甘薯活性物质的化学成分分析

摘    要:参考近10年来的研究成果,综述了甘薯中蛋白和多肽、甘薯多糖、甘薯多酚、膳食纤维、维生素和矿物质等活性物质的化学组成及分子结构,并对有关研究热点进行了展望。

Abstract:Based on the latest research results in recent 10 years,the chemical composition and structure of protein,polysaccharide,plyphenolic,dietary fibre,vitamin and mineral substance and other active substances in sweet-potato were analyzed.And the prospects on hot areas was also put forward.
