辐照技术在荞麦灌肠保鲜中的应用

摘    要:采用60Coγ射线对软包装荞麦灌肠制品进行辐照研究对其贮藏的影响。结果表明:在5kGy的辐照剂量下,可显著提高荞麦灌肠制品的食用安全性,延长其货架期;而对其感官和营养品质无显著性影响。

Abstract:To study buckwheat-clysters preservation,flexible packed buckwheat-clysters were irradiated by()~(60)Co γ-rays.The results showed that at the absorbed dose of 5 kGy,the shelf life of flexible packed buckwheat-clysters was extend,and no significant changes of its sensery index and nutrients.
