摘    要:硒是植物—动物—人类食物链中非常重要的微量元素,综述了硒(Se)在改善农产品品质、保证农产品质量安全(包括增强植物的抗逆性、抵抗某些重金属毒害、降低农产品中硝酸盐含量)、提高农产品保健价值方面的作用,并强调Se是两性元素,在给植物补Se时要严格控制施硒量和农产品中的硒水平,充分发挥Se在植物一动物一人类链中的积极作用。

Abstract:Selenium (Se) is one of the important trace elements in the food chain of plant-animal-human.Effects of Se on agricultural products quality were reviewed,which included the quality improvement,the quality safety ensured and the value enhancement on health care.It was emphasized that Se is one of amphoteric elements.When Se is supplied to plants,both the amount of Se applied and the content of Se in agricultural products should be very carefully controlled, for having a positive effect on the food chain of plant-animal-human sufficiently.
