摘    要:采用固相微萃取法(SPME)提取掖辐1号大葱中的挥发性成分,并用气相色谱-质谱(GC-MS)联用仪分析其化学组成。结果表明:挥发性物质中主要成分为硫化物,占总挥发性物质的90.45%。其中,一硫化合物占23.33%,主要以3,4-二甲基噻吩为主,二硫化合物占42.23%,主要以甲基-丙基二硫醚为主,三硫化合物占24.89%,主要以二丙基三硫醚为主。

Abstract:Aroma components in Yefu1 were extracted by SPME,and then identified by GC-MS.The results indicated that organo-sulfur compounds were the main aroma components,accounting for 90.45% of the total content.The mono-thiosulphinates was 23.33% and the major component was 3,4-dimethyl-thiophene;the di-thiosulphinates was 42.23% and the major component was Methyl propyl disulfide;the tri-thiosulphinates was 24.89% and the major component was Trisulfide dipropyl.
