结论]番茄果实打浆后,离心脱水处理或冷冻处理均可提高提取率,缩短提取时间。
