储藏有效积温与小麦游离脂肪酸值上升速度关系研究

摘    要:对小麦正交储藏试验数据进行统计分析,研究储藏积温与小麦游离脂肪酸值上升速度关系。结论如下:①储藏积温对脂肪酸值上升速度影响显著;②储藏积温与小麦脂肪酸值上升速度的线性回归方程为:y∧=0.816x-1.434,决定系数R2=0.9752。该回归方程将储藏积温与小麦脂肪酸值上升速度关系量化,可预测小麦品质劣变时间,指导储藏积温的控制从而降低小麦品质劣变速度。

Abstract:By statistical analysis on orthogonal experiment data of wheat storage,correlation between effective accumulated temperature and free fatty acid value was studied.It showed that storage accumulated temperature had remarkable influence on the rising speed of fatty acid value,and the liner regression formula of the rising speed of free fatty acid value and storage accumulated temperature was built as :y^=0.816x-1.434.This formula could be used to forecast the days of wheat quality deterioration and guide to d...
