摘    要:从真空油炸的原理、预处理、油炸工艺等方面系统地概述了国内外真空油炸脱水技术的研究进展;分析了我国真空油炸技术及应用存在的问题,提出真空油炸技术的研究方向及发展趋势。

Abstract:The research status on vacuum-fried technology was summarized, involving the principle of vacuum frying, pretreatment, vacuum-fried process,vacuum frying dehydration technology research history and the latest research progress. The problems existing in the vacuum frying was analyzed, the prospects of its application and technology development trend were discussed.
